Random Eats, Zucchini Noodles and Clearing Things Up


Okay, before we get to a little fun giveaway I think I better clear up a few random things.

I have about 20 or so minutes to get this post done while this is going on in the room next to me. That’s what I get. As much as I can get done on the little window of time I have in the morning. My time is also spent guzzling down the perfect summer mocha. Ha ha.


Yes, the fact that they aren’t wearing matching pajamas is bother me. I have problems (and I’m a little behind on laundry).


Soy milk for Judah. Chocolate milk made with 1/2 of an instant breakfast and 2% milk for Joaquin.


Yesterday’s workout:

Ran 3 slow miles on the treadmill at the gym.

Taught a 45 minute BOSU class.

I even took an instagram picture of myself to try to be cool.


So dumb. I also made the mistake of not wearing my new Handful sports bra so  I pretty much looked like a 5th grader.

Later on I ran 3 miles on the treadmill at home while STUFT Daddy and the boys planted some flowers outside. I had to finish this movie that I started watching about 3 weeks ago.



Also, I feel like I better disclose the fact that I eat like a horse. With the amount of exercise that I do I really can put the food away. Not all of it makes it on the blog. I only show you the stuff I get excited about and want to take pictures of.

With that being said, here’s a couple highlights form yesterday’s eats so I can crash the What I Ate Wednesday party yet again.

I was so hungry yesterday morning I had to bypass my standard breakfast STUFTwich and go for some French toast (made with my favorite bread) topped with SunButter, PB Crave Razzle Dazzle, sugar free maple syrup and blueberries.


Lunch was a salad while I attempted to break the boys away from their “work” to get them to eat their grilled cheese sandwiches.


I don’t even remember what made it in the salad- chicken breast,broccoli, a serrano chili, Scotty B’s bacon jalapeño sauce, some BBQ sauce, broccoli, low fat Ranch, crushed red pepper, Trader Joe’s Everyday Seasoning,  etc.


I caved in the afternoon and instead of having my favorite tea I went for a Coke Zero with my peanutty pumpkin protein dip (not pictures, but served with Flatout cinnamon crisps).


I know, cool glass straw, huh? 

I know you’ve been missing my daily pictures of roasted broccoli slaw and I have to tell you a little something.

We do not have any broccoli slaw in the house. None. We haven’t for almost three days now and I think it might be a new record.

What we do have though is homegrown zucchini and squash. Lots of it. Thanks to my main man STUFT Daddy.


Since we’re all about saving money and budgeting these days I’ve been using up our free squash in place of broccoli slaw. That saves $1.29 or so a day if you’re keeping track.

Last night instead of just doing the standard roasted zucchini, I wanted to pretend to make some noodles.

Dumb or brilliant. I’m still not sure. But….


it was delicious!!!


Roasted Zucchini Noodles

as many zucchinis as you want

seasoning: garlic salt, garlic powder, Italian seasoning, dried oregano, nutritional yeast (or parmesan)

Spray the pan with nonstick spray. Spread out the zucchini “noodles”. Spray with nonstick spray and sprinkled on seasonings of choice.

Roast in oven for about 20 minutes at 400 or 375 convection.


Um yeah, This is so going to be my new thing.

Well, this is actually (topped with roasted mushrooms, tofu and fresh basil).


Let’s not forget that cheese less sandwich either.


I’m going to save so much money.

Ha ha.

Dessert was low calorie ice cream yet again with frozen frosting (the peanut butter kind) and Vitatops with dark chocolate frosting.


Well shoot. The post was supposed to be a little giveaway for you, but I got distracted and now my time is up. Beavis.

Oh, and since this post just turned into randomness, I better clear up a little Kitty confusion.

Then we have Flat Kitty.


Because I’m just that person who wanted to make a cut out of her cool cat to cart around and take pictures with.


We also have Nala. (She was in the picture from yesterday, but she’s usually a little camera shy.)

We may be heading out to Bath and Body Works today because I got an email about the big semi-annual sale and it’s time to stock up on some summer smelling wallflowers.

I might be able to buy a couple with all the money I’m going to be saving from not buying broccoli slaw in bulk the next month or so.

    I am in awe at how much crushed red pepper you put on all of your food!!! I can manage a few sprinkles but I would be dying if I ate that!! I’m a huge fan of zucchini and squash – that sounds yummy!! And I’m a bigger fan of doing things to save $ =) So yay!!!

