As promised I’m here in between boot camp and mom and tot (or mom and toot, whatever) to announce the winner of the Amazing “Peas” Raffle for Amelia.
I put everyone down on a numerical list according to how many entries they bought and used random.org to pick a number.

Really quick I wanted to share my lazy way to make my new broccoli slaw concoction. I’ve had this for dinner three nights in a row. I’m not having it tonight though, I need to carb up remember? Ha!
Here it is.
I microwave the broccoli slaw in the bag for 3 minutes.
Put it in a pie plate sprayed with nonstick cooking spray and add seasoning and spices (garlic powder, garlic salt, oregano, pepper, crushed red pepper).
Then add one cup of Roasted Red Pepper and Tomato Soup. (Trader Joe’s also makes a really good one.)
Top it with more vegetables (mushrooms, peppers, etc.) and/or chicken or Trader Joe’s organic tempeh.
Then bake it at 400 for about 20 minutes.
I may have baked this one a little too long, but it was still delicious.
Here’s the finished broccoli slaw roasted red pepper tomato bake.
Oops. Forgot something.
I added some cheese sandwiches. One of the sandwiches had jalapeño yogurt dip inside while the other one had a Laughing Cow cheese wedge and some low-fat Havarti.
Good. Easy. Quick. Healthy.

Okay, I need to finish my STUFT Salted Caramel Mocha
which was stepped up this morning by the addition of this light caramel whipped cream.
Then the boys and I are off to our next class and then to pick up our race packet.
