Catching Up- Behind the Scenes and Another Cookie

Okay, first of all, you all are very inspiring people. Holy smokes. Every single comment I’ve read on the Find Your Mezamashii Giveaway post has made me all warm and fuzzy inside. Seriously I love reading why you run or what inspires you.

YOU ARE AWESOME.

That is all.

So catching up.

In case you haven’t noticed, my life is go go go all the time. I try to hide the fact that I’m a mess, but I don’t think I’ve been doing that great of a job lately.

I feel like I’m playing catch up on a daily basis. Not just a little bit either, like really playing catch up. I’ve been burning the candle at both ends a little too long and surviving day to day one day too many.

After a fun filled Friday last week with a big “date” with my best friend Bob and a long run, Saturday was just as busy.

I taught boot camp bright and early. I was lucky enough to rock this cool outfit since it was laundry day and all.

IMG_6422

Like those new Pro Compression sleeves? Yeah, me too.

It’s a good thing my boot camp ladies are my friends and didn’t say anything about my attire (to my face anyway).

Smile

I had them do this 10 minute burpee STUFT challenge for the warm up and then a variation of this “Angie” WOD I found on the Reebok CrossFit website later on in class.

We didn’t do the pull ups or go for the full 100 reps in the WOD. The modified workout we did was this:

For time:

50 Lat pulls with a resistance band

50 Push-ups

50 Sit-ups

50 Squats

It was fun to throw in some CrossFit in the boot camp mix. I haven’t quite heard how they felt about it though. We’ll see.

He he.

After boot camp the boys and I took a trip down to the San Diego Zoo to meet up with Heather and her hubby Jason who were in town visiting. It’s always so exciting to meet someone who you’re friends with through the blog world for the first time.

She was just as cute and nice in person. Of course I immediately wanted put a little lip gloss or something on the minute I saw her in her cute outfit and all, but oh well, I sported my workout uniform. At least I ditched the compression socks and traded out the purple shorts for black (which I’m sure really impressed). I may have put an additional pair of Handful bra pads in my shirt too. You’ll never know.

IMG_6431

We were a scene as usual, but the boys behaved themselves just long enough for Heather and I to get to chat a bit and see some pretty darn cool animals.

Oh, and um, yeah, I have a spouse pass for zoo since STUFT Daddy works at the Safari Park. I think I’m pretty important sometimes.

Smile

These guys think they are too.

IMG_6427IMG_6429

Why yes, we left very shortly after that picture was taken to avoid a major meltdown in front of our new friends.

Smile

Saturday night STUFT Daddy and I made healthy chicken nachos for date night. No pictures of the actual nachos, but here’s just a few of our open salsas and hot sauces that I’m sure you’re just dying to see.

IMG_4914

I’m pretty sure a little of each one of those made it on my huge cheese less nacho plate. It’s okay to be jealous.

Sunday I was supposed to run 12 miles in preparation for my two huge events coming up (Nike Women’s Marathon and the Runner’s World Half Marathon and Festival).

Well……

in the middle of putting away laundry, this happened.

IMG_6451_thumb1

Yeah, this is how STUFT Daddy found me when he got home from work. Not quite the 12 miles I had planned on logging on the treadmill. Not a very flattering photo either, but we’re all friends here right.

Oh and yeah, that’s Joaquin’s bed. It even vibrates you know.

Needless to say, I never got to my run in. Sometimes it’s just as important to let your body rest than it is to train hard. Sleeping and proper rest is half of it. I always forget about that until I hit a wall like I did Sunday.

Oh man.

We even went to a family party that night and let me tell you I was one big pile of fun there too. It wasn’t pretty.

I guess Joaquin wanted to get me back for falling asleep in his bed because I found him like this in the hallway late the other night.

IMG_4943

Funny stuff. He is not a fan of staying in his big boy bed or of keeping his pants dry. Go figure.

Anyway…..

Monday rolled around and it was the start of a new week, a new month and a new opportunity to get it right.

It’s never too late. Just like my wise friend Lindsey, who gave herself a do over yesterday, I’m going to do the same.

It’s never too late for a do over.

It’s never too late to pick yourself up and try to get it together again (even if it is for the 100th time).

That’s exactly what I’m going to do.

And now, well, now I’m out of time.

I won’t leave you empty handed though because that’s just not nice. Here’s a couple of random pictures and things to make your day just that much better.

Kitty has been back on the darn stove, but unwilling to make my espresso.

