Weekend Cliff Notes- Confessions and Creations

Holy smokes.

I always have so much I want to share after the weekend. It’s so much easier for me to talk about the daily happenings over instead of planning out a post about a specific topic (like I really should do). I try to hold back and not put it all out there though. It might just bore you to tears.

So…. I’ll try to make this brief, like Cliff Note style brief because I don’t want you to fall asleep reading this or anything. (Side note- I was the Cliff Note queen in high school.) Not to mention my “office hours” have been cut short lately by some silly toddlers.



While Grandma D and Papap were here installing a new ceiling fan with some “help” yesterday


I snuck out for a little run.

I ran 7 miles outside in the summer heat and finally got to break in my new Mizuno Nirvana shoes (and show you a nice shot of my armpit).


Later on during naptime I got on the treadmill for a bit and watched the rest of that movie. The only reason I ran as many miles as I did (17 total) was in case I won a free entry to the San Francisco Marathon at the end of the month. I’m not sure if I did, but the fact that it’s only 4 weeks away made me feel like I had to go long just in case I’m in.



Since my last confession post seemed to go over pretty well, I thought I’d try it again.

It was Kristi @ Sweetly Fit who told me about the whole mustard and apple cider vinegar thing as salad dressing. She is the one behind the ACVM dressing in my last post.

We went to a little party Saturday night. I applied my make up in the car during the 5 minute drive to the party. My eye shadow is at least 10 years old. I’m thinking it’s more like 12 or 13. I’m really surprised I don’t get a rash.

Instead of taking pictures with my cute best friend that I rarely see or her mom who the party was for like I should have, the class act that we are just snapped a couple of ourselves on the way out.


Um…… yeah. Let’s hope my shirt wasn’t like that the entire party. So inappropriate. I have a thing lately for going out in public inappropriately dressed. And yes, I wore my spanx to the party. I wear them everywhere I can.


I ate this Snickers marathon protein bar the other day in that car which was not dairy free, but it was mighty tasty.


I also fed the boys these veggie corndogs for lunch that same day, also in the car.



Some mornings I’m super pressed for time and really in need of caffeine (like right now). On mornings like these I reach for instant espresso. Today I’m going for this one and opening up yet another new Torani sugar free syrup to try out in place of the others in my perfect summer mocha.


I get this espresso from Target for about $5. Oh look it was on special the other week.


Someone looks like he’s in a great mood this morning in the background. Ha.


I haven’t made espresso cubes yet this year, but I need to. I do have these in my freezer at all times in case I’m craving my low calorie ice cream at night though.


Lately I’m craving it every single night.


Last week I stopped at the store to purchase my favorite cocoa powder only, but got a little distracted.


I know Good Earth did just send me some tea to sample, but it’s decaffeinated and I’m a sucker for things on sale (see above picture of instant espresso).

My basket ended up looking a little like this.


Yes, the Smucker’s sugar free jam was on sale too. I need a little variety for my breakfast STUFTwich.


I have really ugly feet, but I can do cool tricks with them.


This was a heart I tried to make for my big Mizuno giveaway post, but it didn’t make the cut. I didn’t want to scare people away.


Cute though, huh?


Lastly, I don’t have a picture, but just thought you should know that the boys and I polished off a large Papa John’s pizza all by ourselves last night. STUFT Daddy had a different pizza. I had intended on cooking Chinese food, but we ordered pizza instead. They ate the plain cheese half and I ate the cheese less veggie half with added chicken and jalapeños. I eat my veggie pizza like this (if you’re dying to see a picture of cheep cheese less pizza loaded with peppers and “nooch”).




I create food things in the kitchen like nobody’s business. I’m not sure why. It’s either my short attention span, the fact that my mind is always coming up with new ideas or just another way to procrastinate and not do the laundry (or our family budget).

Who knows.

But…. I have a couple more for you.

I made the biggest pumpkin versions of the green microwave muffin ever yesterday. I made this one for the boys using some pancake mix.


Then made this one for myself using coconut flour and chia.


I know, I’m so selfish. It even ended up looking like this.


Ginormous Green Pumpkin Microwave Muffin

serves one hungry mama

1/2 cup pumpkin

1/2 cup egg substitute

handful of spinach

2-4 tablespoons nondairy milk

2 teaspoons chia (10-15 grams)

3 tablespoons coconut flour (21 grams)

2 sweetener packets (I use Splenda or stevia)

1/2 teaspoon baking powder

splash of vanilla

cinnamon, pumpkin pie spice, nutmeg (optional) to taste


Blend spinach with the egg substitute. (I use the Magic Bullet.) Combine all ingredients and pour into large mug sprayed with nonstick cooking spray.

Microwave for 5 minutes (or so).


Top with nut butter and/or berries of choice.


