It’s also a little weird.
So is having more than 28 days in February, so I thought it would be fitting for today.
This is simply a green version of our chia cookie dough dip. Everything is better when it’s green isn’t it?
I came up with this green idea last week and shot the video in my 10 minutes of alone time last Friday. Don’t worry, I will not be making many more videos by myself. It’s just not as exciting as having my two little men with me. We’re due for some good workout videos anyway.

Put on your sweats, mess up your hair a little (to make me feel a little better of course) and then hang out with me for six minutes or so. You don’t want to miss this.
If I’m going to keep doing videos I should really learn how to edit a little better, yes? I’ll get on that in all my free time.
Oh yes. The dip.

You don’t have to answer. I already know. It’s darn good.
Green Chia Cookie Monster Dough Dip
Ingredients:
handful of spinach
1 can garbanzo beans, drained and rinsed
1/4 cup PB2 or other nut butter (other variations and adjustments in notes below)
1/4 cup granulated sugar or sugar substitute
1-2 tablespoons brown sugar (I use 1)
1-2 teaspoons vanilla extract
1/8 teaspoon of baking soda (I just use a pinch)
1/8 teaspoon of salt (I just use a pinch)
1 tablespoon of chia
2-4 tablespoons milk or nondairy milk of choice
*When making this for the boys I use regular sugar. Also, start with only 2 tablespoons of nondairy milk and add more as needed. If you use regular nut butter instead of PB2 only start with one tablespoon of milk.
Instructions:
Combine all ingredients in food processor.
Put it in a cute dish (optional).
Eat it with a spoon (or knife)
or serve with cinnamon crisps, apple slices, etc.
If you’re really feeling nice, you can serve it up with some organic graham crackers for the toddlers.
Appropriate public attire is optional.

Yum! That looks great – I still haven’t tried PB2 … I don’t know what my problem is but it needs to change!
Kerry- Yes you NEED to try PB2. There is so much you can do with it! Careful though, it’s a little addictive. 🙂 Maybe you’re safer not knowing what you’re missing. He he.

I found chia seeds at our Costco on the weekend! I was super stoked because they were a fraction of the price I normally pay, it took all my will power not to buy them all. Unfortunately, our Costco is still out of peanut butter 🙁
Chia seeds at Costco? Say what? That is awesome! I’m going to start searching for them there. I don’t understand the whole out of peanut butter thing. That ain’t right. 🙂
I just saw tyour original cookie dough dip on Ashley’s blog this morning. I’m surprised there hasn’t been a green version already 😉 Looks yummy!

Have you ever tried that dip with something other than the beans? Beans and my tummy don’t always get along so well but every time I see the dip, I want it so bad!!

I haven’t Kinley. It’s just like a sweet hummus so the garbanzo beans work well. I’m not sure what else would work. Hmm….

Hopefully this will make you feel better: I have no bra strap, as I am without a bra. I breastfeed my 9 month old and only wear a bra when leaving the house. I am in sweats, again, only change out of them when I leave the house.
I would watch your video if you were doing nothing but reading a book, as your arms are so frickin inspiring!

Okay I don’t know about this dip…but I probably will try it. I see you’ve got that new spinach from TJs (can’t get that past me) 😉 Do you notice a taste difference? I wasn’t sure if it would still be good “pancake spinach”.
Oh… I think you’d like it. Not sure how I feel about that Trader Joe’s spinach. I wasn’t that impressed and the nutritional stats were pretty similar. I feel like it was more spinachy. (Is that even a word?) I bet normal spinach would disguise a bit better in the dip (and in pancakes). 🙂

And please don’t even think TWICE about “looking tired” or worrying about a clean space etc! 😀 I have dreads, workout lots, and my shower to workout ratio isn’t exactly even. 😉 I agree with you and Laura above – any/everything is better green! I NEED to buy some PB2…do you only order it online or can you get it in stores? I never purchase anything online and should just go for it.

Bonnie- I only order it online. I’ve heard it’s at Whole Foods, but I’ve never been there. I don’t know about stores in Canada either. Um.. I can’t believe you’ve never bought anything online. I would have a lot more money if I didn’t make any online purchases. LOL.

I’ve made something similar to this for my twins (yay twin mama’s!). They gobble it right up ( and I love it, too). I’ll have to try your version the next time I make it. Most likely it will be tomorrow!
