Happy Monday morning. I don’t know why they always sneak up on me. I also don’t know why I keep staying up way too late on Sunday night trying to get work done and prepare for the week which actually makes Monday mornings that much harder.

Weird.

You’d think I’d learn.

On a totally different note, in just three short weeks I’ll have just gotten back home from the Nike Women’s Marathon in San Francisco. What the heck?

 

I had to fit my run in yesterday during nap time while watching a little Sex and the City.

It was like 100 degrees outside and we were busy in the morning making yet another ginormous savory breakfast STUFTwich (with a real egg in there)

and trying to tape a couple workout videos.

Obviously it was fun.

The videos we shot are a little off center and my shorts really ride up, but the boys are entertaining. I’m thinking I’ll still post them anyway. I’m convinced about 90% of the people that watch them only to see the boys anyway. Ha.

 

Some random eats.

Last night, because of this little lady, I had a roasted sweet potato with peanut butter and Artisana Cocoa Bliss for dessert.

I roasted the sweet potato in the oven just plain, added the peanut butter and chocolate goodness on top and stuck it in the freezer for a bit to chill it.

Um, yeah. It was amazing. Who knew?

It may or may not have been topped with some almond coconut ice cream and sprinkles.

Ice cream and sweet potatoes? Yes, that’s how we do it here.

 

This morning, even after I had a little Kitty “help” brewing my espresso, I decided I didn’t want coffee and went with a little GNC Green Fuel drink instead.

I added kale to the mix today and sucked it down in less than 2 minutes. Nice.

Okay, since I have limited time and a big post in the works for tomorrow all you get this fine morning is that no grain microwave cookie recipe.

But, I think it might be that good that you’ll be okay with it.

It’s a variation of Tina’s cookie recipe.

No Grain Microwave Cookie

makes 1 cookie

2 tablespoons peanut butter (or other nut butter of choice)

2 tablespoons egg whites

1/4 teaspoon baking powder

1-2 teaspoons brown sugar (or 1/2 teaspoon brown sugar Splenda blend)

1 tablespoon regular sugar (or granulated sugar substitute)

 

Mix ingredients together. Pour in a bowl sprayed with nonstick spray.

Microwave for a minute (or 1:11 like I do here).

You get a little cute cookie puff that goes perfectly with an iced mocha.

It’s kind of spongy, but has that yummy peanut buttery, brown sugar taste.

Oh yes, it’s something you need to try like right now.

I’m sure you can add some vanilla extract, chocolate chips, cinnamon, chia, etc., but I’ve been making it just plain and loving it.

I do a tablespoon of each of these peanut butters.

Hmmm… I wonder if it would fit in a Flatout cinnamon crisp bowl? I may have to try that next. Ha ha.

Just for fun here’s a really old post with a PB2 microwave cookie recipe. I may have to revisit that one too.

 

Dang, it’s already toasty out over here. Where is that darn fall weather?

 

Okay, long list of things to get done before we head out to teach spin today. I need some new song ideas for my class playlist. Got any for me?

    I made the cookie but added 1 tsp special dark cocoa powder and a dash of stevia. Turned out a bit dry, perhaps needs a TBSP almond milk? What are your thoughts on this one? Maybe also dry bc I use PB2 and added no liquid other than the egg whites….

    Nothing at all wrong with ice cream on your sweet potato! The microwave cookie looks yummy and there are so many variations that you could try….that’s a must try.

    I was just thinking of sweet potatoes! I made some yummy chili last night and you know that always means tons of leftovers. Think I need some sweet potatoes for variety this week. You are the queen of the treadmill long run – always impressive!

      I only do the treadmill out of desperation. I wish I could run outside more, but I have to try to fit it in when I can. Yes, I think you need some sweet potatoes for the week too!

    I cannot wait to try that cookie- did you microwave it in one of the kids little plastic bowls? (it looked vaguely familiar- bad girl, that plastic may harm you!) Can always count on Joaquin for some cute head accessory! Thanks for sharing- have an awesome day!!!

    I have been making variations of Tina’s cookie ever since I saw it on your blog…with chia, with nutmeg, with different PB etc…its all just YUM! My kids even like it!! Now that says something! And ease…love it….seriously a big LOVE in this household!

    I will have to try the sweet potato thing next….Looking forward to your next video…and love the HALO band on the boy!

      The next video is NOT good, but I’ll still post it. Ha. I keep wanting to try chia in that cookie. Maybe tomorrow. And maybe I should share that cookie with the boys. I didn’t even think about sharing it. Ha ha.

    I’ve just gotten into blogs and I must say I love that you’re a hard working mom with such a great outlook on life. I aspire to be a fit and active momma like you one day, and it’s nice to know that I can come to your blog for guidance.     I love putting crunchy peanut or almond butter on top of a baked sweet potato, plus I always add a little cinnamon-delicious and super filling!

I’m kinda like that w/ my humor so I totally love it. That cookie looks yummy. I love me some PB. I was wondering could you switch the splenda for Stevia??!! Hmmm… questions questions. Yeah we definitely have fall weather in the DC metro area(I’m in Alexandria, VA :-) . Beautiful! But I bet it’s been nice in Cali too… gotta visit there soon :-D

Yours looks bright and yummy. Mine always looks like baby poo. I’m not sure what I’m doing wrong. Mine does taste okay but I’m sure yours taste better.
