Good morning. Not a whole lot to report over here. I’m trying (key word is trying) to make myself rest after the marathon Sunday. I’ve been eating up a storm and somehow even managed to get in a nap yesterday afternoon.
Today is National Running Day. I really should write a great running post. Shoulda woulda coulda.
I’m going to write about food instead.
Ha ha.
I do have to say that my legs are feeling pretty darn good. I’m going to credit my compression socks and Biofreeze. I just may have to fit in a few treadmill miles to celebrate.
Here are some mentionable eats lately so I can try to crash the What I Ate Wednesday party.

Since I’ve got more than enough pouches of tuna I tried to get creative for a protein packed snack salad the other day.
I like experimenting with different salad toppings/condiments since it’s hard to find nondairy dressings that aren’t high in fat and calories.
Just a pack of tuna and these three things make a pretty darn noteworthy salad.
Scotty B’s Sweet habanero hot sauce, Mustard Girl mustard, Vlasic no sugar added sweet relish
Crushed red pepper and Trader Joe’s Everyday Seasoning make anything a little better also.
This salad didn’t photograph well, but it tasted great.
It held me over just long enough for my big afternoon snack.
I had that peanutty protein pumpkin dip again yesterday.
Lunch, snack, as a frosting, whatever. I’m loving it.
I made it a single serving and upped the protein powder a bit this time.
Single Serving Peanutty Pumpkin Protein Dip
1/2 cup pumpkin (122 grams)
2-3 teaspoons chia
2 tablespoons PB2
1 scoop vanilla protein powder (20 grams)
sweetener of choice (I used 2 tablespoons granulated Splenda)
1 teaspoon brown sugar or sugar free maple syrup
1/2 teaspoon vanilla
cinnamon
Mix all ingredients together in a food processor or if you’re lazy like me, just mix in a bowl and chill for a bit.
Top with nut butter of choice.
I topped it with the same nut butters and some Flatout cinnamon crisps, but changed up my fruit choice on the side to apples.
Here’s some noteworthy condiments from dinner last night too.
This Ghostly Garlic sauce on a huge combination of roasted cauliflower, roasted zuchinni and roasted broccoli slaw.
And then this Artisana Walnut Butter (because I don’t have enough other open jars of nut butter around)
went inside my pizoatie (like I do in the peanut butter surprise pizoatie).
I subbed in some coconut flour for the oats and it was a bit crumbly, but the taste was magnificent.
Of course I topped it with this ice cream frozen frosting and those darn expired sprinkles, but didn’t take a picture. I had to get back to my Bachelorette watching.
Ha ha.
The boys are up and I was just told by Joaquin to put the computer away.
That is exactly what I’m going to do.
Mommy duty calls.
Returning emails can wait.
I’m tempted to take the boys in our pajamas to go get donuts. I’ve been craving one since the race Sunday. That’s a good way to start celebrating National Running Day, isn’t it?
Ha ha.

I bought that crushed red pepper Sunday and have put it on EVERYTHING since (and thinking of you when I do)! The funny thing about baking single serve treats for me is that even though they are a bit crumbly, I don’t mind because I can top them with gooey stuff to help them stick together and take them over the top in deliciousness!

I love that youv done single servings of a lot of things, they’re my favourite.
That pizoatie looks magnificent- that’s a recipe of yours iv yet to make actually, MUST get on that . Ooh, something you should try with the walnut butter that’s fab & I adore is banana bread hummus (kinda like your AWESOME cookie dough I guess). Blend bananas,chickpeas,walnut butter, milk of choice, cinnamon/any spices you like, a little of whichever milk you like + sweetener of choice( dates are pretty good in this!)- its luvly:).
Hope you treated yourself to that donut with your adorable twinnies!

Ha – I ate pretty much the same protein mix for snack last night except I added a TON of cinnamon and raw oats. No pumpkin because I am out of EVERYTHING.
Your salad looks delish… but I’m a little disappointed it wasn’t a broccoli slaw salad. 😉

wow, so many yummy eats! how did you like that walnut butter? it seems like i’ve heard a lot of people thinking it’s kind of bland. i’m curious your thoughts since i believe we have pretty similar taste buds. 😉
I really like it Ashley. I don’t think it’s bland at all. It’s definitely got that healthy, raw taste, but it’s delicious. 🙂

I love walnut butter, one of my favourites, its not very creamy but tastes good in oat cakes like that! Wahoo for pumpkin, I eat some form of pumpkin protein pudding every day! And I just went to costco and bought those red pepper flakes and have been using them on everything. Spice and me have been great friends lately.
Oh man, I’m out of pumpkin and it is NOT a good thing. Ha ha. Yeah, spice and I are always great friends too. 🙂
