Good morning! My new schedule for this year is to go to bed early and then get up and write a post or get my workout in before the boys wake up. We’ll see how it works out for me. Five minutes into this post while in my pajamas it seems to be working out just fine.
Ha ha!
So, for those of you that are Costco shoppers you may have seen a little something something in the coupons for this month.
Would you look at that. It’s that amazing jalapeño yogurt dip. I will definitely be stocking up on that.
I also created a little fun last minute enchilada dish that I’ve made a couple times the past few days for dinner. I’m going to try a bigger version of it to feed the whole family soon, but it’s just too good not to share with you (and with the coupon and all I just couldn’t resist).
Keep Your Hands off Mama’s Spicy Spinach and Chicken Enchiladas
serves one hungry mama (hopefully at a decent hour)
1 chicken breast
1 teaspoon taco seasoning (I didn’t exactly measure this)
cayenne pepper (optional)
handful of fresh spinach
1/4 cup jalapeño yogurt dip
5 small corn tortillas
1 cup roasted red pepper and tomato soup
Directions:
Cook chicken breast with taco seasoning and cayenne. (I cooked it in the microwave.)
Cut chicken breast into bite size pieces and mix with spinach and jalapeño yogurt dip.
Put small amount of soup in the bottom of a small baking dish sprayed with nonstick spray.
Put the chicken mixture inside the tortillas one at a time and wrap to form the enchiladas. Place in baking dish.
Top with the remaining soup.
Bake for 350 on convection oven setting for 25 minutes.
Feel free to add lettuce, salsa, hot sauce, etc. I sure did.
Notes:
These are awesome and so easy to put together.
I didn’t add any cheese (I was trying to keep them low calorie), but I’m sure they’d be good with some in there.
This soup from my Trader Joe’s favorites is the best.
And now for the show.
In lieu of gift giving on STUFT Daddy’s side of the family (he’s one of 10 kids) we have an annual family talent show instead. This year was an exciting one because they boys got to debut an act.
Although I’ve been told my true talent is eating a huge plate of desserts (I’m still not sure if I should be proud of that or not) we decided to go with a workout routine instead.

We also had special outfits, but I decided against them at the last minute. Next year.
The boys did much better in practice. Joaquin got a little stage fright.

Those enchiladas look ROCKIN! Sometimes cheese isn’t even needed with flavorful dishes like that. A lot of the time I could take or leave cheese, so I leave it, unless it’s my favorite GOAT. Goat cheese in a Mex dish could be interesting!
I used to put on talent shows all the time when i was younger. Once we hosted a circus and invited the whole neighborhood to come watch.
Your new morning routine sounds perfect! My sister is like you, she likes to get up and relax a bit before her morning workouts. I tend to get up and just go to the workout because the more time that passes when I wait, the more I don’t want to go haha

I have that problem everytime I go there. LOL. My freezer is a little scary. I need to make another trip because I’m freaking out of paper towels of all things. Ugh. Biggest Loser night!!!
OMG, those babies are sooooo cute!!! I have the same morning routine, well at least in the winter, when I don’t have to get up at dawn to run because of the heat. I think I like winter routine better than summer but like the summer weather better. Oh well, can’t have everything……..:)
Yeah, we can’t have everything huh? 🙂 I’m just so much more productive in the morning. 🙂 I need to take advantage of that (and of feeling that much better when I get to sleep at a decent time).

I’m going vegetarian this month, but I would love to try this with tofu or tempeh. Maybe even soy chorizo!
Oh…. I bet it would be great with tempeh (isn’t everything). 🙂 Why vegetarian for the month (if you don’t mind me asking)?
To start the year off clean and feeling good. I feel better when I eat less meat… and I think I ate an entire lamb in November and a pig in December. 😉
I think I may need to make a resolution for 2012 after all… I need to make enchiladas!! I’ve only ever made them once YEARS ago… and THAT is a travesty!!! 🙂
Sounds like a darn good resolution. I rarely make them too, but have been doing these easy single serving ones as of late. 🙂

We’d all get together at New Year’s and do family skits and acts and then reflect on the year and pray in the new one…such great memories.
