Hey hey! Happy Friday!
But, life is hectic and this week flew by. I didn’t do anything with Flat Kitty. (Even though I was tempted to try to get him to dance behind Bob the other day. How cool would that have been with those socks and everything?)
So today, instead of a Flat Kitty Friday post, I have some things that are making me smile these days and a little SunButter giveaway.
First here’s the things that are making me smile.
Spring smelling hand soaps in every room of the house.
These cute flowers outside.
My same breakfast I’ve been eating every day this week (a whole wheat bagel thin with egg whites and sugar free jam).
The fact that even though I burn my roasted broccoli slaw the majority of the time, it’s still mighty tasty topped with marinara and served with a cheese less sandwich (inside the sandwich- Smart Balance, garlic salt, garlic powder and nutritional yeast).
I can’t wait to experiment with them and try out some of the fun recipes.
Coming home from the gym to find these Healthy Bites my dear friend Lindsay made for the boys.
And after letting the boys shove a couple in their mouths before bed,
making sure to sample all the flavors for myself.
I already want more. They are delicious.
(Hmmm….I think it might be time to not have the boys wear their Christmas pajamas anymore and for me to do something about my dry hands and nails. That sure isn’t making me smile.)
Speaking of SunButter, I had almost forgotten about this cookie until the other day. Shucks, when I remembered it, it sure made me smile.
STUFT SunButter Oatmeal Cookie
1/3 cup oats
1 tablespoon whole wheat flour
1 tablespoon SunButter
1 tablespoon applesauce
1 tablespoon nondairy or low fat milk (I use almond or soy milk)
¼ teaspoon baking powder
¼ teaspoon vanilla
1-2 packets no calorie sweetener (or 2-3 teaspoons regular sugar)
Cinnamon to taste (optional)
Combine all ingredients together in small bowl.
Form into large cookie on baking sheet lined with parchment paper.
Bake at 350 for 10 minutes.
Note- You can sub in any other nut butter (or prepared PB2) for the SunButter. Feel free to add chopped apples, dried cranberries or chocolate chips if you really want to smile.

Not only do we put SunButter on pretty much everything over here, but SunButter also supported us in our race for Amelia back in November and they’re located in North Dakota (which just so happens to be where Grandma D is from). I like to say the STUFT family and SunButter are pretty darn close. So close, in fact, that they sent this last week for me to give to a STUFT reader.
