We’ve got some important business today.
I promise not to bother you with our craziness that has been happening over here as of late. (For the blog only though- Facebook and twitter is a whole different story. And I’m only promising one day. I’m sure the entertaining mayhem will be back tomorrow.)
What could be so important?
Well, not only do I have some fun recipes to share, but I also have some things to give away.
Take a look at these.
That’s right. Our good friends at Coach’s Oats were not only kind enough to send over their Multi-Grain Pancake Mix to our house (since I’m just a wee bit obsessed with it), but they’ve also offered to give away a bag to five lucky STUFT readers.
These bags, my friends, are like gold right now. They just happen to be so good that they are out of stock at the moment. It’s our lucky day though because they’ve saved some bags to give away to YOU. Yeah, you’re that cool I guess.
I felt like it was my job to come up with five easy recipes since we have five bags to give away. You’d feel the same, right?
Not that you need recipes to go with this mix, because just by following the simple directions on the bag, you can pretty much create the best pancakes ever.
Or you can add some spinach and make these gourmet green pancakes.
The other day we even added some cocoa powder and a couple of beets to make these red velvet ones.
Oh yes we did.
So many things to try, so little time. Ha.
I’ve been experimenting with some recipes with this mix over the past couple of weeks and am ready to share my top four (the fifth one is being saved for another day).
Here we go.
Flat Kitty first professed his love for Coach’s Oats in this post with his oatmeal cookie, so I figured it was only appropriate to include him with my first recipe (you know, since it’s Flat Kitty Friday and all).
Coach’s Protein STUFT Microwave Muffin
serves 1
1/4 cup Coach’s Oats Multi-Grain Pancake Mix
1/2 cup egg substitute
1/2 cup pumpkin
1/4 teaspoon vanilla
cinnamon to taste
pumpkin pie spice to taste (optional)
sweetener packet (if needed- I didn’t use one)
Directions:
Mix all ingredients in a small bowl.
Pour in mug sprayed with nonstick spray.
Microwave for 4-5 minutes.
Plop in a bowl.
Top with your favorite toppings.
For this creation I topped mine with SunButter, blueberries and this reduced fat organic coconut.
I did NOT share with this guy. I’m selfish like that.
Next up.
This adaptation of the biggie banana bread bake.
Coach’s STUFT Banana Bake
serves 1
1 ripe banana, mashed
1/4 cup Coach’s Oats Multi-Grain Pancake Mix
1 tablespoon coconut flour (or 2 tablespoons whole wheat flour)
1 tablespoon chia or ground flax seed
1/4 cup egg substitute
2 tablespoons milk of choice (I used unsweetened almond milk)
cinnamon to taste
1/4 teaspoon vanilla
Directions:
Combine all ingredients in medium bowl.
Pour in fun baking dish sprayed with nonstick spray.
Bake at 375 for 30 minutes.
Um…. yum.
Big, huge, you’ve got to try it,
and top it with some nut butter of choice. (In the picture- NuttZo.)

