Monday Night Musings and a Muffin Video

 

Workouts:

Morning- Taught 45 minute spin class

Ran 4 miles on the treadmill

Lovely.

 

Sometimes getting your shoes on and actually getting started on the treadmill is the hardest part. Luckily I packed my new Mizuno Inspire 9’s for a little extra motivation. I’ve only ran in them twice, but I’m loving them so far!

It felt so good to workout hard yesterday after my rest day Sunday. Rest and recovery is important. My coach stresses this. When you need to rest, do it.

Okay, so I love giving things away every day and it was my bright idea to do so, but I feel a little disconnected because I don’t have time to respond to you like I want to.

So…..

Here’s just a few thoughts from Monday night and a microwave muffin video if you don’t mind. I’ll be back to the next giveaway later today.

 

Jessica is my new best friend. She sent me these bags of Starbucks espresso the other day. I’m in heaven.

This Yankee Candle is pretty awesome.

I actually love a lot of Yankee Candles, but the holiday ones are more fun for some reason even though Joaquin thinks it’s his job to blow out candles every time I light them. That’s just darn annoying.

 

I’m so stinking excited I have my deodorant in the house again. It’s not a good idea to let yourself run out of deodorant when your profession is teaching fitness classes. Ha. This Secret Clinical Strength is my favorite.

It’s little more expensive that others, but it works. I’d been using some random Old Spice deodorant for the last few days and it was just not cutting it.

I only shave my legs once a week. Just thought I’d tell you that too.

 

I can’t wait to try out this tank top and these new BOSE sport headphones I got the other day from Reebok.

I roasted a delicata squash the other day to try something different.

I just cut it in chunks and roasted it with coconut oil spray.

I wasn’t that impressed. Maybe I didn’t do it right or something. Kabocha squash is better in my book.

 

I had the biggest cinnamon sugar breakfast STUFTwich for breakfast yesterday.

It barely fit on the plate. I added a little spinach for fun. Egg whites, coconut oil, cinnamon, sugar free raspberry jam and spinach. Good combo.

I also had the biggest bowl of random roasted vegetables for a late night dinner.

I followed that up with this microwave muffin that looked like, well, you know.

Well, I made a little video the other night on how to make this muffin. I’m too lazy to edit it, but at least we can feel like we’re hanging out in the kitchen a bit while the boys sleep. He he.

Dark Chocolate Microwave Muffin 

Hey- it’s just like we’re hanging out together in the kitchen. How fun!

 

I actually subbed in applesauce for the pumpkin in the recipe for the muffin last night. I wasn’t happy with my photo above, so I doctored it up a little with some PB2 mixed with the leftover applesauce (very similar to goo).

    I like both the delicata and kabocha squash, but I found the delicata to be a bit sweeter. Maybe you didn’t have a very good squash. Glad you found your socks….that would have been a very uncomfortable run!

    I had delicata last night too! I really like it though. Maybe you got one that’s less flavorful? I’ve been roasting mine with onions and fresh herbs. Love the looks of that muffin!

    Delicata is okay but Kabocha always reigns supreme! Word to the wise, DON’T try Turban squash! I picked one up at trader joes thinking it would be somewhat like a kabocha because of the thick skin, but it has no flavor and the skin was seriously inedible. So I guess I am going to stick to my beloved kabocha from now on 🙂

    I definitely prefer the more hearty squash varieties. I find that some of them taste watery for whatever reason. I’ll still eat it though 🙂 We even got Lincoln to eat some butternut squash the other night because he thought it was sweet potato!

    How in the WORLD do you teach that many classes a day?!?!?! I teach two on Monday and Tuesday (back to back) and just one on the other days (except Saturday) and that feels like a lot to me! The most I’ve ever taught in one day was 3, and I about died. (Two Spinning, one abs and Two Bodypump and one spinning another time).
    I also can’t teach without full intensity. I know that a lot of other instructors are able to “fake it” when they need to, and I just haven’t mastered that. 🙂

    That squash looks awesome!! I saw acorn squash in the store last night and thought about trying it. I couldn’t find anymore kabocha, boo! I have been hearing lots of good things about coconut oil too!!

    I really like delicata squash with sweet stuff: cinnamon, nutmeg, greek yogurt with vanilla (or gingerbread SF syrup) is great! I add half a steamed fuji apple and dinner just became dessert. It isn’t as full flavored as kabotcha but we get them more often here so I have learned work with them. Its also nicer to cut my squash with a regular knife & not a machete like I have to use on the kabotcha!

    OMG! I almost ordered that jug of egg whites! It’s crazy all that you can put it in! We don’t have the space right now though. I love that deodorant too! Have you and the boys taken a trip to your local farmers market to see (buy) all the squash yet??

    Ha, I shave about once a week too! Blonde hair is good for something right? Plus I’m just not that hairy, lol..
    Love most any kind of squash and doctor it up with spices and nutritional yeast. Yum! Your pics make me so hungry no matter what time I look at them.

    oh girl, you really do make me laugh with your random musings. Between these posts and your tweets about not shaving and running out of deodorant, I feel pretty close to you. Oh and I do similar things in regards to finding socks AFTER your workout. I’ve learned to stuff them in my shoes.

    Kabocha is always the best in my books. No other squash can compare. Especially with coconut butter….yum! In fact, I’m eating that now:) I need to make that muffin asap, even if it looks like doodoo. Why are ugly foods the best tasting?

    I had a chocolate microwave protein muffin last night with peanut butter chia frosting! I love those! Confession, I shave every day. I can’t stand prickly hairs on my legs!

    I love Delicata squash. I sccop them out and roast them and then put slices of veggies and feta cheese n them and mike a bit! It’s like making boats out of them!

    I’m partical to kabocha and butternut squash. I haven’t had much luck with delicata either. You microwave muffin looks delish! I thave yet to make a good microwave muffin…either I over cook it, or the texture is too gummy. I have to keep experimenting with it!

    I’ve been LOVING the delicata squash (tossed with a little olive oil, salt, pepper and thyme). Sadly, they didn’t have any when I went to get my 3rd squash this week. I think it is over for the year out here 🙁
