Ideas and That Coconut Cookie Dough Crumble


Good morning. Um yeah, did Monday happen yesterday? What the heck? I was pretty much on auto pilot all day after a 5:15 am wake up call that sounded just like this “I have to go pee pee in the potty”. Ugh. That is getting pretty darn old.


So we were up bright and early and powered through our day. I made a new version of green gobblin’ muffins at 6 am with Coach’s Oats pancake mix.


I attempted to get a little work done since my early morning “office hours” are now non existent. Not the best idea as this happened outside.



I taught 6 classes throughout the day yesterday. Again, not the best idea to do after a race, but hey, every penny counts right now. Ha ha.

You know what was a good idea yesterday though?

This magnificent snack between my classes. Posted in it’s entirety here on Instagram (Or you can click on the picture).


Um, yes, the only thing that makes protein goo that much better is when you put it in an almost empty jar of nut butter.


In the jar- 1/2 cup pumpkin, a scoop of cookies and cream protein powder and two tablespoons PB2.  OH yes, it was also topped with a bunch of Kashi Go Lean cereal, but I never took a picture of that. I was too busy shoveling it in my face.

And not to toot my own horn, but last night in my deliriously tired state I was all about good ideas over here.

I had the same dinner as I did before the race (minus the roasted beans).


Homemade cheese less veggies pizza with Trader Joe’s refrigerated wheat pizza crust and non dairy kale chips.

I ate it on the couch


while my BioFreeze and Pro Compression socks do their thing.


I also felt the need to finish that wine from the other night,


watch The Bachelor Pad from two weeks ago, take a picture of myself in my slicked hair, silly glasses and pajamas


and eat one heck of a ginormous dessert.


Talk about “layers”. Two chocolate Vitatops, some two ingredient chocolate frosting, low calorie peanut butter frosting, PB Crave, almond coconut ice cream and some coconut cookie dough crumble.

Um yeah.

So that crumble has been making it’s way on quite a few things lately. I had been wanting to try just eating the dough from my calm me down low carb cookie (which is pretty darn delicious by the way). Then I saw this post on Chocolate Covered Katie and got the idea to make my own low carb cookie dough crumble.

It’s good on low calorie ice cream, on it’s own or on top of some fudgy STUFT protein cookie dough.


Speaking of, I have a new recipe for that with my new favorite GNC egg white protein powder that is to die for.


Here’s the crumble.


Coconut Cookie Dough Crumble

2 tablespoons coconut flour (14 grams)

1/8 teaspoon baking powder

pinch of salt

6 drops liquid vanilla stevia

1 tablespoon unsweetened applesauce

1 tablespoon non dairy milk of choice


Mix all ingredients together. Cover and chill for at least 30 minutes.


Recipe Notes:

You may need to adjust the amount of non dairy milk to get the crumble consistency that you want. Sometimes I want mine a bit drier and sometimes I like it more moist.

The liquid stevia is optional and I’m sure other sweeteners would work just as well. You can also experiment and add a little cinnamon or a tiny bit of vanilla or almond extract. I’ve even added a little protein powder in the crumble as well.



This is good stuff friends. Good stuff. It may not taste exactly like buttery sugar cookie dough, but it definitely does the trick and I’m now craving it on a daily basis.

    That dessert bowl is not messing around. Thank goodness I can still have coconut flour. I’ve been making savory zucchini pancakes with it. So good.

      Tell me about your savory pancakes!!!! I want to try them! And yeah, thank goodness you can still have that. Um, and yes, I do not mess around with desserts. Andrew told me recently I don’t know how to have a small dessert. Ha ha.

    Yay, been wondering what to do with my coconut flour I bought to try. Love coconut oil and seem to digest it well (huge digestion issues) so this will be good to try. Not big on sweets but I do use stevia, or I could leave it out as you suggest. Thanks for the recipe to try.

        I did try it and it was delicious! I used banana instead of applesauce (no kids here, otherwise I’m sure I’d have some around). Also added ground flax seed because I love it and throw it in everything! Yeah, I’m a sour, not sweets girl. I crave apple cider vinegar and swear I can drink the stuff straight out of the bottle (yuck, I know). Oh, tonight in my mailbox was a purple pair of Pro Compression socks! Now I just need to get the baby blue ones (have the hot pink) and my life will be complete!

    I notice that you love wine. Maybe in the future, you’ll want to run the marathon du

        Each year has its own theme. This year isfamous historical figures. last year was cartoon characters, I believe. The Marathon du Medoc is called the “longest marathon in the world” because of the wine stops. Obviously, you don’t go there to set a PR but if you do win, the prize is French wine volume equivalent to your weight. All finishers (within the 6:30 cut-off) will receive a bottle of French wine among others. They serve wine, cheese, oysters, hams at hydration stops.

    OK, I sprayed a pan w/Pam and cooked the crumble. Cooked it in pieces and let it get brown. Sooooo, good. Tastes like cookie pieces! Thanks for your ideas!

    I didn’t have coconut flour on hand so I tried whole wheat… not so good. Would the whole wheat flour change the taste that much?

      Hmm…. I’m sure it changed the consistency quite a bit. The two aren’t usually interchangeable I don’t think. It’s better to go half and half. Do you have peanut flour or anything like that?
