Friends, today I think I’m ready for company.
Yay!
Just don’t look in the closet. (I hope my house guests don’t have to hang up any clothes.)
Or the scary green room.
Or ask me when I’m ordering my Christmas cards.
Or ask when I’m mailing out your long overdue thank you packets with goodies from SunButter and Flatout from our half marathon for Amelia.
I might just cry a little.
For now though, I’m feel like I made a little bit of progress and am excited to spend time with my relatives.

I have just a couple minutes to put my feet up and get this post done before I’m off to teach a couple classes.
I know exactly what you’re thinking. I think they’re the coolest holiday slippers I’ve ever seen too.
I’ve also managed to get a couple of decorations out (which was not easy with almost two year old twins “helping”). We’ll see how long they last.
No tree is complete without a sock monkey and Muppets.
I’m really not sure why I keep hanging this guy up every year. He does make me laugh though.
I’ve been eating some weird, but delicious things lately too.

Yesterday my green eggs and oats were topped with cinnamon and Splenda roasted butternut squash. I just roasted little cubes that had been sprayed with cooking spray and sprinkled with cinnamon and Splenda (similar to cinnamon crisps, but they take longer) at 400 for about 20 minutes.
I topped it with sugar free syrup and a tablespoon of SunButter. My friend Sarena gave me the idea when she posted overnight oats with butternut squash and white chocolate peanut butter. Yeah, she’s pretty cool.
Last night I had some roasted broccoli (prepared exactly like roasted cauliflower) and chicken breast topped with marinara and a little goat cheese with a cheese sandwich (with a Laughing Cow garlic and herb wedge and a light string cheese) on the side.
It was good. Not good that I ate it at 10:00 pm though.
Today’s green eggs and oats (yes, I realize I have a problem and yes, I am almost out of Coach’s Oats) had some added chia seeds thanks to a package I received recently from GNC. I just added them to the oats while they were cooking before I added the egg whites. It made my oat bowl even more ginormous than usual.
Oh man, they were good, especially when I topped them with fresh blueberries.
(There’s still some sugar free syrup and SunButter in there. Those are a given.)
Okay, I’m calling it a long weekend.
I’m following doctor’s orders.
I’m devoting my attention to fun family bonding time and living in the moment.
I think there might be some singing involved. We’re getting a little better at our song.

strong work on getting everything accomplished!! the guest room looks great! i’m loving the looks of your recent eats too. i have a question too… what are your thoughts on using Splenda? i’ve always used it up until recently because of some studies that have been done about it, so i’ve been using Stevia more. i go back and forth about it. thoughts?
Ashley- I don’t know about the whole Splenda thing. For so long people said great things about it, now that there’s something new they think it’s not as great. I’ve been trying to use Stevia more too, but I still use Splenda a lot. I should probably do some more research. I’m with you on the whole back and forth thing.

Hey Kristin – LOVE the office – thanks for the info on Coach’s oats too – although I have a crazy fear of Costco – I go in and just break out in a sweat and get overwhelmed ;). So glad you got the Love Grown blogging gig – I did finally get to vote for ya — well, since I always kvetch about the cold here I can report that last night as I drove to my office holiday party, it as 64 freakin degrees in our nation’s capital — yes, you could stroll the streets of DC last night sans jacket. Hope you have a great day – I’m off to experiment with oatmeal and see what I come up with — take care!
