Hi! Let’s kick things off with a look at my dinner Sunday night (after eating too much pizza earlier in the day at Grandma D and Papap’s house).
Today’s adventures started by waking up to a little Kitty barf on the kitchen floor. That must be his way of saying “hey, I want to dance again”. Ha! I’ll spare you the barf picture (yes, I took one).
I won’t, however, spare you having to read my ramblings though before I announce the Lollihop winner. I have a little surprise having to do with the winner so I’m saving it for the end. I know that’s not very nice so I’ll try to make it quick.
This morning I had a realization. It’s been exactly two years since I worked full-time at my job as a middle school PE teacher.

I went on maternity leave two years ago and had every intention of going back after I had my babies.
But….. life happened.
God blessed us not only with two amazing little boys, but also with the opportunity for me to be able to spend every single day with them instead of returning to full-time work.
I realize that I’m working more now with my myriad of jobs on top of being a stay-at-home mom (while making about a quarter of my former salary)
I am the luckiest person in the world. I treasure every moment I get to spend with my boys and every morning I get to wake up to this.
This morning I “worked” teaching Strollerjam with my boys at the beach.
Oh yes. It was like Christmas came early. We stocked up (8 bags worth, wait, maybe 9).
It was a great morning. One that called for a special lunch together at the table
and a cheers.
Ha ha! Pictures of Kitty’s butt by my food never gets old.
Then, I made this amazing 230 calorie pumpkin oatmeal cookie.
Pumpkin Oatmeal Cookie
1 packet instant oatmeal (I used Quaker Weight Control Maple and Brown Sugar flavor)
1 tablespoon coconut flour
3-4 tablespoons canned pumpkin
3-4 tablespoons nondairy milk (I used vanilla soymilk)
1/4 teaspoon vanilla
1/4 teaspoon baking powder
pumpkin pie spice to taste
cinnamon to taste
I combined everything together. Put my humungous cookie on a cookie sheet covered with parchment paper and cooked it at 375 for 10 minutes.
I inhaled it right before I had to leave for the gym to teach 3 more hours of classes tonight.
