Living It Up

 

Yep. That’s exactly what we kept doing all weekend since my last post about summer priorities.

In fact we “lived it up” so much so that I started this post yesterday, but the boys and I are all under the weather and we were in some serious survival mode to make it through the day. The bloggy blog got put on the back burner and after teaching 6 classes throughout the day, the only things I could do last night were these.

Eat one heck of a ginormous salad with a cheese less sandwich.

Followed it up with a ginormous bowl of low calorie ice cream that was on top of a Vitatop and both versions of the frozen frosting.

Oh and somehow I found the energy to watch the first part of The Bachelorette.

Funny how that happens. Ha ha ha.

 

Okay, back to the weekend.

 

We got all crazy switching up breakfast a bit Saturday.

I added a little chia sprinkles and Scotty B’s Berries and Heat to my standard breakfast STUFTwich.

I also came up with what’s going to be my go to sugar free syrup flavor combination for my summer mocha.

Here it is.

The Perfect Summer Mocha

(Sugar Free Almond Coconut Mocha)

brewed espresso (I used my stovetop espresso maker and cheap Costco espresso beans)

1 cup unsweetened vanilla almond milk

1/2 cup light vanilla soymilk

2 tablespoons dark chocolate cocoa powder

1 tablespoon sugar free coconut syrup

1 tablespoon sugar free almond syrup

Yep. the perfect combination.

It’s even better iced.

(I just put everything together and stuck it in the freezer for about an hour.)

 

I made the mistake of not measuring anything when I put together some green Coach’s STUFT Hooligan Pancakes for the boys. But, the result was this cute little coffee cake like thing they’ve been eating over the past couple of days.

We also lived it up at the San Diego Kidsfest on Saturday.

We even saw a very special monkey.

They have one heck of a bus and were nice enough to let these cool dudes drive it.

We even got to see our Chobani friend Emily two days in a row.

We also lived it up at home all weekend by making a million messes all over the house.

We kept living it up on Sunday with a trip to the gym for 9 slow miles on the treadmill. It was my first longer run since the San Diego Rock ‘n’ Roll marathon last weekend and it felt pretty good.

Then we braved Costco on a Sunday. Will NOT be doing that again. I couldn’t even take any pictures.

 

Sunday night we had some of our best friends over for dinner. (It was the first time we’ve had company in years.)

I had high ambitions to make some Peanut Butter Doughtzel Balls for everyone, but instead I picked up some Costco red velvet cupcakes.

I did whip together a modified version of this potato side dish though.

Oh friends, I better get a move on.

    I’ve tried making Katie’s ice cream a couple times, but it always turns out really icy. I don’t have a vitamix, which I know is a big part of the problem (i’ve tried a regular blender and a magic bullet), but does yours come out icy at all? Or is it more similar to actual ice cream or froyo?

      Mine comes out icy. The vitamix definitely helps though. Some people say adding a half of a banana helps with a better creamy texture. I’ve done that a couple times. :)

    Wait! There is public participation to flat kitty Friday?! I need to get caught up on this. :)

    I went to Costco too on Sunday…when it first opened. It wasn’t quite as bad as it will be later in the day.

    Sigh. Kitties on the counter. It is my bane. I have to have an entire game plan when I am cooking for others than me because of this “problem.” No one needs my kitty germs but me. Yours did need some coffee however.

    Seriously…I can not contain myself when you have a picture Flat Kitty and the regular cat. I think his name should be Regular Kitty, lol. Kidfest looks like crazy fun. They just have that for no reason? That’s awesome. I went to Costco on Sunday too but just to refill an ink cartridge. Talk about living it up!!! ;)

      Man, yes, you are living it up big time. Cats- we have Kitty, Nala (the regular one) and a bazillion Flat Kitty cutouts all over the darn place. Pretty funny. PS- I’m still looking for expired sprinkles for you. :)

    Cute pics of your kiddies! I use those sugar free syrups as well (typically vanilla). However, I’ve been trying to switch to Stevia more consistently to avoid Splenda. I can do it for smoothies and baking, but not for coffee! Have you tried a substitute ever?

    Can you believe I don’t have a Flat Kitty yet? My kiddos and dog would love kitty to pieces (Literally. They tear everything apart).

    Looks like you had a great weekend! I really should have a dinner party soon, we’re hosting our in-laws surprise anniversary party next month, so I guess that counts, I’m not looking forward to doing all the cleaning and cooking :) well actually I kinda am, I’ve already written a list of what EVERYONE else will be doing so no one gets stuck doing it all (like usually happens!) My grocery store of choice here is awful on sundays, everytime I go I regret it and just want to run through the store screaming!! Seriously, do people not have anywhere else to be? I prefer the store to myself, in the peace and quiet. ha.

    What a fun weekend!! I want to eat all your food up in this post! Glad you are getting some more rest! Especially because you’ve been super busy!!     All of this chobani love is driving me nuts! I’ve never had any and I feel like I am the only person on the planet that hasn’t experienced the goodness. Heck, you have TWO chobani champions in the house and they have cool hats.

    And yes, Beaker is the coolest Muppet.

    I love all of your homemade mocha concoctions, but was wondering what the processmeasurement is for the espresso? Could you use an quivalent amount of regular coffee?

      I’m sure you could. Or you could use really strong coffee if you add milk? :) I sometimes use instant espresso with 1/4 cup hot water, or brew espresso with 1/2 cup water. Does this help at all? :)