    You should try living where I live, broccoli slaw doesn’t even exist here! And I have a feeling I’d like it.. And YAY for 5th grade size chests, horsey appetites and succumbing to coke zero- we have lots in common:).

    Welp, Ill be trying those zucchini noodles ASAP, they look incredible, as does ALL your food- you do The Best WIAW’s<3!

    I love squash and zucchini – roasted, grilled, sauteed….doesn’t matter. YUM.

    I would be having broccoli slaw withdrawal! =)
    However, I am roasting EVERYTHING these days.
    Current addiction: Roasted Matchstick Carrots!
    They taste like Durkee Fried Onions (ok, maybe not but I LOVE them!)
    Spray the pan, dump the matchstick carrots (I usually go with 2 bags), spray lightly with spray and sprinkle with onion powder and a touch of garlic powder. I roast them low and slow so they dry out and get a bit crisp without being burned.

      I am having a bit of a withdrawal with the whole broccoli slaw thing, but I’ll just keep stuffing my face with zucchini. ha ha. Okay, wait, roasting matchstick carrots?? Where do I get the matchstick carrots? I soooo want to try that!

    Trader Joe’s is probably wondering why they have a sudden over abundant supply of broccoli slaw! Which, by the way, I want to thank you for introducing me to. Twice a week when I work a later shift at work, my daughter and husband eat dinner without me and when I come home I make my own dinner. For the past month now I have been eating the Broccoli Slaw BBQ Bake. It is soooo good! I crave it and look forward to Mondays and Tuesdays because I know that I’ll be eating it for dinner!

      That’s how our schedule is a lot here, so my concoctions are for me after the family eats. Um, I was totally thinking the same thing about Trader Joe’s. I bet they’re also wondering where the crazy hoarder lady with twins has been the past week or so. Ha. 🙂 So glad you like the broccoli slaw BBQ bake!

    I think yesterday was the first day I saw your kitty with hair. It actually seemed weird that Nala has hair – i think of your house a hairless kitty house. It will take me some getting used to. 🙂

    Thank you for linking to the story of Kitty! I had not read it yet. I swear cats have a radar for people that do not like cats.

    For what its worth…you are pretty much one of the only “health blogger” (whatever you wish to be called) out there that I can actually relate to portion, quantity, etc. Although Coke zero isn’t much of a cave. 🙂

      Oh no, I know Coke Zero isn’t a cave. You should have seen the huge donut I ate last week that I keep forgetting to write about. Ha ha. I avoid Coke Zero more because I don’t want it to ruin my teeth. Ha ha! So glad you’re having fun with Flat Kitty Samantha. And…. so glad you can relate to blgo stuff. 🙂 That makes me smile.

    #2. I am so glad you say you eat like a horse, because of how much you move! I feel like people freak out (because they always say something…even strangers) about how much I eat. If you burn it, you have to refuel!!!

      Oh Sarena- I know. I have to tell people that it all balances out. What you burn, you need to put back in with healthy stuff. I have to tell people all the time too because they think I eat alot. I have to and I LOVE to. Ha. I feel like we eat alike all the time- you and me. 🙂

    That zucchini looks so good. I have an idea for your next new obession: a spiralizer! It turns zucchini and squash into actual spaghetti noodles and they are actually pretty affordable. This post reminded me that i haven’t used mine in forever so now I’m feeling the need to go experiment with it. mmmm!

    Roasted zucchini is my main stay during the summer when we have it coming out of our ears from the garden. Love it!

    I always look like a 5th grader, or perhaps just a boy. Actually, the past two months I’ve been benching heavy again and I’m getting the illusion of cleavage. It’s very exciting to the no one that ever sees it, lol.

    The broccoli salad looks great, and so does the baked zucchini noodles! Kitty is awesome, I love taking pics of our cats, too, and sometimes I get them with my food pics. 🙂 Your instagram photo is awesome, it’s motivating me to get back in a regular exercise routine! Happy WIAW! 😀

    hi there, my fiend introduced me recently to your blog and I love the cookie dough recipes and zucchini / broccoli slaw roasts- its so simple ! I wrap the slaw when it’s a bit undercooked in a steamed collard wrap with tempeh and sauce of choice- great Asian dish or it can go in a completely different direction. Thanks for the inspiration! I have the ice cream you talk about almost every other night- it is my fave go to low cal dessert!