I topped this bad boy with a glaze made with 2 tablespoons PB2 and maple syrup, a scoop of SunButter, sprinkles, a little smoked sea salt and berries.

It was amazing friends.


I also made a new dressing yesterday for my salad at lunch.

I took Kristi’s ACVM dressing from yesterday and subbed in a teaspoon of sugar free relish for some of the apple cider vinegar.

(1 teaspoon apple cider vinegar, 1 teaspoon ground mustard, 1 teaspoon relish)

I put it on some romaine, sprinkled it with some Trader Joe’s everyday seasoning, added a pack of tuna (since I hoarded a bunch from the marathon expo) and topped it with these two little gems from my plants outside.


Yep, a Serrano and a jalapeño.

Oh, you want to see my plants really quick?


I can’t wait for this baby to get some chilies on it.


Can you guess what kind of chilies? He he.


Oh, the salad. Here it is.



I also created what might be the best post race electrolyte replacement drink ever.

I’m not going to hide the fact that I have a thing for Coke Zero.


I love it, especially in the summer, but try to limit my consumption for when I really “need” one.

Yesterday after my two runs I created this instead.


Mama’s Vanilla Kona cola

1 tab Kona Cola nuun 

1 tablespoon sugar free vanilla syrup


It was the perfect vanilla coke tasting electrolyte drink ever. I’m pretty sure I chugged it down in 30 seconds or so. And I followed it with some protein cookie dough with peanut butter.

    Hahaha. I’m addicted to Coke Zero too, but I keep it to one a day max. That marathon Snickers bar looks AWESOME, I can’t remember the last time i had a snickers bar.

    So about that low cal ice cream. I love it too even thought I can never get the consistency I want. Maybe that is because I have a crappy blender and have to add so much liquid? Thoughts….anyone?

      I honestly freeze it in a huge block, defrost in microwave for about 15 seconds. Break in half. Throw in food processor and then process until all the big chunks are gone. What is going on in your consistency? I think if you add liquid it will probably turn to water pretty fast.

      I only get the regular flavor. I’ve bought the chocolate one before, but you can just make your own by adding cocoa powder to it. 🙂 So glad you like it! yay! We shoudl start a club or something. ha.

      Oh heck yes I wear SPANX. I have diastisis from having the twins and my belly button sticks straight out. I hide it well. LOL. Someday I’ll show it on the blog.

    I LOVE your weekend posts(and pit pictures)! So much good stuff:).

    Gotta say though, as a die hard diet coke fan, I just don’t get coke zero! I got some to try and couldn’t drink it – it tastes weird to me. Go you for having the will power to only have it when you need it- I try that too. It just happens I seem to need it in large quantities ,multiple times a day… Haha

    Just a quick question if you don’t mind? I , like yourself, participate in a lot of exercise(running as well). Do you have any tips for dealing with sore legs? Mine get really bad, to the point of making exercise hard/impossible sometimes:(. I have compression socks but they don’t seem to help me. Advice from a fitness queen like you would be much appreciated!

      So sorry your legs get so sore. There are certain anti-imflamatory foods too they say to eat. I think the two I read about were bananas and walnuts, but I’m not certain. I wish I was more help. Sorry.

    Love your post and thought you looked so cute in your dress! Your cookies weren’t falling out of the cookie jar, so it was fine! Good for you for having Date Night- we all need to make time w/our hubbies, I know I do w/3 kids.
    Will try the salad dressing- and I have tried your Stuft Breakfast Sandwich. Even tho I’m Japanese, since growing up in the “hood” (LA) I actually prefer salsa and avocado w/my Stuft Sandwich!

    I’m so glad pictures of your feet like that made it on to the blog again. 🙂 Oh and your armpit, lol. This whole post cracked me up. YOU ARE MY FAVORITE. I haven’t made a muffin in a while, I’ve been making new creations like crazy though. Basically I’ve been having way too much peanut flour everyday.

    I am a total sucker for sales too. Anyway, I agree with you, several of the brilliant run stories I read in the comments were amazing!

    I got some ACV today and my giant tub of hummus. I can’t wait to try combining them. I am hoping for my new favorite thing.

        So I really liked the flavor combo. Last night I combined the hummus and ACV together first 1:1 ratio (2 tablespoons each over a large salad) but I think tonight I will keep the separate. Part of the reason I use hummus is because I liked to have the thick aspects of it, mixed with the ACV first really thinned it. The flavor together however I really enjoyed! Thanks for the idea on this one. I have never tried ACV and I hear it is good for the stomach upsets and I really need help in that department. 🙂

    So, you started off your post with a 7 mile run, then a 10 mile run just to “finish a movie.” You are awesome! It would take me LOTS of weeks of training, and lots of premeditation to bust out 17 miles like that- You are now my new inspiration 🙂
