*Edit- I originally started writing this post early this morning. For some crazy reason I thought I could write a post and get out the door in time to teach a 8:15 am spin class with the boys in tow. Who the heck do I think I am? Let’s just say the post didn’t get done, I didn’t get my coffee and the boys had breakfast on the go.
We had a day yesterday, a LONG day. This morning I totally woke up feeling overwhelmed and like I just wanted to hide out. I didn’t get anything I really wanted to get done yesterday so today I just wanted to detach from everything, stay inside and try to make some progress on the red room, finally write down some goals for September, get a new training schedule in place (I might have a couple races coming up sooner than I had planned), etc.
Well, then I woke up to this.
Beautiful, right?
This gave me a little kick in the butt. There’s no hiding out in life. That’s just wasted time. Each day is an opportunity to get out there and make the best of it. Be the best person you can be. Make good decisions, fuel your body with healthy food, listen to your body and take care of it, get out there and move, nurture relationships, care for others, laugh, pray and hopefully inspire some people along the way.
Yep. That sunrise said all that to me.

So….. instead of hiding out we went for it today. I made the decision right then and there that I was going to get out there and give today my all.
The boys felt the same way. They were not only ready to do their take on a treadmill workout,
but to tackle the rest of the day also.
We made it to the gym to teach my spin class and then I popped on the treadmill for a little run while catching the last half of Kelly and Michael and a little TMZ.
Any Live with Kelly watchers out there? What do you think of the new guy Michael? I still miss Regis. I also still want to be Kelly.
It was the perfect start to the day.
Afterwards the boys and I went to Target and made a necessary stop at Starbucks. We may have spent way too much time at the register as I chatted up the lady about some mugs that were on sale. (I also may have bought myself a new mug or two only because they were on sale.) Our little stop took a turn for the worse shortly afterwards.
Let’s see. Reasons why we won’t be going back to that Starbucks anytime soon:
We spilled their samples all over the floor and they had to come clean up the crumbs.
Judah had a meltdown complete with crying and stomping over spilled samples.
I was forced to buy a cinnamon roll for the boys to try to help the situation.
The barista kindly asked me if I would like an extra shot in my soy latte. I refrained from hugging him, but accepted his offer. He must of known I needed it.
One chocolate milk was spilled all over the floor shortly after these pictures were taken.
Yep. We definitely won’t be going back to that Starbucks anytime soon. Too bad Starbucks are hard to find around here. Ha ha.
The morning got the best of us. Judah fell asleep while successfully balancing his soy milk. Joaquin managed to spill he replacement chocolate milk all over his shorts.

Once we all recovered at home I made a little something and was sure to post it on Instagram as soon as I realized how awesome it was.
Um yeah. There was no hiding out or wasting the day with this thing.
So, the other things I had planned on writing about and our little recap of yesterday will have to wait. This is just too great not to share right now.
This is a high protein, low carb version of the original mighty chocolate microwave muffin. In the original post I have a couple different versions- one that’s toddler friendly and one that is sugar free. This one is very similar to the high protein dark chocolate muffin. It might just take the cake (or the muffin) though because it has spinach in it.
Mighty Chocolate STUFT Microwave Muffin
1/2 cup egg substitute or egg whites
handful fresh spinach
1/2 cup pumpkin
2 tablespoons coconut flour (14 grams)
2 tablespoon dark cocoa powder
1/2 teaspoon baking powder
2 sweetener packets or 1-2 tablespoons sweetener of choice
1/4-1/2 teaspoon almond or vanilla extract
Blend egg substitute or whites with spinach (I use my Magic Bullet). Combine all other ingredients in small bowl.
Pour in large mug sprayed with nonstick spray.
Microwave for 5-7 minutes.
*Notes-
You can sub 1/4 cup of egg substitute with nondairy or regular milk of choice.
I use two packets of stevia sweetener in my version.
I topped mine with some low calorie peanut butter frosting and some chocolate protein “frosting” made with a scoop of GNC chocolate soy protein powder and unsweetened almond milk.
Oh man. There’s definitely no hiding out and wasting the day here. Actually, the spinach may be hiding somewhere in this muffin, but that’s a good thing.

I have to warn you, it’s not your fluffy muffin. It’s dense and rich, but it’s one heck of a protein filled chocolate treat.

I am totally with you on those terrible two moments! My two year old had a melt down in Trader Joe’s Friday. I am embarrassed to return soon- there is only one in town. Gotta love ‘em! I just try to remember to keep a list of these moments so I can thoroughly embarrass her when she’s oh say… 13-17 years old. I’m sure I won’t have to try very hard at that age to embarrass her. =)

It’s wonderful that you were able to dive in and enjoy your day! I know that can sometimes be hard to do after a long day before, but it is always worth it!
I wouldn’t worry about not going back to that Starbucks. As a former barista, my coworkers and I loved when someone would bring their young kids no matter what mishaps occurred. It was a nice change from the usual routine. Kids are so cute and do unexpected things.

I’ve been enjoying your “protein cookies/muffins” lately – thanks for all the great recipes!!! I usually sub applesauce in for the pumpkin, but now that fall is coming, I’ll be buying some canned pumpkin to use. Question is- do you taste the pumpkin in your muffins? or does the chocolate flavour still come through?

I miss Regis but Micheal is better than some of her other guest host. I hardly watch the show now but when I did I only watched the first 20min unless I wanted to see one of the guest. I am influenced very easily and since ready your blog the last 2weeks you have convinced me multiple times that i need sugar-free syrup and I don’t usually like it. So far I have been able to talk myself out of it but I am sure I will be buying the almond soon. You also have me convinced I love things as spicy as you and I don’t. Oh goodness! Sorry to hear you had such a rough morning, but at least you dealt with it well with an extra shot of espresso and a yummy mug muffin–which I cannot wait to try, BTW! I am the BIGGEST Live! with Kelly fan but just started life in the real world a few weeks back so no longer get my daily dose.

That looks so GOOD! When you say “pumpkin”…is this canned pumpkin pie filling? And for replacement for a Gluten Free husband…if I have GF flour – is that an effective substitute for the Coconut Flour?

Cathy- it’s juts pumpkin, not the pumpkin pie filling. The filling stuff has sugar and spices already added to it. Look for the pure pumpkin.
And… coconut flour is GF so your hubby should be safe. Feel free to experiment though. IF you’re using other flour you’ll need more (maybe about twice as much).
Yum, yum! That muffin looks darn delicious. I love blending spinach into my baked/microwaved goodies.
