Shorts and Layers- Protein Crispy Treat Recipe


No, I’m not referring to the short shorts I talked about yesterday in the less than mediocre video I tried to shoot. (Which I’m still on the fence about showing by the way. It’s that bad friends.)

I’m not referring to the fact that I’m short either. I’m 5’2 1/2 though in case you’re wondering. I’ve been the same height since 7th grade. Somehow back then it seemed like I was tall. Go figure.

What I am referring to is my current goal to make my posts shorter. You all really don’t need me blabbing all about my daily happenings. That’s what twitter, instagram and Facebook are for, right? I just need to keep these short for your reading pleasure (and the sanity of my family). I’m purposely working on the laptop right now without it being plugged in so that when the battery is done, so am I.

We’ll see how that works out.

(*Side note- I have since plugged in the computer. I guess that didn’t work out too well.)


Some random after photos from my day.

After teaching my spin class, but before picking up my potty training tots from play care across the hall.


After finally finishing a long day of teaching classes and fitting in a short 3 mile treadmill run.


I’m fairly certain it said no photography in the locker room. I can’t get in trouble for this can I?


I had one heck of a ginormous wrap for lunch.


I also had some popcorn again. Instead of topping it like I did yesterday, I went for a little butter spray, apple cider vinegar, Brewer’s yeast, Slap Ya Mama and cayenne.


It was a good mix. It gave me a little bit of heartburn while teaching my classes, but oh well.

Brewer’s yeast is growing on me by the way. I like sprinkling it on different stuff. I’m still waiting for it to miraculously give me thick, shiny hair though.


Earlier I had my dinner during my “office hours” which was a combination of roasted zucchini noodles and roasted broccoli slaw with marinara and a cheese less sandwich. Shocking isn’t it?


I followed it with the other half of the almond coconut ice cream recipe I posted yesterday (which turned out a lot creamier tonight for some reason).


But….. that’s not all.

There’s a lot of layers under there.

Well, duh. Of course you do.


The bottom is this new creation I whipped up.

It’s not quite a STUFT protein cookie. It’s not quite GNC Goodness Goo.

It’s even better.


According to MyFitnessPal, here are the stats for this yummy treat.



Not too shabby.


I’m sure you could make it into a cookie form too, but I like to eat mine straight out of the bowl these days with my cool tea spoon.

Oh, and I like to layer things on it.    

Things like PB Crave Cookie Nookie and sprinkles.


Things like two ingredient frosting.


That I love finding in the freezer by the way.


It may look like a cow pie, it might be messy and melt in your fingers, but it really doesn’t matter. It’s that great.


Oh, and of course layering with things like that same ice cream from yesterday.


Oh yes, layers can be good. This was so much better than I had expected. (That’s why the pictures are not that great. I took them “just in case”.)


Speaking of layering. The other day I took summer surprise cookie dough dip and layered it with vanilla protein frosting, peanut butter and the same frozen two ingredient chocolate frosting.


It was served with an apple and Flatout cinnamon crisps.

Oh I love layers. I also love layering my Spanx under anything and everything I can.

Ha ha.

See. That was short.


Totally random, but I feel like I have this mindset a lot these days for life. I’m tired every day, but I’ve got big dreams and big goals. I’ve also got two very energetic potty training toddlers that need a lot of attention and a wonderful husband that’s been putting up with a lot of my craziness lately. I’ve got to get it together over here.

Speaking of the hubby….. someone just started another staycation. Family time here we come (until the “racecation” we have this weekend anyway).

    You are so funny. I crack up every time reading your posts! I love the protein crispy treat. Not too hard to throw together, either! I am with you, i’d probably eat it right away with a little spoon..just my style. I don’t even have kids or a husband, but I do have a boyfriend who already says I spend too much time on my computer and iphone checking blogs, writing blogs, tweeting, etc. It’s just a hard balance sometimes. This is what I want to do but I also hate when he feels I’m ignoring him. I guess you love and learn and figure it out as you go, eh?

    It’s all in the layering…that’s what I always tell people. I can get so out of control with the layering! Enjoy time with all of your men Kristin! I know you and they all need this time together! hugs!

    OK, best layering ever. I have been in an ice cream on the bottom everything on top mode but I do like that latest treat. I can’t wait to try it.

    I always have to layer my foods, they aren’t as fun to eat if there aren’t layers of flavours to enjoy!
    I don’t ever mind seeing your dinner photos, because I have the same foodie obsession. It never gets to be too much though. I’m obsessed.

      Everything is listed on there Katelyn, ecept for the protein powder because I don’t know exactly how it measures out. 🙂 I use my scale a lot because I’m lazy about dishes. Ha ha.

    Ugh, I am ever so (IM)patiently awaiting the arrival of my peanut flour…I’ve been out for TOO long and thought a jar of PB2 would tide me over until I was able to order some and receive it in the mail…I thought wrong! That bad boy only lasted EIGHT days in my possession! And now here I am, still without my peanut flour, torturing myself by catching up on your posts and drooling over your PB2 filled treats! This crispy treat is happening the MINUTE the mailman arrives…I might even invite him in for some! Nah, no share-sies on this one! 😉
