Snapshots and Spinach Salads

 

Okay, so I’m in a rush right now to get a new post up since my last post just may be the worst post I’ve ever written. I’m tempted to delete it, but instead I’m keeping it as a reminder.

Note to self: If you don’t have anything good (or the time) to write, don’t write anything at all.

I’m blaming instagram.

I’ve got to make these afternoon “office hours” count.

Workouts:

Yesterday I pushed these heavy tots 5 hilly miles in the summer heat.

Good times.

Today I taught boot camp in the morning (and my ladies rocked it). Then I got on the treadmill for a quick 5 miles. Check out my set up.

Featured flick of the day was the first part of Spanglish. Too bad I can barely see that little TV.

I really want a cool little stand for my laptop in front of the treadmill like the cool people have. Can I have someone make one of those? Hmmm…

 

Snapshots:

After I wrote yesterday’s HUGE post, we had a little family morning.

We went to the park.

Then out to breakfast at a little local spot Champions.

I got an egg white veggie omelet.

I asked for some extra salsa and a jalapeño on the side and doctored it up a little like this.

Ha ha.

 

We also took a family trip to Target afterwards, but there were no pictures. Target is not STUFT Daddy’s favorite place, so I didn’t dare bring out my camera.

Later in the day we had a very special home delivery from Honest Tea.

Pretty exciting stuff.

Last night was date night. I made these raviolis for the boys. I stayed far away from my phone and computer and really close to STUFT Daddy and my favorite wine. Ha ha.

 

Salads:

Okay so let’s talk spinach salads.

I showed this salad the other day.

I had the brilliant idea to add berries on spinach the other day. I thought it was an original idea, but I guess a lot of other people already do it. Ha. It was a new discovery for me that berries went so well on spinach.

I’m super picky about salad dressings and since I wrote this post and you all gave me ideas of how to use apple cider vinegar for salad dressings I decided to experiment.

Here’s what I put together:

 

Berry Hot Vinegar Dressing

2 teaspoons of apple cider vinegar

2 teaspoons Scotty B’s Berries and Heat hot sauce

1 sweetener packet

 

I drizzled it on the spinach

and added a boatload of berries.

I think it would be really good with goat cheese and some nuts. I wanted to add sunflower seeds, but um…

yeah. They were a little outdated.

 

Today I made another new salad.

I can’t for the life of me remember who told me to do this, but for the dressing I combined mustard and apple cider vinegar. If it was you, I’m so sorry and I owe you a Flat Kitty. Tell me so I can give you credit for this.

ACVM Dressing

2 teaspoons apple cider vinegar

1 teaspoon stone ground mustard

Good stuff.

I had to top it with this brewer’s yeast (because I need some serious help with my hair and all) and some crushed red pepper.

Then added some Costco rotisserie chicken.

This salad just might be my new thing.

It was good friends.

My second course for lunch was my new pumpkin protein cookie dough I’ve been consuming everyday

and posting pictures like this one on Facebook.

I topped it with a billion berries. No pictures of it today. Oops.

I promise the new recipe is coming soon too.

I do have this classy picture of yours truly with leftover berries in my teeth though.

Why yes, it was a Coke Zero kind of a day.

Okay “office hours” are over. I have to get in the shower. I’m still a sweaty mess from my workouts this morning (as if you can’t tell from the picture above). I even sat through a 2 hour training all sweaty and gross like that. There were some pretty lucky people sitting next to me.

    You had expired sunflower seeds? Might as well have just put the sprinkles on there! ;) I’ll be honest Kristin, I do not want to eat that berry salad. I’m down for the second one though. I will bring my own nooch. Have nooch, will travel. My favorite dressing is the greek feta one from TJs.

    Hey! The post wasn’t bad. :)

    I love the big wheel shot…for some reason I just love kids on big wheels…such a memory.

    Anyway, I am a big fan of hummus as my dressing. Usually a add a small amount of another dressing to help the hummus spread out. But hummus is the dominate flavor.