IMG_6443

These guys are really getting the hang of making some low calorie ice cream with me the mornings.

IMG_6471

They also are becoming pros at scrambling real eggs

IMG_4921

and dirtying every clean fork they can find.

IMG_4922IMG_4923

Here was my brilliant breakfast I had yesterday morning.

IMG_4945

Egg whites cooked with cinnamon and a roasted sweet potato with cinnamon topped with coconut oil, low calorie peanut butter frosting, peanut butter, Artisana cocoa bliss and some chia seeds. It would’ve been a sweet potato breakfast salad, but I was out of spinach.

Pumpkin is back on the shelves at Costco. We stocked up yesterday.

IMG_6474

I see a pumpkin mocha and/or a pumpkin protein mocha smoothie in the very near future. Oh wait, or a mighty chocolate STUFT microwave muffin or some GNC protein goo. The possibilities are endless.

My 9 miles on the treadmill yesterday looked a little like this.

IMG_6476

I made these veggie eggplant pizzas last night for a late dinner when I finally sat down.

IMG_4949

I topped them with the usual crushed red pepper, nutritional yeast and Cholula.

IMG_4950

(I know Tracey, I owe you a pizza recipe. It’s still on my list.)

Last, but not least I created this new almond walnut version of the no grain microwave cookie.

IMG_4937

Yep, that’s what I do.

Here it is.

IMG_4936

Almond Walnut No Grain Microwave Cookie

serves 1

1 tablespoon  (7 grams) almond meal

1 tablespoon walnut butter (or other nut butter)

2 tablespoons egg whites

1/4 teaspoon baking powder

5 drops English toffee flavored stevia (or other flavor/sweetener)

1-2 teaspoons brown sugar (or 1/2 teaspoon brown sugar blend sweetener)

cinnamon

Mix all ingredients together. Pour in a microwave save bowl sprayed with nonstick spray. Microwave for 1 minute (or 1:11).

IMG_4932IMG_4940

I know. What can I say?

Good stuff. My two main ingredients besides the almond flour were these: Artisana Walnut Butter and English Toffee stevia.

IMG_4938IMG_4939

It’s even better as the bottom “layer” under some almond coconut ice cream.

IMG_4942

Okay.

Done. Out.

Do over.

This month I’m focusing on The Mezamashii Mommyhood project, trying to simplify a few things around here, sleeping more, being in the moment with my boys, training a little less, starting those darn notebooks and not only creating a fall bucket list, but checking things off it.

Whoa. That’s a lot.

Anything you want a do over on?

Do you have a fall bucket list? What’s on it? (You know, so I can steal your ideas. Kidding.)

Don’t forget to enter the Mizuno Mezamashii giveaway here.

Have a good one!

Wow you do sound busy! Awesome that you found time for a nap (or the nap found time for you)! Hehe!! Your boys are adorable! I have twin girls! 🙂

(I am getting a little exhausted just from reading the post) ha! You are the pink energizer bunny in that outfit! And I tried to order some PC calf sleeves and the site says (and has said for about a week now due to other give aways on Skinny Runner’s site) their are no products in that category…I will keep checking back though!

Be in your family moment but thanks for your recipes and workouts for us too..YOU Amaze Me!

I am so incredibly jealous of you and Heather! I want to meet up with both of you!!! One day my friend! I will get there eventually!

You two are so funny with your sleeping arrangements. I remember those days of crazy sleeping places. We actually had a pallet on the floor in our room for years for Max to sleep on when he got up in the middle of the night. It saved my life when it came to getting good sleep!

I love the San Diego zoo! The eggplant pizzas look amazing! I posted a Fall bucket list about a week ago. I need to find a local apple picking place, though….apparently not easy in Texas. 😉

i love you friend. Take some extra care to yourself this month. Well deserved. Lots of goodness coming your way! and man oh man, thank you for this recipe!! HEAVEN!

  6. 6

Ok, the eggplant pizzas? YUM and I should have had you bring me one of those cookies 😉 We had such a nice time at the zoo and it was so wonderful finally getting to meet you. Honestly, I was jealous of your outfit. You were much more prepared for trekking around the zoo than I was!

pumpkin at costco!!?? best news ever 🙂

I recently found your blog, and I am SO impressed by how you juggle family, work and exercise. You rock! I was curious about your race training schedule. I am also a runner, and I have struggled with fitting in cross training and weights and still getting all my training runs done. How many days/miles a week do you run? Do you have a race training plan that you follow? Any advice would be hugely appreciated!

