Why hello friends.
Happy Friday.
Um, yes, Thanksgiving is less than a week away. I’m just not okay with that. As usual I have a million things I feel like I need to do before the holiday gets here. Eek.
This time of year is difficult. It’s dark earlier, there are a million things to do for the upcoming holidays, it’s cold outside, everyone seems to be getting sick, there’s lots of food everywhere…. you know, the list goes on.
Well, I feel like it’s really important to make sure to keep health a priority, especially this time of year. Sure it’d be great to sit in sweats and eat a whole bag of chips, but let’s just not do that this year, okay?
I won’t if you don’t. Deal?
Instead I’ll just keep experimenting with my sweet spaghetti squash concoctions like this one today.
Um, yeah. Magnificent, right? You like that sweet egg white and spinach thing there too? Mmmm hmmmm.
Anyhoo….. while I experiment with all kinds of squash (favorite at the moment is kabocha squash),
I’ve also been experimenting for the boys.
The other day I made them the best green berry pancakes.
These are not just the normal green gourmet green pancakes,
they’re Super GNC Green Berry Pancakes.
Here’s how we made them. We took Coach’s Oats multigrain pancake mix and followed the directions on the bag. We blended the spinach with the egg and the water that went into the mix before combining (in the Magic Bullet).
Then we added a serving of GNC SuperFoods Whole Foods Blend to the mix. We usually use it in drinks, but we thought we’d give it a go in our special “super” pancakes.
That was a really great idea.
Yep, the pancakes were marvelous. They had a wonderful berry flavor and smell and were hit.
You know what else was a hit just yesterday?
This super short three minute core workout.
Three minutes. Three moves.
Super.

Don’t mind the mess or the toddler commotion. I do what I can around here and I’m just hoping some of you can relate. Ha ha.
I also hope you can find three minutes somewhere this weekend to do this. No equipment necessary, just a smile and a desire for a stronger core.

I tried Kombucha squash after reading about it on your blog and I am obsessed!! I am going to eat squash until the end of timeeee. I sprinkled nutritional yeast on top. I highly recommend it! 🙂

I’ve been experimenting with squash lately, too. Last night I roasted delicata squash and it was delicious. Next up, I’ll be making kabocha squash. Love the video and I can definitely relate to the commotion! Have fun on that special date with {Bob?}!

Too funny that my twin boys have those exact same blue and red giant toy balls!!! Love them because they are the same (so no fighting! Well…less fighting anyway) yet different (so we’re not trying to guess whose ball is whose!) Haha! And I get the plastic bat to the head anytime I am on the floor too. Glad to know it isn’t just around here.
