Good morning! This post might be a little random. I’m a little too excited after being so chatty the other day I just feel like talking again.
Yesterday was a good day. I finally felt better and was pretty much back to eating my normal food. We made a trip to Trader Joe’s and finally got some broccoli slaw in the house. I even managed a treadmill run during naptime and instead of having shooting abdominal pain, the only time my stomach hurt was when I was laughing at the Ellen show.
Some meals as of late.
Thursday night I made these Keep Your Hands Off Mama’s Spicy Chicken and Spinach Enchiladas
and even followed them up with a double serving of three ingredient fudge.
Yesterday for breakfast I enjoyed a version of my Big Bowl of Banana Oatmeal
In the bowl: 1/2 cup Quaker oats (In honor of the heart health challenge), 1 cup water, 1 cup unsweetened vanilla almond milk, 1 tablespoon chia, 1/2 banana, 1/2 cup egg substitute, cinnamon, a Splenda packet and some almond extract. So filling and so delicious. I wasn’t quite ready to make it green yet. Ha! Oh and I topped it with this Trader Joe’s Almond Butter with Roasted Flax Seeds.
The boys had pretty much the same breakfast- quick and easy scrambled oatmeal.
Speaking of, I’m tossing the idea around to make a Flat Kitty coffee mug. Wouldn’t that be awesome? Who wouldn’t want to see this guy bright and early every morning on the side of a mug? Ha ha!
We got the frequent flyer in the mail the other day so I was on a mission to find a few goodies that I spotted in there.
First was this Reduced Guilt Spinach and Kale Greek Yogurt Dip.
Second were these Chicken-less Mandarin Orange Morsels.
Oh, I got a little sidetracked and got those Gnocchi for the boys too. They love them.
I got sidetracked again (that’s weird) and bought this wine because it was only $3.99.
(It was alright. Nothing too impressive. It definitely doesn’t compare to my favorite wine.)
These mushroom raviolis also caught my eye.
Speaking of raviolis, I did a little experiment last night.
I’ve always wanted to try baking raviolis instead of preparing on the stove. Last night I was just lazy enough to give it a go.
I Googled and found this recipe. Then I created my own Costco style version.
Lazy Mama Spinach and Cheese Ravioli Lasagna
1 bag Spinach and Mozzarella Raviolis (or other frozen raviolis)
1 large jar Classico Marinara
(I used these raviolis from Costco that come with the Italian Herb Cheese Packet.)
Spray large casserole dish with nonstick spray. Pour a small amount of marinara into pan.
Place a layer of raviolis and top it with sauce. Continue alternating layers until done.
.Top with herb cheese packet.
Cover and cook in oven at 375 for 50-60 minutes.
Here’s a little look at exactly what I did.
After I covered it and cooked it I had this amazing lasagna dish.
We ate it with some roasted cauliflower and tofu and some Italian chicken sausages.
My huge dish looked a little something like this.
Obviously my appetite is back. Ha!
