STUFT-ing it All In

 

Clever huh? Yeah, let’s see if I can do this. My posts as of late have been shorty short, so this one you might just want to grab a seat and a summer mocha or café Americano. You know, in case you fall asleep halfway through (if you didn’t already fall asleep during this video of the boys and I making cinnamon crisps).

Ha ha.

So…. a bunch of random stuff coming your way. First, let’s talk workouts.

Workouts:

I’ve run about 28 miles over the past 3 days. Not normal, but the beginning of the week didn’t have much working out involved and there just may be a race or two coming up in the not so distant future that I want to make sure I’m ready for.

I’ve taught a couple classes also- spin and boot camp.

Friday night I was in a bit of a predicament. The boys wanted to ride their scooters and I had to try to fit in a run. We came up with a little solution.

That’s right. I decided to take my two hefty tots, their scooters and their helmets and jog to the church where we ride the scooters. I attempted 5 miles, but when we arrived at our destination after only 4 miles I sure didn’t complain.

Either did these guys.

It didn’t take long for my buddy Judah to ditch the helmet and the scooter and do some walking lunges with mama.

Yes, he is in fact doing a lunge in this picture. It’s one of his favorite lower body toning moves (for good reason).

The helmet was back on relatively quickly sans scooter. Safety first, even when just taking a water break

Saturday I attempted a long run in the middle of the day in the summer heat. Not the smartest thing, but I have to find the time when I can. Luckily I was smart enough to run from the gym, so I could finish my last 4 miles on the treadmill inside with a little air conditioning and Tommy Boy.

Phew.

15.9 slow, sweaty hot miles. Ugh. Funny too that I ran by a drive thru Starbucks on my run. That’s just mean.

Yesterday my run was back in the gym. A quick 7.5 mile treadmill run watching a little Extra Entertainment. Oh Mario Lopez- he’s from San Diego you know. We’re practically neighbors.

Drinks:

Not pictured, but we did finish off a bottle of my favorite wine over the past few days.

I’ve also had more than one iced cinnamon coconut Americano

and a mocha madness smoothie made with GNC chocolate soy protein powder.

This mocha smoothie- 1/2 frozen banana, spinach, GNC chocolate soy protein powder, CocoaVia unsweetened dark chocolate packet (or 2 tablespoons my favorite cocoa powder) and 1 cup unsweetened vanilla almond milk.

Yesterday I made an afternoon green tea which was my juicy green citrus tea minus the greens.

ACV Citrus Green Tea

1 packet Good Earth Green Tea Ginseng Citrus (brewed w/ 1/4 cup water), 1 CocoaVia Summer Citrus packet, 1 tablespoon apple cider vinegar, cold water and ice.

 

Eats:

I made the quickest, easiest little protein egg white snack the other morning before boot camp.

STUFT Sweet Treat Protein Egg Mug

In the mug- 3/4 cup egg whites mixed with stevia packet, cinnamon and a splash of vanilla. Microwaved in a mug sprayed with nonstick spray for 3:33. Then topped with some peanut butter and sugar free maple syrup.

It held me over just long enough for a bigger breakfast after class.

I know, right?

That’s a  version of mama’s green hooligans where I subbed in 1/ cup oats for the whole wheat flour. Then topped it with chocolate pumpkin protein goo and low calorie peanut butter frosting (made with PB2).

It was Sunday morning and the boys and I all decided we were eating our green hooligan pancakes in our pajamas.

Dinner has been the recent roasted kale salad with marinara and cheese less sandwiches.

I experimented the other night though for our date night and made portabella mushroom pizzas.

I made a non dairy version for myself

and a dairy friendly, STUFT Daddy version for a little someone special.

Here’s how these portabellas went down:

I took four portabella mushroom tops and rinsed and dried them. I topped them with a little pizza sauce, sliced red onion, green pepper, fresh tomatoes, fresh basil, black olives and some Italian seasoning, garlic, oregano and crushed red pepper.

Then I baked them on a cookie sheet sprayed with nonstick spray at 375 convection for about 15 minutes. I was under strict instructions to not burn someone’s mushrooms since I usually burn juts about anything and everything. Ha ha.

 

For STUFT Daddy’s dairy friendly version I added a little shredded cheese and parmesan and made sure not to put too much crushed red pepper by “accident”.

I even made him the same thing on a flat bread.

I left mine as is without any cheese,

but added a jalapeño (or two) and topped these little beauties with Scotty B’s ghostly garlic, Cholula and nutritional yeast.

I also served up just a few veggies on the side.

The veggies- non dairy kale chips and roasted broccoli slaw.

The second night I made these (yes, I made them two nights in a row), I used the nutritional yeast, Cholula and Scotty B’s to make a version of non dairy “cheesy” sauce.

Oh yeah, and a cheese less sandwich too. Can’t forget that guy back there.

I’ve been following things up with a big dessert as usual with my almond coconut ice cream with some Vitatops and two ingredient chocolate frosting and nut butter (different nut butter each night).

I think I need a special ginormous dessert bowl that says “Just another STUFT Dessert” or something like that. Wouldn’t that be fun?

Fun:

Here’s a little family fun from the past few days also. We’ve had a lot of family time with both of our families, but I’ve been nice enough to not annoy people and take out my camera during the festivities. So here’s just some of our STUFT family fun, photo dump style.

 

I made the mistake of telling the boys we could go to the park after the gym the other day. There was no way I was getting out of that, so to the park we went.

We also decided we needed to get back into making some smoothies to make sure the boys get the fruits and vegetables they need. I haven’t been doing that great of a job on that lately. Sometimes their “help” in the kitchen goes over a little better than other.

