Tuesday Talk- Playing Favorites


Happy Election Day!

Well friends, I’m feeling a little under the weather this morning. The fact that I was up super late writing that final Runner’s World recap post the other night on top of the time change might have something to do with it. Ugh. Never underestimate the importance of sleep.  By the way, why don’t toddlers get the message we get an extra hour to sleep in? I just don’t understand.

Okay, here’s a few of my favorite things from the past few days. I thought I’d share before I’m on my way to power through the day.

Favorite new way to make eggs- bake them.

Yeah, instead of microwaving them or doing them on the stove I’ve been baking them in a ramekin sprayed with cooking spray.


I don’t keep track of time (shocker). I should though because I keep overcooking them a bit.  I want the yolk to be runny, but I haven’t succeeded yet.

My FAVORITE thing I did yesterday was to bake them in a kabocha squash.


Um, yeah. That was AMAZING!!!! Definitely going to be happening again really soon. I can get a specific recipe up if you want. Let me know. Mmmmm…… I’m now a little upset that I don’t have any more kabocha squash in the house. We may have to make an emergency stop today.

My new favorite cooking spray is the one from Spectrum that I found at Sprouts.


This next one is an old favorite, but a goody. My favorite way to sneak in spinach for they boys is in their gourmet green pancakes.


Favorite way to start off my week- teaching a spin class.


Favorite song on my current class playlist- Party Rock Anthem.

Favorite way to motivate myself to run- try out some new shoes.

I’ll review them in full once I wear them a few more times. I do have to say though that I feel pretty cool when I’m sporting them.

Favorite way to spend my morning- with my boys and watching their tricks.


Favorite thing to do with Halloween candy- sell it to the dentist for a dollar a pound.


We walked away with $4 and two organic apples.

Favorite way eat creamy dreamy ice cream– add a scoop of GNC vanilla egg protein powder to the mix and pile it as high as possible in an almost empty jar.


Um, yeah. That was pretty awesome last night.

    My favorite thing, when my grandkids run in the front door, arms open wide, yelling “Gigi!” If I thought Momma was a precious word, Gigi just rocks my socks off!     I love baked eggs! They are really goo with cottage cheese and/or veggies mixed in too. I just bought the coconut oil spray last night! Total life-changer.

    Putting eggs in a kabocha?!?! That is pure genius and combines two of my favorite foods. I always end up eating an entire squash in one meal, so I should just avoid the time spent chopping it up and roast it in halves instead! I need to get my hand on some of that coconut oil spray as well 🙂

    My favorite thing right now? I am actually looking forward to doing nothing tonight but enjoying supper with the family and then watching the TV and results come in from the election. 😉 Is that weird? ha!

    Ugh, I’m fighting a cold that just won’t go away right now! Jay was the originator and now I call him germ boy. I need more compression socks in my life! I’m so addicted to them! I hope you feel better friend!

    I’m really into Choco-cado shakes right now. Take 1 cup coconut milk, 1 avocado, 2 T cocoa, 1 t. cinnamon, and sweetner that you like and put in a magic bullet and blend until smooth. Comes out like soft serve ice cream!! Sweetner wise, I always like to use a couple of different things. In my shake I use 2 truvias, 1 t. SF vanilla torani, and a few drops of liquid splenda.

      Oh gosh- I talk about it all the time on here so just stay tuned. I’m a bit of a volume eater, but try to stay away from processed foods as much as possible. I have not been eating that well lately though. oopsies.

    Feel better soon! Get some rest:) Loving your kabocha and egg combo! I eat kabocha and egg all the time for lunch, but never thought of combining the two! Genius. I’m also a little jealous you can still eat your ice cream, its too cold here now to think of that.

    just made these amazing sweet potato, quinoa & wild rice patties for dinner last night! found them on the Eating Bird Food blog. i was inspired by your sweet potato postings to get sweet potatoes at the store and find a new creatation this weekend: and they rocked! i also checked out the socks website- i love your site but it might be bad for my wallet (although its good for my health & fitness so that evens out right??!!)

    Favorite thing: roasted butternut squash (cube and roast at 400 till golden) tossed with scrambled egg whites, goat cheese and topped with organic cherry raspberry preserves. Sounds really odd, but the sweet/savory thing is just awesome with the tang of the goat cheese!!

    That “eggs-in-kabocha” creation is very exciting. Today my favorite thing is BONES! I wrangled up 3 organic femurs which I make broth out of. I love when I get stocked up on bones because I always have homemade bone broth on hand, use it everyday!

    My New Balance 1400 lightweight running shoes! I love them! First running shoe I have had in a long time that fits my narrow feet perfectly! They carried me all the way through the MCM. And, I’m heading to Whole Foods tomorrow and I sure hope they have the kabocha squash. Everything you do with it looks so yummy!!

        Oh, I love them all! I love baked butternut with butter and brown sugar. I love squash soup. I love looking at all your pictures to get ideas! We belong to an organic veggie coop, so we get around 15 pounds of veggies per week from June through Thanksgiving. It’s a godsend up here (in upstate New York, where the growing season is short, and lots of veggies get shipped in). I have 4 delicata squash in the frig and tons of turnips also. The peppers were great this year. Have been putting away hot peppers for months. I grow them and also get them from the coop. Eat them with everything!! Your twins are adorable, by the way!! I’m a new grandma, and a 40 year running veteran, so loving the kiddie shots and running shots!! Haven’t tried spinning yet though.     I would love to see your baked egg recipe! I currently microwave mine, but I haven’t thought to bake them. Also, what is your favorite way to prepare Kabocha squash? I bought one yesterday for the first time and aside from cutting it up and roasting it, I was wondering what other ways I can prepare it.

    My current favorite thing is drinking home made pumpkin pie lattes every morning!

      I just like to roast kabocha. Slice and roast. I’ve been spraying it with coconut oil spray and sometimes sprinkling with cinnamon. Mmmm… Then topping it with nut butter of course.