    I laughed about family trip to target because not my favorite place either, but often necessary evil. Hooray for date night! Have a great Sunday.

      I totally want to try the hummus dressing thing. I haven’t done that yet. Laura said to mix it with ACV. I need toget some hummus now. Ha ha.

        That is a fabulous idea with the ACV! I didn’t think of that one. One day I realized that salad dressing was kind of a waste, on the other hand I eat large quantities of hummus already. :)

        Not sure about CA, but in WA the Costco carries the large tubs of Sabra hummus or you can get into making your own. It is so simple and yet I totally lazy about it.

    Hi,
    My fav salad lately has been. Baby spinach topped with strawberries and some goat cheese. I then bought some walnuts and baked them in a little sugar free maple syrup (so kinda like a candied walnut). For dressing I used balsamic vinegar, apple cidar vinegar (maybe 1teaspoon each) a little drizzle of olive oil .5 teaspoon maybe). Splenda and some garlic paste. It’s yummy. I have put chicken and shrimp on it and both were good. Even my husband will eat it. I love reading your blog, bye!

    See …..we are so much alike…..blackberries and pumpernickel bread leave seeds and the like all over my teeth too and I also had a Coke Zero today! (Oh, and we both work at a Y….there should be an award for all of that…ha!)

    We just got back from our TWINS game…more home runs then we could believe…WooHoo they won!!

    My fav dressing is from http://www.lIndawagner.net/blog it is called lemon vinaigrette. I add fresh cilantro and avocado if you want a mexi style salad.

    Thanks to you, I made it my mission a couple of days ago to find Nutritional Yeast. It’s normally really difficult to find these types of things in France (grocery shopping here = completely different than home). I was so thrilled to find it (after researching what it’s called in French – Levure maltée).

    This has given me Fab salad dressing inspiration!( Help get me off the fat free/artificial/craptastic salad cream I adore so much,haha).
    And I love berries on salads- Go antioxidants!

    I actually love thinned out hummus , smushed up avocado, balsamic, or homemade greek yogurt dressings for my salads. I top them with candied pecans/dried fruit if I’m feeling indulgent!

    You should consider an iPad, that’s what I use, you can take them everywhere (even on the toilet like me right now haha). One day my husband took my iPad with him out of town and I tried putting my laptop in the treadmill, haha that did not work!

    Haha that would be me who gave you the brilliant ACV/mustard idea. I forgive you. ;)

    Spinach and berries definitely do make a great combo and it’s something I eat a lot during the summer because it’s so fresh and light. Delish!

    Hahaa, might as well throw some expired sunflower seeds on the salad. Never hurts, does it? Spinach and berries definitely makes a great combo, in smoothie, salads, everything. Can’t eat your dressing because of my silly mustard allergy. Seriously, who gets an allergy to mustard?! I got distracted for a minute with the fact that the boys are not wearing matching shirts! I think thats the first time I’ve seen this lately ;) Have a happy Sunday my friend!

    hey stuftmamma, just wondering what your views are on the whole stevia being a safe sweetener? I keep reading mixed reviews and would really like to hear your input!

      Oh man, really I don’t have a strong opinion about it. I haven’t researched it enough. I feel like it’s safe, but there always people out there who are going to tell you that something isn’t safe, etc. I use Splenda and Stevia frequently, but try to not consume them in large quantities. Sorry I’m not much help. If you find any useful information feel free to pass it along. :)

    Favorite salad dressing: nutritional yeast (noosh- for the cool foodies), apple cider vinegar, hot sauce, & grainy mustard all whisked together… its heavenly. I’ve used it for about 5 months now & haven’t gotten sick of it!!

    I like to make dressing out of mustard+baslamic vinegar (try tj’s sweet and hot mustard; sooo good!) or hummus, salsa of course, and sometimes an asian dressing (peanut flour, seasame oil, rice vinegar, chili garlic sauce and bragg’s liquid aminos) oh and seasame oil is actually just about good mixed with anything(: sorry for the ramblings!