Um, yeah.

Yesterday the boys informed me they were “working hard”

and when nap time rolled around and they should have been resting up after all that “work”, this happened.

Oh and we made a pit stop after the gym yesterday to check out a local farmer’s market.

The market itself wasn’t very exciting, but I did spend exactly $2 on something really exciting.

I wanted to talk goals for the month, but I’m out of time and one of my September goals is to balance my time better and get more sleep. So…. it must be your lucky day.

I’ll leave you with this:

Here’s some things I learned while listening to the Jillian Michaels podcast the other day on my run. I don’t know the exact research, facts or the wording she used, but I just thought you might find some of these things interesting.

- Getting 80 minutes less sleep a night made people eat on average 550 more calories the following day. (Not good. I wrote about the importance of sleep in this post.)

- People who incorporated whey protein into part of their weight loss diet as opposed to soy protein lost more weight. (I’m not sure if this was specific to protein drinks or not.)

- If you’re going to workout, you should aim for a minimum of 30 minutes, ideally 45-60 minutes.

- Stay away from artificial sweeteners. (I need to work on this and it’s one of my goals for this month.)

 

And these last few were just some thoughts I came away with after listening to one of the podcasts. A little extra Monday motivation.

- Don’t accept something in life just because it’s there. Wait for the opportunity that you truly believe in and that’s right for you. It’s out there.

- Don’t get stuck just being comfortable in life. Dream big and go after it.

- Take chances, but know that there’s going to be bumps and bruises along the way. It’s all part of the journey in getting to where you’re supposed to be.

I’ve got a couple classes to teach and then I’m hoping to be “laboring” all over the house organizing the mess I call the office and finally get some business stuff taken care of. Who am I kidding? The only way I’ll have time to do that is if the boys actually nap. Ha ha.

    My mother-in-law heads home today and then we are going to look at a minivan – Yep, I’m entering that territory as a mom but I’m actually kind of excited. Just think about how much stuff from Costco I can cram in there :)

    Way to fit the runs in when you can! All of your eats are so creative and look so yummy. I want to try that egg white muffin. Yesterday, I tried oatless oats for the first time and they were pretty good. Interesting facts from Jillian….I think I need more sleep too!

    My artificial sugar free maple syrup is my favorite thing ever, I know I shouldn’t use it, but it’s just so dang yummy on my oats and cottage cheese, I have cut back on it, but still it’s hard!!! Good luck to you with that one, I’m at least trying to swap the things I put it on with powdered PB, which is definitely better than that crap! (Although I love that crap, we all have our weaknesses right?) You are super mom running with two toddlers and the scooters, wow! I push all three of my kids at times in our double sit and stand stroller and couldn’t imagine trying to run far, I’ve tried a small distance and it’s tough!

    Also, I know lunges are great and I try to do them most days, but it hurts my right knee, ug I know I’m going them right, and it doesn’t hurt my left knee…but I want to be able to do them without injuring myself because well my legs need them!

    Oh geez, I remember those “suppose to be napping, but I’m really tearing my room apart days”. Although I never had twins. Now mine are just old enough to know better and still trash their rooms ;)

    I love the pizza on the portobello tops idea!

    I’ve felt so amazing since giving up artificial sweeteners 2 years ago and I know you can do it too! :)
    I use Sunwarrior protein powder and I feel like it gives me headaches (possibly the stevia). Kin nd of bummed because I love the protein powder. I notice you use Vega products do you like them? Have you tried Vega sport?
    My September goals are to run outside more. Two days ago I ran in the Indianapolis Women’s half marathon and I got the EXACT same time as my last half marathon. According to my boyfriend I should be happy I even completed a half, but after your first it’s all about the time ;) You understand right?

    I’m a treadmill junkie and I need to be outside so that is one goal. Also I signed up for the Carlsbad full marathon in January. Are you planning on doing that one?

    wow! That fact about the sleep and calories is amazing. I’ve also been interested in adding whey protein to my diet, but I’ve never used any kind of supplement before and I’m not sure how to begin…

    Those portobello pizzas look fabulous. Portobellos are going on my grocery list right now.

    Today I’m doing pilates because I can’t run (ankle injury that flared up again).

    I’m so glad you get to get your workouts in, even if it is here and there when you can find time. You look amazing and your race times are beyond amazing so your workouts must be just right!

    Sleep is so important and so often overlooked! I try to get 8-9 hours of sleep a night! I need a lot! I love your sweet eggs mix too! I saw that the other morning on facebook and thought it looked so delicious and so easy!

    I want more sleep too.

    I want that green hooligan thing right now.

    But, I guess I will settle for Cherry Berry in an hour for the final “Hurrah” of summer! School starts tomorrow and early to bed tonight….(hopefully!).

    You sure did STUFT a lot in here! hehe I haven’t been having any artificial sweeteners, even stevia. I’m not sure if it’s helpful because my stomach is still an absolute mess but now I know I can survive without them and we definitely don’t NEED them. It’s pretty easy when you’re just eating meat and veggies. There’s nothing to sweeten. I guess I should try mushrooms. I’ve never had them.

    I love the portobello mushroom pizzas! Another one of your recipes I can’t wait to try! I love your info on sleep. It is SO important and something I am lacking on. I think I need to make this one of my goals for September, to get at least 8 hours of sleep per night. I feel (and perform) so much better when I am rested!

    I’m all for spending these last few warm months hiking and running outside. Spent the weekend hiking, fishing, and dinner-partying! I love the purple tank, I’m rewarding myself with a new workout piece for each mile I add to my distance.
