Flat Kitty Says Goodbye to 2011- Chia Recipe and a Giveaway


Since I already know one of my resolutions for 2012 is to be on time (I’ve had the same resolution four years in a row now) it’s only fitting do do my last Flat Kitty Friday post on Saturday. I didn’t even manage to get it done in the morning. I’m really going out in style. Ha!

After all of last night’s excitement


and one of my last long (21 miles) training runs yesterday morning I didn’t have it in me to write yesterday.

But now, before we take a few days off to figure out some goals for 2012 (besides being on time), Flat Kitty and I want to share our new chia obsession with you. It’s all thanks to some really fun recent Twitter conversations.

Kasey’s Chia Berry Jam

1/2 cup frozen berries

1 tablespoon chia

1 packet no calorie sweetener

1 tablespoon water



Put frozen berries, chia and sweetener in small microwave safe bowl. Microwave for 1 1/2 to 2 minutes.

Add I tablespoon of water.

Mix well and let sit to form a gel or cover and let sit in refrigerator for a couple hours (or overnight).

(I used some mixed berried from Costco. I want to try it with dark cherries from Costco next.)


What you get is this little bowl of fiber packed yumminess.


The other day I spread it on a Flatout with some nonfat cream cheese for a quick snack.


I made another batch yesterday and stuck it in the fridge overnight.

This morning I, oops, I mean we, mixed it in with a packet of Kashi oatmeal (after the oatmeal had cooked and exploded all over the microwave).


I topped it with some nonfat Greek yogurt, sugar free maple syrup and a tablespoon of SunButter.


It was the perfect New Year’s Eve breakfast.


So, I’m not going to post about all my goals for 2012 or everything that happened in 2011 because I’m still trying to figure out what exactly I want to focus on this upcoming year (I have 9 more hours to get my act together) and well, to be honest 2011 was amazing, but a blur (and I don’t want to bore you).

What I am going to do is give you a little something.


A couple of things actually. Since my Flat Kitty Friday posts have been less than mediocre as of late, I’m asking for some help. Or actually, Flat Kitty is asking for help (he’s over me).

In 2012, I think Flat Kitty Friday should be about you.

I know some of you got a Flat Kitty in the mail from donating to our half marathon for Amelia and I still have a few leftover that I’m looking to give good homes to.

Here’s the plan:

You can email your pictures or post them on the Stuftmama facebook page Thursday (or anytime before). I’ll just start with it being general Flat Kitty adventures. It can be a recipe you want to share, something you did, a favorite food find or just a funny photo I’ll post it on Friday. If you have a blog I’ll make sure to link you up as well. Hopefully it’ll be fun. I’m thinking we could even do a different Flat Kitty Friday theme each week in the future. For now though, I’ll just start off with whatever you want to share to see if it’s actually as cool as it is in my head. If nothing else, it should provide a little entertainment, right?

It never gets old does it?

Well, I’ve been holding back and I got a little something for one of you.


I bought a bunch of Bob Harper’s DVDs from the website a month or so ago. They’re pretty darn awesome (and only about $5 each). This one is for you. I haven’t tried this exact one, but I’m guessing it rocks like all his others.

You know what makes it even better?


Yeah, that’s right. My man Bob signed it. I’ thought about keeping it for myself, but I’m keeping my fingers crossed I’ll be in the club again sometime soon and can get another one.

This one is for you.

All you have to do to enter is leave me a comment here telling me your reader request for 2012. Tell me what you want to read about. I want to make my posts more purposeful in 2012 and could use a little input.

I love your blog, as I have told you many times, but my very favorite recipe is the enchilada casserole that you posted way back when, and taco pie is a close second. I have made them several times…and my mom gets rave review when she takes the casserole to friends houses. So, I guess more of your yummy recipes are my request. But honestly, I enjoy everything about the blog…and those boys can’t get any cuter.

    I also love what you’re doing. 🙂 I think you’re on the right track! My favorite posts are the ones where you incorporate healthy food finds (like spinach, oats, chia, etc.) into quick and easy recipes. This chia jam looks great! So I would like to see more of that next year.

    Happy new year!! We need a flat kitty in our house for sure! As for possible post ideas I think it would be awesome if you can share some tips on prenatal exercises – I know you’re not pregnant anymore but since you did manage to stay fit with twins I’m sure you have some great advice to give 🙂

    Bob Harper……GGGGGrrrrrrrrrrr, I wish I had a BF like that….
    My Chia berry jam is in the fridge as I speak, waiting to gel-up! I cant wait for my waffles in the morning……Chia seeds might be my best find for the year! seriously, anything that can curb my appetite, and keep me full like these little babies do, deserve a standing ovation. I don’t need recipes for them either, I just eat a teaspoonful before a meal….or toss it into my meal, depending on what I’m eating, so a BIG THANK YOU, for that…..
    My 2012 goals are to be more giving and complain less…..I’ve already started, I decided that I would commit to giving to Rady childrens hospital, I signed up for a payment to come out of my account every month, and there is a certain homeless person in Poway, that I want to help out, I bought him dinner the other night, and I want to do that more often…….We really have to love each other more, and take care of each other, we are human beings, we need each other. I’m not sure how many people you have on your blog, but maybe we could as a whole do nice things for people in need? I remember on Jef&Jer one day, a woman was talking about how things were really hard and she had just had a baby, and she didn’t even have a crib…..I asked some of my friends and they asked there’s and we got her a crib…that easy! I’d love to be part of a network like that……Or maybe you can talk more about how to live a greener life……anyway, Happy New Year guys!

      Hi Denise! Flat Kitty is a long story. Just a silly cut out I made of my crazy looking cat. I take Flat Kitty on adventures, etc. Jsut some entertainment- like a Flat Stanley. 🙂 Chia seeds are sooooo fun- way more fun than a chia pet. LOL!

    Happy New Year Kristin! I have my flat kitty in my office and always get comments on him. We are going to start Biggest Loser Bear Valley Edition #4 next Tuesday. Can you believe it #4?
