Playing it Cool- My Men and a No Grain Pumpkin Microwave Muffin

 

Nice freaking title. Ha.

I had a little break from the computer for a bit yesterday. Not by choice, but because my laptop charger decided to bite the dust. I have to admit though that I didn’t rush out the door to purchase a new one right away. It was a welcome little excuse to not write a post and get some other things done around here (or start some anyway).

Hmm…. I’m not sure how long this new adapter is going to work though. It’s not charging my computer, but at least it’s letting me work while plugged in.

Beavis. I hate technology.

 

Random cuteness:

We’ve been struggling with getting the boys to stay in bed all night. I told Judah that he need to stay in his room until it was light out and then he could come wake me up.

Well, that little angel listened to Mommy, and right at 6:00am I heard a little voice by the side of my bed, “Mommy, can I get up now, it’s light outside.”

Sweet, sweet boy.

The same guy also said these exact words a little later in the day though when I was getting dressed.

“Mom, I think you need your Spanx.”

I’m not even kidding. STUFT Daddy heard it too. I had to laugh. I also had to tell him that my Spanx were already on. Always.

So….

Yesterday started with this little mix.

My GNC Women’s Wellness Vitapak, coffee with a little Stevia and a spinach, pear, egg white and cinnamon bake.

Yeah. Baking eggs is my new thing. Less dishes. Less mess. More smiles.

I wrapped it in a Flatout with a little coconut oil and scarfed it down on the way to the gym.

Workout:

Taught a spin class.

Ran 6 miles on the treadmill.

 

Here’s what kind of footwear I haul into the gym Wednesday mornings just in case you care.

Slippers in the car, spin shoes for class, Mizuno Elixirs for a little treadmill action while watching Kelly and Michael.

 

 

Yesterday was our designated “family day” for our staycation.

We had a great afternoon/night together, which actually was pretty much the same as our last staycation family day (minus the bike ride). Oh and yeah, I just clicked on my own link and realized I even wore the same sweatshirt. Classy.

Here’s a couple pictures from our family time.

Heck yes, it started with Starbucks. Heck yes, the boys even got a special treat.

 

Heck yes, I’m the luckiest lady in the world to be blessed with these fine men.

After our afternoon excitement we ended up at BJ’s for dinner, but I played it cool and kept my phone away.

 

I played it even cooler at home when I whipped this little no grain microwave muffin together once all my men were in bed.

Since the weather has gotten a bit colder, (yes, even in California, I’m very sensitive to cold weather) I haven’t really been craving creamy dreamy ice cream like I usually do at night. I’ve been experimenting a bit just because I always need a little something sweet to finish off my night.

Last night it was this little creation.

It’s a variation of the STUFT Coco Almond Microwave Muffin, but with pumpkin and a little extra spices (similar to the original Pumpkin Microwave Muffin).

It’s a must try if you ask me.

It’s good enough to just eat plain.

But sometimes, if you’re like me, you need a little frosting.

Coconut Cream Peanut Protein Frosting

2 tablespoons PB2 (12 g)

1 tablespoon coconut flour (7 g)

1- 2 tablespoons GNC vanilla egg protein powder 

nondairy milk until get desired consistency

 

Mix all dry ingredients together. Add a little nondairy milk (or milk of choice) and stir. Continue to add a little milk and stir until get desired consistency. (Yes, I didn’t measure. I was lazy. It was late.)

But……. this muffin was delicious.

    The egg bake looks scrumptious! I will have to try that out.

    I have Pearl Izumi shoes for spin, they are the best! Love how I can come to the gym in comfy flats or flip flops and then change into my shoes as I am having my class warm up :-)

    It’s the perfect time of year for pumpkin microwave muffins! I’ve been eating them religiously and topping them with anything and everything, but ALWAYS with some sort of nut butter. Obviously… Glad you had a wonderful day with the family.

    Awe, what a beautiful staycation with your family!! Love this post full of love! Yum, that pumpkin muffin looks amazing! Definitely something I’d eat before bed. I always eat my protein muffins with coconut flour frosting and peanut flour frosting separately, but I like you mixed the two together. Totally doing that tonight.

    It sounds like you had a great day with your boys. Staycations are so needed! I love your recipe and can’t wait to try it, since I finally have some more pumpkin in our house! Also, I like your egg bake. I wouldn’t think to put pear in it, but I’m going to have to give it a whirl!

    that muffin looks really good! have you seen an alarm clock that you can set to change colors when the boys are allowed to get out of bed? my girlfriend had to get one for her toddler. i think it’s helped!
