Kicking Off the Staycation

 

Good morning!

Holy moly friends, today is going to be a good day. I can feel it already. Judah made it all night in big boy underwear. That’s right. We’ve got one who is diaper free over here! Hurray!

And yes, only one. We’ve got a little bit of challenge with Joaquin. That’s okay though. Patience is key, right?

This day is off to a great start (besides the earlier than normal wake up time). It’s a nice change since yesterday morning that started out a little like this.

I totally felt like crying when this happened. I brew my espresso in my stovetop espresso maker each morning and then mix it with my favorite cocoa powder and put it in the freezer to chill for a bit. It didn’t work out too well yesterday.

Or the day before actually as I left it I way too long and it was ice. Oh that’s right, I posted a picture in yesterday’s post. I also might not be the sharpest tool in the shed because I’ve got that darn cup sitting without a lid in the freezer again as I write this. Ha ha.

If I was smart I’d go back to my routine of making espresso cubes like last summer or just use instant espresso. Oh well. My ice cube trays are being used for more important things like my low calorie ice cream. Ha ha.

Anyhoo…

We’ve officially kicked off our annual summer “staycation” over here. Yesterday was family day. The best picture from our night last night was this one.

It was awesome. And yeah, there’s a future photo dump post in the works. Possibly later today with some more pumpkin protein dough chat. Good times.

 

Last summer we were all about smoothies over here. We made different smoothies every single day. I love it because it’s such a great way to incorporate fruits and vegetables, especially for the kiddos. We haven’t quite jumped on the smoothie train this summer yet, but I did experiment a little over the past few days.

I’ve been using Silk Almond Milk a lot these days. I love their new unsweetened vanilla flavor and usually hoard stock up on it at Target since it’s cheapest there.

Yeah, I love Unsweetened Silk Almond Milk.

I do not love this picture I took late at night in my pajamas. Oh well. How funny would it be though if those were my ginormous egg white jugs I was holding?

Silk has some fun recipes on the Silkology Facebook page. A lot of them would be great for entertaining. They even have a little tab you can click on to get an adult version of the drink (you know, with some spirits).

We started off our “staycation” the other day and experimented with this one.

Here’s what I put together for the recipe.

I wasn’t really entertaining anyone, but I put some mint in the cute little glass to try to be impressive.

The adult version of the recipe has the addition of coffee liqueur. I bet that would be good, but then these guys couldn’t drink it.

Yes, I realize Joaquin does not need a beanie during the summer and yes I am really brave letting them drink out of my glass straw.

Yesterday after my iced mocha spillage mishap, I quickly threw this little concoction together to go with the whole Silkology staycation theme.

This is my mama modified version of the above drink.

Berry STUFT Chocolate Bliss

makes 1 small serving

1/2 cup frozen raspberries

2/3 cup unsweetened Silk almond milk (or soymilk)

1 tablespoon cocoa powder

2 tablespoons sugar free almond syrup

I added a little mint again to try to be cool.

It was smaller than my usual plus size drinks and eats, but it held me over just long enough for my second try at my perfect summer mocha to be ready.

Not only am I inspired to try some new Silkology-inspired drink recipes (there’s some fun ones on there), but now I might have to invite some people over to entertain. Ha.

    Love the family picture!! The boys are so adorable- and hurray for one potty trained kiddo :) BTW I totally dropped my Starbucks cup like that- and it broke beyond repair- I had to stifle the tears.. lol

    During the summer it is all about blended or iced coffee drinks while entertaining. I still love caffe d’vita blended with ice and milk… Yummy!

    I just switched to Silk too. I was drinking Almond Breeze but apparently that caregeen stuff is bad. It’s always something! I’m glad you’re having fun family time with exciting mint garnishes ;) I thought of you today because I made a cauliflower pizza crust and I remembered that post where you ate the whole cauliflower, lol. I can see how, that stuff is GOOD!…you know…in crust form :)

    By the way, I am awaiting my first PB2 order ever thanks to your latest creation. Never thought I would try the stuff. :)

    I haven’t tried the silk almond milk.I will have to give it a try. I totally laughed at what they consider a year supply. I live alone and go through a ton of Almond Breeze. :)

    By the way, I am one of those hikers that can be in shorts and a summer shirt and the winter hat because it is right in the early morning and just not warm enough yet (and my ears stick out so they get cold. :) ) I get your boy!

    I have the same stove-top espresso maker! I make my latte every morning with it. My favorite drink to serve is lemon drops, made with fresh squeezed lemons from my in-law’s trees. They are so good on a nice hot day!

    Can’t say I’ve entertained to much, not a lot of room in the college budget for that. Meeting up in the dining hall counts right? I’ve always wanted to try silk but again <—- poor college student :]
