Catching Up With the STUFT Family and a Dip


Good morning! Um, yeah, Christmas is less than a week away. My guest room may be clean, but I haven’t started my shopping yet or picked up my Christmas cards from Costco. Time is a ticking…..

This was night last night at midnight.


I don’t think my doctor would approve.


We had an amazing time with our family in town. The boys were still a little under the weather so they didn’t make the best impression, but what can you do? They put on a good show for pictures at least.

We spent time at Grandma D’s and Papap’s with the family.


We made a gingerbread house.


I can’t take any credit. I didn’t help. I just took pictures and then snuck in for one at the end.


They did good, huh?

No weekend with company is complete without some STUFT SunButter Doughtzel Balls


a few too many lattes and mochas (thanks to my collection of Torani syrups)


(That was my dark chocolate peppermint mocha yesterday.)

and some great green egg oat pancakes.


My cousin and his fiancé Brooke decided to forgo the pancakes and picked up some Panera for the adults. They don’t know what they’re missing, juts like Andrew didn’t know what he was missing the day before.


Ha ha ha!

So, while Grandma D gave the boys a make up lesson


I created this dip for my Panera bagel.


Pumpkin PB2 Spread

2-4 tablespoons canned pumpkin

2 tablespoons PB2

1 tablespoon nondairy or low fat milk (I used vanilla soy milk)

1-2 sweetener packet(s) of choice (I used Stevia)

cinnamon to taste

pumpkin pie spice to taste



Mix all ingredients in small bowl.


Notes- I used 1/4 cup (4 tablespoons) canned pumpkin, but I’ve also made it with just 2 tablespoons before for a thicker spread.


It was the perfect 80 calorie topping for my bagel. I’m sure it would also be perfect on some green muffins, but it was a bagel yesterday (since we had company and all).


It also makes a great dip for apple slices. I think I’ll be having that today for a snack.



Okay, here goes nothing. Time to welcome Monday and this crazy week with open arms.

Please tell me I’m not the only one who hasn’t started their Christmas shopping (or picked up Christmas cards). Eeekkkk….

    I just ordered our cards yesterday – which means even with the expedited shipping I won’t get them until at least Wednesday. Post-Christmas cards anyone?! =)

    And Torani and I are NOT on good terms – I can’t get ahold of them and the tracking number they sent me was for someone else’s order. I think I’ll be having Christmas flavored drinks in the New Year! 🙂

      Heather- first of all, thanks for making me feel better about the cards. I’m actually procrastinating right now because I should be addressing them. I have over 100 to send. Ugh. And that its NOT okay about Torani. What the heck? I’m so sad for you. That is so frustrating. I hope they make it up to you. If you were closer I’d share soem of mine (and/or just have you over and make you yummy drinks).

    I love that gingerbread house they made – that is one of my favorite traditions that I have not done yet this year!! For some reason, Christmas is totally sneaking up on me this year more than most! My shopping is not even close to done and I still have other things I wanted to do before the holiday but there is no way it’s gonna happen in less than a week… oops! Have a good one!!

    We don’t even send Christmas cards so you’re one step ahead of me just by ordering them! I am finished my shopping though. We live on the other side of the country as our families so we have no choice but to get things done early or else nothing would make it on time. Plus, we live in the middle of nowhere and only go to the city once in a while so I also have no choice but to get things done 🙂 It helps that Andrew and I are just doing stockings this year – no stress about what to get him!

    The gingerbread house looks great! We’ve made gingerbread houses but it usually results in Lincoln eating a bunch of icing 🙂

      Nice that you’re just doing stockings this year. That’s more than us. Ha! Yeah, the whole gingerbread house thing was a bit of a mess. I’m not sure how many gumdrops were consumed.
      And yeah, maybe it’s nice you live in the middle of nowhere so you can to get everything done, right? 🙂 I wish I lived in the middle of nowhere sometimes……. Can I come visit?

    The boys look like they were good little decorators~! mine just shoved as much candy in their mouths as they could! ha!
    That dip looks good! I don’t know where to get PB2.. Ill have to order it online.

    What do you use to scoop the balls out with? I need whatever that is so I can make them pretty like yours. Your balls are pretty.

      It’s a cool little scooper thing from Bath and Body works. I think it’s actually called a cookie scoop. Best thing ever. Your balls can be pretty too! 🙂

    I’ve been adding PB flour to my pumpkin too! Saturday I had it for breakfast mixed in greek yogurt with cinnamon, nutmeg, and a bit of vanilla. So good!

    I’m actually sitting pretty now with the to-dos for Christmas…with the exception of the major Christmas treat baking that will happen on Saturday. Oh, goodie! Hope you have a good week, Kristin!

      Thanks Tina. I’m jealous that you’re sitting pretty with the to-dos. You’re just awesome (and always happen to be sitting pretty). Ha ha! I have a big baking day coming up too. Hmmm…. when am I goign to do that? 🙂 Wish we could bake together (and drink wine). 🙂

    You’re cracking me up with all those pictures of flat kitty. It’s like you know it’s crazy but there’s nothing you can do about it 🙂 I’ve been making pumpkin/peanut flour spread forever, I love it! I put it on french toast.

    So enjoyed your post – we celebrate both Chanukah and Christmas here and I almost ended up in a fetal position in Toys R Us today – I work part time out of the house and Mondays is my at home day and I was scrambling – LOVE the idea of PB2 and pumpkin – I’ll have to try that. Hang in there …..and enjoy the day!
