Date Night Dinner – Crockpot Chicken Pasta


Hi friends! Hope you had a great weekend. I want to let you know that I haven’t made Kitty dance since his video. I know he looks mad about dancing, but he always kind of looks that way. That’s part of the reason why everyone I love him.


Friday night was the first official night of Andrew’s staycation. Yippee!

Thanks to the time change he was home earlier than normal from his many jobs. I took full advantage of that by taking the longest shower possible and hiding out afterward in the bathroom to talk on the phone to one of my best friends.

I did try to make up for it though by cooking a delicious dinner.

Let me just say that my crockpot hadn’t been touched for almost 2 years. Yes, 2 years. I’m embarrassed. But, it made an appearance this weekend and I’m hoping it’s going to be used a lot this winter.

So, Friday night while the boys played with fire outside



I got some alone time in the kitchen to make dinner.

Oh, and to drink some wine.



I love staycations.

This recipe is from my sister-in-law. It’s easy and delicious. Thanks Geralyn!


Chicken Mushroom Pasta

serves 4

4 chicken breasts (about 1 pound chicken breast meat)

1/4 cup light butter or margarine

1 packet Italian dressing mix

2 cups sliced mushrooms

1 cup chicken broth

1 can cream of mushroom soup (or cream of chicken)

8 ounces fat free cream cheese

box of whole grain pasta

parmesan cheese




Combine chicken breasts, light margarine, packet of dressing, mushrooms and chicken broth in a crockpot.

Cook at 3 1/2 hours on high or 7 1/2 hours on low.

Add the cream of mushroom soup and the fat free cream cheese. Stir and let cook an additional 30 minutes on high.

When done cooking, stir and shed chicken into small pieces.

Serve over penne pasta.

Top with parmesan cheese.

Serve over pasta with parmesan.


I ate mine over cooked spaghetti squash with parmesan cheese, crushed red pepper and roasted broccoli.


(It probably would’ve been better over pasta.)


But, this spaghetti squash was too cool and too huge to not put to good use.


I got it at Trader Joe’s. They charge per squash so I always try to find the biggest one (I do the same with bananas there). Does anyone else do that?


Okay, I’m off to get the boys in the bath and call it a night.

My long run this morning did me in.

So did eating a little too much pizza at our Charger Party today.

Listening to a little too much “music” may have something to do with my massive headache also.


I’m not feeling like a winner anymore. I’m hurting.

    Hey Kristin – I’m a big fan of staycations – the packing to travel and the laundry afterwards….ugh…the ccrockpot recipe looks yummy too – I will have to try it – enjoy your day – its is grey and damp here in D.C. today — hopefully you have grand west coast weather! cheers –

    Staycations are the best, as are crock pot dinners.

    Yum – my favorite crock pot recipe! I love mushrooms, so one time I decided to double (maybe triple?) the mushrooms….big mistake! It gave the sauce an unattractive gray color and it was watery!

    I’m making something similar for supper tonight but with beef – and Trader Joes portobello mushroom soup 🙂
    I love Kitty’s angry face – it always makes me smile and laugh. I swear he doesn’t even look real sometimes 🙂

    Yum – I’m loving the looks of this pasta! My husband is a huge fan of mushrooms, so I know he’d love this. The CrockPot is also one of my best friends, so I’m looking forward to making this! 🙂

    My sister and I have a rule to only buy the big bananas at TJ’s because of the per banana rule 😉 But that chicken dish looks divine! Might have to try that soon! My crockpots been making some really tasty soups lately but this would be a delicious turn of events!
