Let Me Make it Up to You- Random Recipes and a Chia Giveaway

 

My last two posts have been even more pathetic than normal. I’m blaming my current emotional state and the fact that my to do list gets longer by the day and I’m just not seeming to be making any progress. What the heck?

Oh and I’m blaming this. Well, not actually this amazing GNC egg white protein powder, but that it’s all gone.

It’s only been a day, but it’s not looking good over here. I better get some soon or I’m really going to scare STUFT Daddy away.

 

So let’s see. I’ve got some random pictures I forgot to show you from the past couple of days. I know you’re just dying to see so here you go.

 

We had to buy a new water heater over the weekend. We’re so lucky. Just when I make a career decision that means some serious budgeting better start happening over here we get to spend $600 on a new water heater. Funny how life happens like that isn’t it?

We weren’t at a total loss though because not only did we get a new water heater, but the boys got both a tunnel and a “counter to make Mommy dinner”.

The other night we had to make a quick stop at Jack in the Box (“Jack in the Crack” as STUFT Daddy calls it) because a certain someone couldn’t make it home to use the bathroom (no, it wasn’t me). We noticed Jack had some pretty nice guns and had to try to show him up.

Yesterday morning my less than mediocre post was cut short because I got a text to go sub a class. I swear, it used to take me five minutes to get ready and out the door. Those days are so far gone it’s not even funny. Getting toddler twins out the door is no easy task.

We made it to teach our class though. Late as usual, but I tried to make it up to all the moms with a tough stroller jam workout and some extra ab work at the end.

After our class I promised the boys we could play at the playground for a bit.

Someone tried to show off and found himself stuck.

Piece of work I tell ya. And yes, I’m totally that mom that takes a picture before rescuing my toddler. It was for the blog.

I taught 4 classes back to back last night and I won’t bore you with the details, but I will bore you with a little game.

Let’s play the what in the heck I ate yesterday game.

Oh wait, first the boys had a pretty good lunch I was proud of. A Flatout turkey wrap with romaine, cheese and a little low fat ranch dressing.

Joaquin actually requested lettuce in his wrap. He must have been trying to get on my good side for something.

Oh that’s right, he bit his brother soon after lunch. Lovely.

I scarfed down a couple wraps myself with just turkey, romaine, spinach and a little ACVM dressing, Mrs. Dash Spicy Seasoning and brewer’s yeast.

There’s some turkey somewhere in there. Then after I attempted (key word attempted) to get the boys down for their naps, I went for some goo.

Yesterday’s goo dip was a new one because I was out of my favorite vanilla egg protein powder, pressed for time and too lazy to open a can of pumpkin.

Apple PB Goo

1 single serving unsweetened applesauce cup (1/2 cup)

1/4 cup PB2 (24 grams)

10 grams chia (or just a spoonful)

10 grams coconut flour (or 1-2 tablespoons depending on the consistency you want)

5 drops liquid stevia (or sweetener of choice)

 

Yep, good stuff. I used some cinnamon crisps for dipping.

I chugged an iced café americano on the side.

Dinner was well, interesting.

I made roasted kale salad and topped it with two veggie dogs and another version of nondairy “cheesy sauce”.

“Cheesy” Sauce- 2 tablespoons nutritional yeast, a little cumin, crushed red pepper, garlic, Cholula and water

Pretty good stuff.

Pretty darn random dinner.

Pretty awesome ginormous dessert.

With some banana “soft serve”. I had to celebrate National Banana Day you know.

Ginormous Dessert Pancake

(an adaptation of hooligan pancakes)

makes one huge 190 calorie pancake

1/2 cup egg whites (egg white jugs)

1/2 cup nondairy milk (unsweetened vanilla almond milk)

2 tablespoons coconut flour (14 grams)

1/4 cup oats (20 grams)

pinch of salt

cinnamon

nutmeg

1/4 teaspoon almond (or vanilla) extract

sweetener of choice (one stevia packet)

 

Mix all ingredients together in bowl. Pour into pie plate sprayed with nonstick spray. Bake at 375 for 20 minutes.

Viola.

Not bad for a thrown together late night experiment.

The “layers” include two ingredient chocolate frosting, a drizzle of coconut oil and a scoop of PB Crave.

And then in honor of the special holiday and all a frozen banana made into soft serve with my vita.

It’s okay to be jealous.

It’s no secret I can’t go a day without my chia seeds. From summer surprise cookie dough dip to my STUFT Protein Crispy Treat and Chia Protein Cookie Dough Dip I pretty much use it on a daily basis.

    Hi there! i’ve been following your site for a little over a year now,and loooove your recipes. However, I was wondering if there are any replacements for the coconut flour? I can’t stand the taste of it. I know the consistency will change because of its absorptive capacity but I just can’t get past its taste.
