Random Afternoon Cliff Notes- The Good and The Bad


Oh Cliff notes. I don’t know how I survived without those things in college. I don’t think I ever really read the full edition of any Shakespeare plays. Oopsies. Look where it got me.

So I didn’t have time to post this morning. I thought it would be best to make it to an early morning spin class I was subbing on time for a change. First good decision I’ve made in awhile. Ha.

Trying to write a blog post during my limited afternoon “office hours” might not be one.

And…. attempting to “clean” my crazy messy office this morning by throwing everything in a box (a trick I learned last year from my friend Erin) was not the best idea either. I now have 4 boxes I need to go through. That’s right, I average a new box of all my piles about every month or so.


I did just scarf this peanut butter and chocolate goo (or fudgy STUFT protein cookie dough made with GNC vanilla soy protein powder) down though.


Conveniently I had an almost empty jar of Naturally More in the fridge that was calling my name.


Yesterday I did a little goo experiment in honor of the Chike protein iced coffee giveaway (there’s still time to enter by the way- click here). Instead of my GNC protein goo, I decided to use a pack of the iced coffee protein powder in the goo.

Hmm…. let’s just say that the iced coffee protein drink is much better mixed with milk or water even though this following picture makes it look amazing next to Kitty’s butt in a Flatout cinnamon crisp bowl.


Ha ha. You’re welcome. I did make myself eat the whole thing because I didn’t want to waste the protein powder packet or the pumpkin though. The espresso benefit was worth it in the end.



Taught a couple classes yesterday (BOSU and boot camp) and then sported my Mizuno Nirvanas for a 4.5 mile double stroller run last night.


These guys got a guided tour of nearby basketball hoops complete with beverage service thanks to our Honest Tea supply.


Halfway through the run Joaquin turned and looked back at me and said these exact words, “I’m happy Mom.” Love that guy.

He must have been trying to get back on my good side after the morning “fun”.


That was at 7 am. It’s totally okay to be jealous.


We even have a new bat he’s been doing some damage with.



Goodness help me if I find it in the toy bin later today. Again, it’s totally okay to be jealous.


We were out of the house early this morning so breakfast was on the go.

I had a little smoothie with instant espresso, dark cocoa powder, 1 cup unsweetened almond milk, 1/2 cup egg whites (yeah, that’s right, egg whites), 1/2 frozen banana and some ice with a whole wheat bagel thin and some SunButter.

The boys had these Trader Joe’s frozen pancakes.


Today I taught spin. I thought I’d show you my cool Reebok socks.


Then changed my shoes and got on the treadmill for a short jog and got ready for the biggest part of the workout. Costco.

Oh oops, not without an emergency Starbucks stop though.


Plain soy latte today. No sweeteners. Thank you thank you. Baby steps friends. It was pretty good. I should’ve gotten an extra shot though. Next time.

Costco highlights. Don’t be fooled, they LOVE Costco.

Coconut Oil


Refrigerated Rotisserie Chicken


I used to buy this rotisserie chicken all the time. I freeze it in individual servings for an easy protein addition to meals. My original post on it that is here (warning- it is an old post). I’m so glad this chicken is back though.

Okay really quickly before I go.

Last night I was in the mood for Chinese roasted vegetables. Instead of my usual roasted brussel sprouts flavorings, I sprayed a little Bragg’s liquid aminos on a butt load of veggies.


(Don’t mind the tag. I’ll give you three guesses who’s responsible for that.)

Then I made two different sauces. The first one was a mix of these two things.


Sriracha, PB2 and a little water. (I can’t take credit for the combo, someone told me to do it a really long time ago.)

The second sauce was STUFT Daddy’s standard one he makes.


Soy sauce and chili garlic sauce.



(In the roasted veggie mix- roasted cauliflower, roasted kale salad, roasted cabbage, some chili peppers and chicken.)

It was all followed by a few dessert “layers”.

