Birthday Boys and That New Grain Free Microwave English Muffin



morning- 5 easy treadmill miles

evening- Taught HIIT class and strength training class at the Y


Oh.. birthday boys. Holy smokes they are turning three. Not okay.


We had one heck of a day today.

Someone insisted on wearing his cape out and about.

He must have gone up to at least 5 different people during our errands and said “Hey, look at my cape.” I’m totally not kidding. Complete strangers. Yep. This guy is not shy. He totally knew how to show off the cape too.

I made the mistake of mentioning to the boys that we might be able to feed the ducks, so in order to avoid a complete meltdown in the car we had to make a quick stop at the park.

Oh yeah, Judah had his cape too, but he refused to wear it and just wanted to carry it around everywhere. Um, okay.

I didn’t want Joaquin to feel like he was the only one dressed up so I wore a little fun outfit of my own for my run.

I figured I only have a couple more days to wear my special Pro Compression holiday socks before it might get a little weird. I paired them with my old Mizuno Elixirs. I’m trying to put a few more miles on them because word on the street is that there’s a new Elixir coming out very soon! Ahhh!!!

So I wore the outfit complete with my Reebok CrossFit tank to the gym. (Oh and you better believe I had my Handful bra pads in that tank top).

Then to Costco.

I just don’t understand why STUFT Daddy doesn’t like shopping with us. It’s so weird, isn’t it?

Nothing new and exciting at Costco, but they did have our favorite Coach’s Oats Multigrain Pancake mix back.

We’ve made some good recipes with that stuff. Oh and hey, I just realized that I made the boys special gourmet green pancakes for their birthday last year. Aww….. that post makes me smile.



I sported the same socks but different shoes (my custom Reebok Nanos) tonight at the gym.

Ha. Then dressed myself up to run a couple errands on the way home.

We needed just a few necessities.

The check out boy finally commented on my kabocha squash frequent purchases. Here’s what he said. “What do you do with all these? You’re like the only person who comes in here and buys them.”

Hmm….. I’m 99% sure all the employees at that particular Smart and Final talk about me.


In case you’re just dying to know, dinner at 10:00 pm tonight was some roasted cauliflower, roasted broccoli slaw, mushrooms and chicken with marinara, a jalapeño and fresh basil and a cheese less sandwich.

It was followed by a Trader Joe’s Soy Dreamy sandwich and a See’s Candy Christmas Mint sucker that took the longest time ever to eat.


Moving on to that microwave English muffin.

I may not have baked my boys a birthday cake yet, but I do have a box of cake mix in the pantry and some cheap Toy Story toppers I picked up tonight. We’ll see what I can pull off tomorrow.

What I did do though is make this awesome Paleo friendly microwave English muffin.


And I turned it into one heck of a ginormous grain free breakfast STUFTwich.


Oh man. Yeah.

Are you ready for it?

That’s just silly. Of course you are.

This was inspired by Tina’s recipe that I stumbled on early this morning.

I measure everything in grams in the recipe just because that’s how I usually throw things together here using my kitchen scale. The less dishes and less spoons I have to wash, the better. Love that darn scale.

Here you go.


Calorie count for this muffin (based on the specific ingredients used) is about 210 calories.


Here’s how it went down this morning.

I mixed it all up.


Poured it in my microwave egg cooker (while thinking that I hope it’s safe to microwave plastic).


I used this Smart Balance Light Spread for the light butter or margarine. (Smart Balance Light is our favorite over here.)


After 2 minutes and 33 seconds I had this beauty.


Isn’t it cute?

Then I sliced it and lightly toasted it.

Added my microwaved egg whites and sugar free raspberry jam and made this marvelous new breakfast STUFTwich.

I ate that thing so fast (weird looking egg whites and all).



Okay. Time to go to bed. I’m hoping to fit in an early run so the rest of the day can be all about the boys and their birthday! Yay!

We have some fun family plans. We may have to add a stop to pick out some extra special cupcakes though if I don’t get around to making a cake. Oops. Mother of the year.

    My birthday is in August and one of my favorite birthday cake was a Strawberry Shortcake. Perfect for that time of year!

      Yes! I LOVE the new Inspires!!!! I’ve never tried the precision. I’m guessing that if you like the elixirs that you should stick to stability shoes. The Inspires are my new favorite! 🙂 Happy running Adrienne!

    Awww Happy Happy Birthday to the boys! My sister would go up to complete strangers and ask them to buy her things like gum. LOL. That muffin looks incredible. I wish I had some coconut flour right now so I could make that for my sister (she’s staying with me as her power is out due to our crazy snow)

    Love the look of the muffin! 😉 I also saw it on Tina’s site and have been meaning to make it. I sure hope I can find the Coach’s Pancake mix at my Costco.     Happy Birthday to your little men! I can’t believe how big they’re getting! Capes are awesome too! My favorite birthday cake is angel food cake with seven minute icing. It’s so fluffy and dreamy!

    On the subject of squash…the people at the grocery store make more comments to me when I make my squash purchases. Seriously, I don’t need the judgement! My buttercup squash addiction has gotten a little out of hand, but I’m aware of this and I’m dealing with it…by eating as much as I can before the season is over!

    I can’t believe they’re 3!! My favorite birthday cake growing up was spice cake with cream cheese frosting. Maybe not so traditional, but tasty! All those kabochas, lol. So expensive! I need to learn how to grow them. A few days ago a Whole Foods employee asked me “So you come in every morning huh?” Um, yeah… In my gym clothes too looking awesome I’m sure.

    I am not a fan of English muffins. They are too dry, or something, for me.

    My favorite birthday cake is chocolate cake with white frosting. Yum, yum.

    Glad to hear the Pancake mix is back at Costco! Going to go get some soon!!! My favorite cake?? Um – any cake is the bomb, but I love carrot cake with cream cheese frosting. I used to buy the boxed stuff and mix it with just hot water, micro for 45 seconds and eat it with a bunch of cream cheese on it to get my fix. But I am trying to be healthier and a friend told me that I have to stop eating cake mix to reach my health dreams. Ha!! I am a lazy baker and a sugar hound. Thanks for inspiring!!!     Yes today is a lovely day to have a birthday, but I must say I am almost a half century older than your little ones on my birthday today so I’m sure they are more thrilled than I am! Hope theirs is very fun-filled. I still like a plain white cake–not much of a sweets person. I have a ton of squash I need to cook up today–probably steam– or it will not be fit to eat.     Happy birthday to your beautiful boys! At least now the terrible twos are over 😉 We are total kabocha twins. I bought 10!! at the store and the lady was so confused ha. She always asks if I work for the restaurant and I have to remind her I don’t and that I need to get them before the restaurant people do, duh. She calls me the squash lady now…it’s pretty fun times. The english muffin looks great, too bad I found out I’m allergic to eggs. Isn’t that the worst?! I eat them so much, so I guess I developed an allergy. I was pretty bummed when I found out.     Wow! That’s one heck of a breakfast sandwich. Your boys are so cute, Love their capes…and hey, You can bust out the holiday socks for Valentine’s day….slap a felt heart over the green logo on the side and call it a day. I’m resourceful, lol!
