Good Stuff and Giveaway Winners


Hi! Let’s kick things off with a look at my dinner Sunday night (after eating too much pizza earlier in the day at Grandma D and Papap’s house).


A mighty chocolate microwave muffin with healthy cookie dough dip on top. Jealous? It’s okay. I’m on staycation, remember?

Good stuff.

Today’s adventures started by waking up to a little Kitty barf on the kitchen floor. That must be his way of saying “hey, I want to dance again”. Ha! I’ll spare you the barf picture (yes, I took one).


I won’t, however, spare you having to read my ramblings though before I announce the Lollihop winner. I have a little surprise having to do with the winner so I’m saving it for the end. I know that’s not very nice so I’ll try to make it quick.

This morning I had a realization. It’s been exactly two years since I worked full-time at my job as a middle school PE teacher.

I went on maternity leave two years ago and had every intention of going back after I had my babies.

But….. life happened.

God blessed us not only with two amazing little boys, but also with the opportunity for me to be able to spend every single day with them instead of returning to full-time work.

I realize that I’m working more now with my myriad of jobs on top of being a stay-at-home mom (while making about a quarter of my former salary)


I am the luckiest person in the world. I treasure every moment I get to spend with my boys and every morning I get to wake up to this.


Good stuff.

This morning I “worked” teaching Strollerjam with my boys at the beach.


Then we had to make an emergency stop on the way home. Some of you already saw pictures of our find on my Facebook page, but today we FINALLY got our hands on some Trader Joe’s broccoli slaw again.


Oh yes. It was like Christmas came early. We stocked up (8 bags worth, wait, maybe 9).


We also practiced saying “broccoli slaw” and “Bob” (you know- “my boyfriend” who’s picture in on the fridge).

It was a great morning. One that called for a special lunch together at the table


and a cheers.


For my lunch I cooked up some broccoli slaw with a little chicken broth, mushrooms, salsa, chili peppers and chicken breast on the stove. Then topped it with some jalapeño yogurt dip.


Good stuff.

Ha ha! Pictures of Kitty’s butt by my food never gets old.


Then, I made this amazing 230 calorie pumpkin oatmeal cookie.


Pumpkin Oatmeal Cookie

1 packet instant oatmeal (I used Quaker Weight Control Maple and Brown Sugar flavor)

1 tablespoon coconut flour

3-4 tablespoons canned pumpkin

3-4 tablespoons nondairy milk (I used vanilla soymilk)

1/4 teaspoon vanilla

1/4 teaspoon baking powder

pumpkin pie spice to taste

cinnamon to taste




I combined everything together. Put my humungous cookie on a cookie sheet covered with parchment paper and cooked it at 375 for 10 minutes.



I inhaled it right before I had to leave for the gym to teach 3 more hours of classes tonight.

Ha ha!

    I love the 09 pregnancy pic…you looked great then and great now.

    And your cookie…nice! I make something similar but do it in the microwave. It takes 2 mins and dont have to wait for the oven to heat up 🙂

    I use banana usually as the “wet” rather than pumpkin but gotta try it with pumpkin now too!

    Sorry about the kitty barf to begin your day – that’s the one thing I don’t miss about having a pets. That and the litter box.

    I love that you photographed your cat’s barf. I have a picture of the huge (benign, thankfully!) tumor that was removed from my dog last year. We should do a nasty photo trade hahahahahahahaha 😉

    SO glad that you’re taking care of your boys and didn’t go back to “work”. Which we all know, staying home IS work!!! THE hardest job that you don’t get vacation from! SO worth it though!

      Lindsay- I know, hardest job in the world, but wouldn’t trade it for anything. It’s hard for me not to worry about the future, where I’ll be, how will we have enough money, etc. but……. that’s where I just need to trust THE MAN right? 🙂

    Being at home is the absolute most wonderful life. Thank goodness for supportive husbands. Not to say there aren’t days we wonder if we are going insane, but to be with our kids and see every moment. I cherish it.

    Kitty butt pictures never get old. Tony so wants your cat. I think he was a cat in a former life.

    It’s kind of strange how we have plans, but life dictates something different. I bet you were an incredible PE teacher. Maybe some time later on…you never know.

      Oh Sarena thanks. You may be the only one who thinks that. Yes, crazy how life jsut seems to happen. I still teach PE- just 2.5 horus a week on Fridays. Just the right amount for me. ha!

    Oh my – lots of broccoli slaw! But it is so good and better than any other brand, for sure! And those boys are looking so grown up and well behaved in that sitting at the table picture! How long did it last before it got interesting?? LOL
