Although, I do wonder what his green eggs were all about. Did he know how fabulous spinach eggs were? I better do some research (in all my free time- ha).
As a quick side note, I refuse to accept the fact that it’s December 1st. Nope. Not for me. Today at the STUFT house it’s November 31st. We just need an extra day around here. Hope that’s okay.

So in honor of making up an extra day (and not posting anything green for awhile), I had to share my breakfast I’ve been having the last week or so.
Our trip to Costco last week was not the best decision I ever made. It wasn’t made any better by the fact that they were out of Kirkland nonfat Greek yogurt. They told me it was something about redoing the packaging. What the?
That seems to happen to me a lot, especially once I depend on a particular product (like broccoli slaw). How was I supposed to make my “go to” yo-oat bowl without that darn yogurt?
Well, I got creative. Lord knows we have a lot of eggs around here (Kirkland cartons only) so I mixed up a little something similar to my big bowl of banana oatmeal.
It may be green.
It may be a little weird.
But….. if you like French toast and oatmeal (and don’t mind the color green), you will love this.
For the not so green at heart, you can also do this without spinach. It just might not be as fun.
Green Eggs and Oats Bowl
1 serving (40 grams) oats of choice (I like Coach’s Oats)
1- 1 1/2 cups water or nondairy milk (or a combination)
1/2 cup egg substitute
handful of fresh spinach (optional)
cinnamon to taste
sweetener of choice (I use 1-2 stevia or Splenda packets)
vanilla or almond extract to taste (about 1/2 teaspoon)
Prepare oats on the stove as directed. Adding extra liquid (like the yo-oat bowl) if desired.
Blend together egg substitute and spinach. (I use the Magic Bullet.)
After oatmeal has cooked, add in egg substitute mixture, sweetener, cinnamon and vanilla.
Continue to cook until eggs are cooked thoroughly.
Scoop into cute, festive bowl.
What you get as the end result is a giant bowl of protein packed, French toast tasting oats.
They are marvelous.
I like to top mine with mixed berries (defrosted frozen berries from Costco) or cherries, a tablespoon of SunButter and a little sugar free syrup.
I promise they are good.
They can be better with a STUFT Salted Caramel Mocha.
They can also be better in an almost empty jar of nut butter.
And with some great mean green French toast eating company.
Oh I love these guys!

While my oat have been green before (zucchini bread oatmeal = winner), I’ve never worked spinach into them. It’s what’s for breakfast tomorrow though! 🙂

I must admit…they’re not the prettiest things to look at, but I must try Green Eggs and Oats. (I’ve been trying for 2 minutes to think of something witty to rhyme oats with..nothings comin’).

I’m in love with all of your green creations! Maybe they’re not the uhh prettiest to look at, but they sure do sound healthy. I’m all about packing in greens as much as I can! 😉 And currently I’m obsessed with all of your microwaveable mighty muffins! Now I need to try this….

Heather- ha ha! I was kind of going for that with the colors. 🙂 I guess you can get Torani syrups cheaper at Walmart, but oh well. I got some fun flavors.
I’m not patient enough for Walmart – I ordered a gingerbread & peppermint one with the discount! 🙂

The great thing about weird food colors is if you start them out when they’re young, they’ll never know any different. I for one think your breakfast bowl looks great!

Emily- have totally jst made green eggs before nad wrapped them in a breakfast tortilla. Fabulous. I feed it to my boys all the time.
The green is a bit…odd. Sorry! Ha! But I agree with you that oats and eggs cooked together are amazing and taste a lot like French toast! Especially with some maple syrup. So good!
Stephanie- I know, green is a little tough to get used to. Once you do though, watch out. It’s addicting. Ha ha! Or.. maybe that’s just me.
I’m with you! November 31st it is! I’m very certain I could eat with you…well not the creamy pasta (for your safety and mine), but most of your eats are so up my alley! I had a quinoa parfait tonight with coconut greek style yogurt, pineapple and chia seeds tonight…it was so good! I’m pretty sure you are one of the few people that would appreciate the combination.

Green oats! Imagine trying to serve that to someone other than a healthy eater – lol!! I might just have to try this though as a new way to sneak in some veg. I have been a bit turned off by any and all vegetables with all the holiday/vacation festivities as of late…

Hello! Today I tried the green eggs and oats – it’s yummy! Funnily, the texture of mine still remains “oatmeal-y” (except the color) while yours looks very “toast-y” (looks like it’s big chunks of bread). Do you have any idea why?

Hmm…… I don’t. If I make it on the stove it stays pretty oatmeal-y. If I overcook it (which happens A LOT) it turns a bit more chunky like that because a lot of the liquid gets absorbed. Maybe that’s the key. Ha. Thank YOU for reading the blog!!!!
