Oh.. birthday boys. Holy smokes they are turning three. Not okay.
We had one heck of a day today.
Someone insisted on wearing his cape out and about.
He must have gone up to at least 5 different people during our errands and said “Hey, look at my cape.” I’m totally not kidding. Complete strangers. Yep. This guy is not shy. He totally knew how to show off the cape too.
I made the mistake of mentioning to the boys that we might be able to feed the ducks, so in order to avoid a complete meltdown in the car we had to make a quick stop at the park.
Oh yeah, Judah had his cape too, but he refused to wear it and just wanted to carry it around everywhere. Um, okay.
I didn’t want Joaquin to feel like he was the only one dressed up so I wore a little fun outfit of my own for my run.
I figured I only have a couple more days to wear my special Pro Compression holiday socks before it might get a little weird. I paired them with my old Mizuno Elixirs. I’m trying to put a few more miles on them because word on the street is that there’s a new Elixir coming out very soon! Ahhh!!!
Then to Costco.
I just don’t understand why STUFT Daddy doesn’t like shopping with us. It’s so weird, isn’t it?
Nothing new and exciting at Costco, but they did have our favorite Coach’s Oats Multigrain Pancake mix back.
I sported the same socks but different shoes (my custom Reebok Nanos) tonight at the gym.
Ha. Then dressed myself up to run a couple errands on the way home.
We needed just a few necessities.
The check out boy finally commented on my kabocha squash frequent purchases. Here’s what he said. “What do you do with all these? You’re like the only person who comes in here and buys them.”
Hmm….. I’m 99% sure all the employees at that particular Smart and Final talk about me.
In case you’re just dying to know, dinner at 10:00 pm tonight was some roasted cauliflower, roasted broccoli slaw, mushrooms and chicken with marinara, a jalapeño and fresh basil and a cheese less sandwich.
It was followed by a Trader Joe’s Soy Dreamy sandwich and a See’s Candy Christmas Mint sucker that took the longest time ever to eat.
Moving on to that microwave English muffin.
I may not have baked my boys a birthday cake yet, but I do have a box of cake mix in the pantry and some cheap Toy Story toppers I picked up tonight. We’ll see what I can pull off tomorrow.
What I did do though is make this awesome Paleo friendly microwave English muffin.
And I turned it into one heck of a ginormous grain free breakfast STUFTwich.
Oh man. Yeah.

This was inspired by Tina’s recipe that I stumbled on early this morning.
I measure everything in grams in the recipe just because that’s how I usually throw things together here using my kitchen scale. The less dishes and less spoons I have to wash, the better. Love that darn scale.
Here you go.
Grain Free Microwave English Muffin
makes one muffin
10 grams almond flour (about 1 1/2 tablespoons)
14 grams coconut flour (2 tablespoons)
1 teaspoon melted light butter or margarine
pinch of salt
1/4 teaspoon baking powder
2 tablespoons water
Mix all ingredients together in small bowl.
Pour in separate microwave safe bowl sprayed with nonstick spray.
Microwave for 2 – 2 1/2 minutes.
Calorie count for this muffin (based on the specific ingredients used) is about 210 calories.
Here’s how it went down this morning.
I mixed it all up.
Poured it in my microwave egg cooker (while thinking that I hope it’s safe to microwave plastic).
I used this Smart Balance Light Spread for the light butter or margarine. (Smart Balance Light is our favorite over here.)
After 2 minutes and 33 seconds I had this beauty.
Isn’t it cute?
Then I sliced it and lightly toasted it.
Doesn’t it kind of look like a sombrero?
I ate that thing so fast (weird looking egg whites and all).
Okay. Time to go to bed. I’m hoping to fit in an early run so the rest of the day can be all about the boys and their birthday! Yay!
We have some fun family plans. We may have to add a stop to pick out some extra special cupcakes though if I don’t get around to making a cake. Oops. Mother of the year.
