More Food Chatting, Trader Joe’s and Lazy Mama Lasagna

 

Good morning! This post might be a little random. I’m a little too excited after being so chatty the other day I just feel like talking again.

Yesterday was a good day. I finally felt better and was pretty much back to eating my normal food. We made a trip to Trader Joe’s and finally got some broccoli slaw in the house. I even managed a treadmill run during naptime and instead of having shooting abdominal pain, the only time my stomach hurt was when I was laughing at the Ellen show.

Yay!

Some meals as of late.

Thursday night I made these Keep Your Hands Off Mama’s Spicy Chicken and Spinach Enchiladas

and even followed them up with a double serving of three ingredient fudge.

Yesterday for breakfast I enjoyed a version of my Big Bowl of Banana Oatmeal

In the bowl: 1/2 cup Quaker oats (In honor of the heart health challenge), 1 cup water, 1 cup unsweetened vanilla almond milk, 1 tablespoon chia, 1/2 banana, 1/2 cup egg substitute, cinnamon, a Splenda packet and some almond extract. So filling and so delicious. I wasn’t quite ready to make it green yet. Ha! Oh and I topped it with this Trader Joe’s Almond Butter with Roasted Flax Seeds.

The boys had pretty much the same breakfast- quick and easy scrambled oatmeal.

Oh, and I didn’t want you to feel cheated out of Flat Kitty Friday so I made sure to drink my iced mocha out of this cup.

Speaking of, I’m tossing the idea around to make a Flat Kitty coffee mug. Wouldn’t that be awesome? Who wouldn’t want to see this guy bright and early every morning on the side of a mug? Ha ha!

Moving on.

Trader Joe’s.

We got the frequent flyer in the mail the other day so I was on a mission to find a few goodies that I spotted in there.

First was this Reduced Guilt Spinach and Kale Greek Yogurt Dip.

Second were these Chicken-less Mandarin Orange Morsels.

Oh, I got a little sidetracked and got those Gnocchi for the boys too. They love them.

I got sidetracked again (that’s weird) and bought this wine because it was only $3.99.

(It was alright. Nothing too impressive. It definitely doesn’t compare to my favorite wine.)

These mushroom raviolis also caught my eye.

Speaking of raviolis, I did a little experiment last night.

I’ve always wanted to try baking raviolis instead of preparing on the stove. Last night I was just lazy enough to give it a go.

I Googled and found this recipe. Then I created my own Costco style version.

 

Lazy Mama Spinach and Cheese Ravioli Lasagna

Ingredients:

1 bag Spinach and Mozzarella Raviolis (or other frozen raviolis)

1 large jar Classico Marinara

(I used these raviolis from Costco that come with the Italian Herb Cheese Packet.)

 

Directions:

Spray large casserole dish with nonstick spray. Pour a small amount of marinara into pan.

Place a layer of raviolis and top it with sauce. Continue alternating layers until done.

.Top with herb cheese packet.

Cover and cook in oven at 375 for 50-60 minutes.

 

Here’s a little look at exactly what I did.

After I covered it and cooked it I had this amazing lasagna dish.

We ate it with some roasted cauliflower and tofu and some Italian chicken sausages.

Obviously my appetite is back. Ha!

    Flat Kitty coffee tumblers! He looks a little freaked out in there. That is a great “lasagna” recipe! You could probably even put some cauliflower, or any veggie in the pan under all that sauce.

    Sometimes I really miss the simplification of meals. We just don’t have that anymore. Good thing I love cooking! You know I would be all over those coffee cups! Love the tumbler! Too cute! I’m so glad you’re feeling better! I hope you have a great Sunday!

    TJs has kale greek yogurt dip?! That is the first thing I buy post-cleanse. YUM.

    Great video! I love the comment bubbles about the boys. Also, I want your arms when I grow up. :)

      It’s new Laura. I haven’t tried it yet, but it looks delicious. I have to finish up my jalapino yogurt dip first. :) I only like to have one open at a time. ha ha!

    Soooo glad you are feeling better — damn I usually do a Trader Joe’s run on Saturday but passed yesterday due to predictions of snow – yes, I’m a wuss – and all we got was a dusting – if you have snow at least make it a real snow!!! boo – feel good and enjoy your day!

    I love ravioli but HATE cooking it on the stove top because they always stick together but this looks like a really awesome solutions to that!!! Plus WAY easier than making lasagna… another way too complicated meal ;) Good idear :D !!

    Per usual, all of your eats look ridiculously delicious. Can I just hire you to cook meals for me? Seriously. Love, love, love your Lazy Mama Lasagna – I think you should trademark it. ;)

    I love that you call a 10K a “little race”–especially while pushing a double stroller full of little boys! Nice job, and congrats! Glad to see you are feeling better too.
