The Staycation Family Dump

 

That doesn’t sound right does it? Oh well. I’m talking photo dump, but you all know that right?

It’s freaking Friday. What is going on here? Not only do I have a million and one things to do, but I’m running a marathon on Sunday. Yeah, that’s right, in two days. Holy smokes.

 

Yesterday’s workout:

taught a step/interval class at the Y

taught a group strength training class at the Y

short 2 mile treadmill run while watching The Office

It was the only time I had to try to run a little so I figured 2 miles would do to keep my legs ready for Sunday.

I have to find some time today to fit a little run in too. Hmm….

Anyway.

We’re living it up over here during our “staycation” with multiple trips to the potty every hour (again, for the boys, not for me). Fun times though.

Yesterday I pretty much ate myself through the day. I guess my body wants me to carb load a bit for the big race. Ha. I won’t show you everything, but I’ll show you just some of the goods.

I started off the day by getting into my jugs for the first time.

I was a little nervous to open this bad boy with the intimidating chicken cartoon and all. I went for it though and thought I’d show you a picture of the nutritional info just in case you want to see it. Pretty much the standard for any egg whites.

I did not follow the directions that say to “shake well” so my first attempt to prepare these egg whites didn’t go over so well. I’m high class and microwave my egg whites in a bowl sprayed with nonstick cooking spray. That may have something to do with it. The first time it didn’t work, but the second time (after I did a little jug shaking) worked like a charm.

I made up my cinnamon sugar breakfast STUFTwich.

Shocking isn’t it? Ever since I’ve been limiting my dairy I love using egg whites as a protein source. I’m going to try some smoothies with this stuff next.

And well, while I played with my new jugs, the boys played in their new pool.

That Costco kale salad I bought the other day has made me very happy. It was definitely a good purchase.

I’ve used it in a salad the past few days for lunch.

In this salad was romaine, Costco kale salad (which has broccoli, kale, brussel sprouts, cabbage and chicory) and Costco rotisserie chicken. I topped it off with some Slap Ya Mama, Trader Joe’s Everyday Seasoning, crushed red pepper, ACVM dressing and some Brewer’s yeast.

Here’s a closer look at the Costco salad because you’ve really got to get your hands on some.

It also roasts quite nicely. I roasted for dinner last night along with my roasted zucchini noodles.

Then smothered it with marinara, Scotty B’s ghostly garlic hot sauce, chicken and crushed red pepper.

I had my cheese less sandwich on the side too. Shocker.

 

I’ve still been eating this STUFT protein crispy treat everyday.

And taking pictures of it that look like dump apparently.

Yesterday I only used GNC egg white protein powder in the mix and no PB2 and it was still awesome. I put the PB2 on top instead. He he.

Then I put just a few blueberries on it.

Well shoot, I have lots more to say (as usual), a dough recipe to share and a workout video with The Ultimate Sandbag, but I also have some special men in the room next to me that are having fun without me and I don’t want to be left out. You understand, yes?

I’ll leave you with a little dump of our fun family outing the other day. I’m pretty sure the majority of the time was spent in the public bathroom with the boys but, we did manage to do a few other things.

    That looks like a fun day! My boys LOVE churros! They used to serve them at school when they did a Mexican theme. I was thinking about getting those egg whites. Tony and I are going through a crazy amount these days. I need to investigate further…

    Here’s an egg white smoothie i made last week: 1/3 cup egg whites, 1/4 cup oj with pulp or any juice, fruit- i did a banana and peach one day- mmmmm! Also did strawberrie, and a little spinach. This is my new favorite smoothie! I may need a big jug of those egg whites with the way I’m going through them!