Oh gosh, don’t be impressed. I’m a mess in real life. LOL. I run about 5-6 days a week. No specific plan, I should post kind of what i do though I guess since others have asked. Depending on if I’m training for a particular race I run about 40-45 a week. If I’m not training it’s closer to 35 or so.

Eggplant pizza! I love it! Definitely going to try that!

omg I died laughing at the picture of Joaquin falling asleep in the hallway. Okay, died from trying not to laugh during class. And clearly you needed some rest if you fell asleep in a toddler bed! Sometimes nap > workout,

  11. 11

I had to laugh at the pic of you sleeping the other day when I saw it on IG. Been there except it was on the floor. Power naps rock!

Good luck on slowing down this month! It’s going to be tough with 2 big races but you need to do this, right? 🙂

  12. 12

You can have a do-over every day if you need it. Sometimes things are best taken minute by minute even. That’s totally okay. I just put a kabocha in the oven, did you ever make yours? I feel like it must have been a disaster or you haven’t made it yet if it never graced the blog. It’s kind of a time commitment to chop and cook that thing. That picture of you sleeping in the little bed is super cute. You needed it! I’ve been taking more rest days and just resting more in general as I’m learning more about how the body processes stress through my paleo research.

      STUFT Mama says:

Um, I’m embarrassed to say it’s still in my fridge. What should I do again? Just roast it? Dang it. Maybe tonight or tomorrow. And um, yes, can you please teach me what you’re learning through your Paleo research? I need to know more about that. Hugs!!!

      • Well, I don’t think it’s supposed to be in the fridge, lol. You just chop it up into wedges and roast it like you would with a butternut. You can eat the skin if you want, I do. Oh I was going to tell you because I know sometimes you listen to podcasts when you run, a good paleo one is the Balanced Bites podcast. It’s good for newbies and people who aren’t scientists 😉

Woman you crack me up! I love your posts and high-fives to pumpkin at Costco. I wonder if they have it here in NJ…Totally going to have to find this out ASAP! I’ve also been digging eggplant pizzas. So easy, versatile, and YUMMY. Have a beautiful Wednesday! xoxo

I need a do over of my crazy sad eating habits!:p I just can’t stick with a healthy regimen!!! How did you do it?

    • 14.1
      STUFT Mama says:

Jessica- Do not give up. It’s a long slow process and I still have my days. Distraction is key for me and staying away from all processed foods! You get a do over! He he.

glad you found some where to rest 🙂 you deserve to put your feet up!!

    yay for pumpkin season

  16. 16

You are awesome and napping in kids beds is the best place!!

  17. 17
    Aleesha says:

Love the pictures! The napping pictures make me think I need a nap right now. Kitty on the stovetop is always priceless. I always save Kitty’s picture to my computer, and send them to my boyfriend. We are cat people and just adore Kitty! Your recipe pictures are awesome too. I must try almond walnut cookie. I am already a big fan of the eggs and cinnamon combination. Thanks for a great post as always. XO

I don’t know why, but the boys look so grown up in the photos today – they are getting so big! Is it weird to say that about kiddos I haven’t actually met yet? Oh well! 😉

    Lisa says:

Do-over days are mighty fine in my opinion! Take ’em as you need them! Ha ha, the picture of you in the bed is too funny. You must have been pooped to fall asleep in the tiny bed. I think I need to make eggplant pizzas now! Yum!! Get in some rest friend!

  20. 20

Finding rest is so important. I’ve been feeling overwhelmed the same way… gotta prioritize! I’m ready for a do-over month, last month was kinda stressful. This month I’m going to find the peace!

    Sable@SquatLikeALady says:

I am tired FOR you! You have some hectic days!

  22. 22

Hahahahaha! I’ve fallen asleep MANY times in the girls’ beds…sometimes you just need the rest! 😉

And my youngest, Maddie (3), has been caught sleeping on the floor next to my bed nearly a dozen times, on her floor in front of her door, and in the hallway. My oldest never did that!! Kids. lol

  23. 23

that cooke looks fantastic! love the ingredients.

  24. 24

It’s funny that you mention sleep and being more in the moment…those are both on my fall bucket/goal list. I am trying so hard to get to bed earlier, but it’s difficult to find time to get everything done! Getting more sleep and having more hours in the day to get everything done seems to always be the story of my life! 🙂

    Tracey says:

lol..no worries!! BTW: Where do you keep your almond meal once opened?
