Oh, why hello again so soon! Obviously I can’t stay away and have a ton of things to write about. Holy longest title ever on a post. Ha ha.
5 mile treadmill run and taught a couple classes at the Y.
I dressed the part as one of my new year things I’m trying out. I’ve accepted that although I don’t make that much money teaching classes, it’s my job for now so I better dress the part. I tried to put myself together with a little Lorna Jane outfit and even had to match with the jacket and shoes.
9 mile treadmill run at the gym with a little Jeff Probst talk show and TMZ entertainment. I don’t know how long it took me, I was distracted by the quality TV shows.
I totally had a weird feeling yesterday as I was driving to the gym. Not sure if you were a STUFT reader a year ago, but here’s what happened. Ugh. Thank goodness this year is off to a much better start so far.
So much better. In fact, I’m actually giddy to talk about all these random things I’m loving right now.
In no particular order the current things I’m loving are……
Wild animals in our house in the morning.
Some seriously cute firemen.
The chance to hitch a ride with cute firemen.
Oh and even getting to impress these firemen with my teeter-totter skills.
This teeny tiny fork ($1.99 at Bed, Bath and Beyond).
I know, how cool is that?
Obviously roasted kabocha squash that is that much better when eaten with the teeny fork.
Hmm…. not loving the looks of my nails. I better do something about that.
These shoes. I love everything about them. I swear Mizuno just keeps making them better and better. They are pretty, bright, comfortable and durable.. All in one. Ahhh……
Seriously, how cool are these new Elixir 8 shoes?
I can’t even explain how excited I was to get these in the mail the other day. Elixirs are the only shoes I race in (for the past 5 years) and I am in LOVE with these new ones.
If you’re looking for a little motivation to go for run, try some new shoes. I couldn’t get on the treadmill fast enough to try these out yesterday.
Of course I picked out those particular Pro Compression socks to match. He he.
Today I wasn’t as motivated, but the shoes were calling my name yet again.
They’re just as comfortable, if not more so that the Elixir 7 shoes. They feel wide at the front, which is good for my wide, flat feet and provide just the right amount of support for faster, longer runs.
I’m keeping them safe in the box when I’m not wearing them and have been sporting slippers to the gym so I don’t get these new little beauties dirty. He he.
And…… well, since I have some new racing shoes and all I decided it was finally time to update my races page. I also had to make sure I have a full racing schedule ahead to sport these fine shoes.

I’m still looking into trying to get to San Luis Obispo Marathon, San Diego Rock ‘n’ Roll Marathon and The San Francisco Marathon, but I’m not sure I can swing the expenses. If you happen to have any connections or anything, please feel free to share. He he.
Um, and yeah, I decided it was time to experiment and add some yogurt back into my diet. The jury’s still out on whether or not my tummy can handle it, but I forgot how much I love Chobani. I also forgot how much fun it is to eat it in an almost empty peanut butter jar with a Vitatop and some Love Grown Foods granola.
And why yes, I get really hungry after a run. Ha ha ha.
Um….. and yeah, before I go I have to share a little something something with you. I showed you my little muffin experiment the other night and said I had to test it out a few more times. Well, that I did.
Well, I’m ready to give you the recipe for this little garlicky guy.
This grain free garlicky guy to be exact. I adapted this from the microwave English muffin recipe.
Grain Free Microwave English Muffin
makes one muffin
10 grams almond flour (about 1 1/2 tablespoons)
14 grams coconut flour (2 tablespoons)
1 teaspoon melted light butter or margarine
1 egg (or 2 egg whites)
pinch of salt
1/4 teaspoon baking powder
2-3 tablespoons water
for the middle:
butter spray or light butter spread
nutritional yeast or parmesan cheese
Italian seasoning (optional)
Mix all ingredients together in small bowl.
Pour half of the mixture in a microwave safe bowl sprayed with nonstick spray.
Spray the top with butter spray and sprinkle garlic, garlic salt, nutritional yeast (or parmesan cheese).
Cover with the other half of the mixture.
Microwave for 2 – 2 1/2 minutes.
Lightly toast in toaster oven. (optional)