A Chocolate Vitatop with some three ingredient fudge


plus a modified version of Tina’s microwavable cookie. (I subbed in brown sugar for the honey and 1/2 Naturally More and Better N Peanut Butter for the nut butter. I’m feeling a STUFT version of this bad boy may be in the works shortly.)


then I topped everything off with some almond coconut ice cream.


Holy batman.

    Costco stopped carrying Kirkland brand PB. They replaced it with Skippy which has added sugar 🙁 Seems you were one busy momma today! One of these days I am going to try one of your Stuft dishes! As for now I like reading your blog entries.

    Costco had this yummy yoplait greek yogurt smoothie mix that I was addicted to. It was easy to make for school and had 10 grams of protein then they stopped carrying it. So sad! I’VE had to substitute with a berry one and add chia seeds for protein. Disappointing. Way to go on the latte! Not even flavor for me!

    Just read in the paper that we are getting a Costo–unfortunately not until the fall of 2013 but I’ll survive til then. So many people just love Costco so I can’t wait to check it out! Thumbs up on that unsweetened latte! I think I can cut back on the sweeteners (primarily stevia and some Splenda now and then) but I don’t know if I could give them up entirely! A favorite quick sauce/dressing is a little Bragg’s, a splash of rice or apple cider vinegar and a little sugar free maple syrup. I usually use it on my Asian inspired salads. Sometimes I add some cayenne or red pepper flakes for a little heat.

    I like what you did with your veg. I cannot get powdered PB here in Singapore, am still searching the nearest place that will ship. I eat tons of veg and protein everyday and cannot do without the sauces, having grown up eating mostly spicy hot foods! I started to add Brewster yeast into my diet from you 🙂 specifically to my quick stir fry veg n protein dump (I call it a dump because I kinda dump all sorts of greens to the wok, protein part could be firm tofu, or eggs (I eat whole eggs including the yolks and drools at the sight of your GNC egg whites jugs which as you can guessed by now our local GNC don’t carry) or chicken and sometimes tuna/sardines. When I crave carbs, I would throw in like a few spoon of white or brown rice and fry those first before dumping in the veg. Couple of things I always add to spice it up is to sauté chopped garlic and onions, this really makes a difference. By the norm here in Singapore, my diet is considered weird but I really enjoy them and the restrictions actually made me really creative (out of desperation lol) when it comes to spicing things up otherwise it is very boring and for me painful to eat steamed veg and protein with almost no seasoning. Because of your blog, I have started to replace dairy milk w soy milk. Next on my list are those chai seeds you seem to add on everything 🙂 ….     I FINALLY found some Vitatops! OMGosh! Tonight will be my first- and I can’t wait! Btw- I absolutely love the protein muffin recipe you gave us- I eat at least one everyday w/plain greek yogurt and my ch-ch-ch-chia seeds for a snack/meal. My daughter loves the pumpkin but I love the chocolate! Just so you know, people actually try your recipes and love them! Love that your Costco has the rotisserie chicken sold like that- haven’t seen that yet! Have a great day! Hugs~

    I made one of my Chike packets into a muffin and it was disgusting. But I ate it. I can’t bring myself to waste food either. I’m hopefully going to Costco today! I haven’t been in a long time. I’m pretty sure mine does not that enormous coconut oil…will investigate.

    You always make me want to buy vitatops. I’m resisting since I don’t want to get addicted though;)
    Yummm. The microwave cookie looks good.
    My favourite sauce is melted coconut oil mixed with nutritional yeast. Delicious.

    Is it weird that I have never been at Costco?? We have one, but it is 40 minutes away! In TN, all we had was Sam’s. I need to make a trip out there to look around!

    I love mixing cocoa with some coconut oil, sometimes add stevia. it is like a quick little fudge. even have done it with coconut creamer. anything to eat chocolate, haha

    One of my favorite things at Costco is their frozen chicken breast strips because they are so easy to microwave and use for quick meals. But, I also love their yogurt jalapeno dip that they stopped carrying a couple of months ago! I’m with you; it irritates me when Costco stops carrying items that you love!

    Our costco just stopped carrying the store brand natural peanut butter. As a mom of four kids 9 and under, I felt like this was catastrophic!:)