Well, even if you’re not, here it is.
Next we tried a little Coach’s version of our original hooligan pancakes.
Coach’s STUFT Hooligans
serves 4 (or 2 at our house)
1 cup Coach’s Oats Multi-Grain Pancake Mix
1 cup milk of choice (I used unsweetened almond milk)
1 cup egg substitute
1/4 cup light butter or margarine
Directions:
Mix all ingredients except for light butter or margarine in a medium bowl.
Preheat oven to 400. Melt butter or margarine in large baking dish.
Pour mixture in baking dish over the melted butter and bake at 400 for 25 minutes.
(The original recipe for these puffs up all crazy-like and although these didn’t “puff” as well, they tasted spectacular. They were also very easy to freeze and heat up later in the week for a quick on the go breakfast.)
Oh yes. Topped with a little sugar free maple syrup or agave is the way to go.
Right guys?
(Judah is actually eating a gluten free version with a different pancake mix. As much as I love “Coach”, I couldn’t subject Judah to the digestive issues it would lead to.)
This next one is perfect for spring. It makes me smile when I see it (and eat it of course). It’s a take on my amazing straw-nana cereal cake.
Coach’s STUFT Straw-nana Cereal Cake
serves 1
2 tablespoons of Coach’s Oats Multi-Grain Pancake Mix
1 tablespoon chia seed (can omit and sub in an additional 1-2 tablespoons of mix)
1 banana, sliced
3 medium strawberries, sliced
cinnamon to taste
sweetener packet (if needed)
1/2 cup cereal of choice, crushed
1/4 cup low fat or nondairy milk, divided (I used unsweetened almond milk)
Directions:
Combine pancake mix, chia (if using) and two tablespoons of milk. Let sit for a bit to thicken up. Gently mix in cinnamon, sweetener, banana and strawberry slices. Make sure all fruit is covered with pancake mix.
Place the mixture in a ramekin sprayed with nonstick cooking spray.
Combine the crushed cereal and the other 2 tablespoons of the almond milk. Put on top of fruit mixture in ramekin.
Cover with foil and bake at 400 for 25 minutes. Uncover and broil for about 3 minutes.
Here’s a look at the magic.
Twenty-five minutes later (plus three extra minutes to broil the top) and you have this warm, gooey, fruity goodness.
I know, right?
Yum.
I used this Kashi Go-Lean cereal for my topping.
Okay, enough.
Yes.
For now anyway.
I have a cupcake recipe too, but I’m saving that one.

Love Coach’s oats. Can’t buy them here unfortunately. I’m kind of needing the Banana bake and straw-nana cake right now. I am not really a big waffle or pancake fan – but when I was a kid I did love waffles. There was this place (Mrs T’s Pancakes) that had HUGE waffles. My dad would take us as a treat some weekends.

I would love to try Coaches Oats. Our Costco doesn’t carry them. But I like to take Trader Joe’s baking mix and throw it into the magic bullet with some frozen blueberries, spinach and flax seed which makes purple pancakes. My kids think they are great. This weekend I have my daughter’s 5th birthday. It is going to be a Wizard of Oz theme so it should be fun. Thanks for posting all of those delicious recipes!

I love waffles with cottage cheese on top (I’m lazy and go for Eggo Nutri-grain), or if I make pancakes, I stir in some ricotta and sometimes add lemon juice.

I totally starred this post, I need to come back to those recipes. I love protein pancakes that use gluten free flour with BLUEBERRIES, I feel like blueberries add this amazing taste no matter what.
My favorite kind of pancakes are LOADED up with protein powder (Sun Warrior) and lots of Almond Butter on top! Sometimes a banana on the side if I’ve just finished a long run 🙂
Weekend plans include above mentioned long run on Saturday, and a long for me bike ride (40+) on Sunday. Weather looks great, so should be a good one!

I make a pretty yummy pumpkin protein pancake but I’ve never been a huge syrup fan so I usually just sprinkle them with stevia and cinnamon!

I haven’t tried Coach’s Oats and would LOVE to try it. In fact, I’m not sure if they even have it here in the Golden Isles of Ga. But, I will look for it next time. We usually make pancakes as a “treat” and sometimes it happens once a weekend. My hubby makes some awesome ones from scratch! Can’t beat that! (they are in know way healthy, although homemade)
As for the weekend, I’m going to try out paddle boarding this weekend. Since I’ve heard it is an excellent core exercise, I can probably skip the cardio circuit/ abs session for tomorrow. Yea!

My favorite pancake right now is using oat flour, lactaid cottage cheese for protein, and other spices, I always add some kind of fruit to sweeten them up they are delicious!! I have been hiking all weekend despite this snow issue (I’m in NH)…it’s almost May, there’s no reason for snow in my book! :p
I have different versions of my favorite pancakes and waffles. I love banana pancakes and pecan waffles. I’m pretty simple when it comes to toppings-a little maple syrup or a drizzle of peanut butter (PB2).
I am a pancake and waffle fanatic! I actually just bought a new waffle maker and it should be here on Monday. So I could definitely put the Coaches mix to good use! I have been loving mashed banana and coconut flour as my pancake add ins. They both add so much flavor!
