Happy Monday morning. I don’t know why they always sneak up on me. I also don’t know why I keep staying up way too late on Sunday night trying to get work done and prepare for the week which actually makes Monday mornings that much harder.
You’d think I’d learn.
On a totally different note, in just three short weeks I’ll have just gotten back home from the Nike Women’s Marathon in San Francisco. What the heck?
I had to fit my run in yesterday during nap time while watching a little Sex and the City.
It was like 100 degrees outside and we were busy in the morning making yet another ginormous savory breakfast STUFTwich (with a real egg in there)
and trying to tape a couple workout videos.
Obviously it was fun.
The videos we shot are a little off center and my shorts really ride up, but the boys are entertaining. I’m thinking I’ll still post them anyway. I’m convinced about 90% of the people that watch them only to see the boys anyway. Ha.
Some random eats.
I roasted the sweet potato in the oven just plain, added the peanut butter and chocolate goodness on top and stuck it in the freezer for a bit to chill it.
Um, yeah. It was amazing. Who knew?
It may or may not have been topped with some almond coconut ice cream and sprinkles.
Ice cream and sweet potatoes? Yes, that’s how we do it here.
I added kale to the mix today and sucked it down in less than 2 minutes. Nice.
Okay, since I have limited time and a big post in the works for tomorrow all you get this fine morning is that no grain microwave cookie recipe.
But, I think it might be that good that you’ll be okay with it.
It’s a variation of Tina’s cookie recipe.
No Grain Microwave Cookie
makes 1 cookie
2 tablespoons peanut butter (or other nut butter of choice)
2 tablespoons egg whites
1/4 teaspoon baking powder
1-2 teaspoons brown sugar (or 1/2 teaspoon brown sugar Splenda blend)
1 tablespoon regular sugar (or granulated sugar substitute)
Mix ingredients together. Pour in a bowl sprayed with nonstick spray.
Microwave for a minute (or 1:11 like I do here).
You get a little cute cookie puff that goes perfectly with an iced mocha.
It’s kind of spongy, but has that yummy peanut buttery, brown sugar taste.
Oh yes, it’s something you need to try like right now.
I’m sure you can add some vanilla extract, chocolate chips, cinnamon, chia, etc., but I’ve been making it just plain and loving it.
I do a tablespoon of each of these peanut butters.
Hmmm… I wonder if it would fit in a Flatout cinnamon crisp bowl? I may have to try that next. Ha ha.
Just for fun here’s a really old post with a PB2 microwave cookie recipe. I may have to revisit that one too.
Dang, it’s already toasty out over here. Where is that darn fall weather?
Okay, long list of things to get done before we head out to teach spin today. I need some new song ideas for my class playlist. Got any for me?
