This family friendly recipe today is really a winner. It not only will impress a crowd, but there’s a little Silk video to go along with it as well. Fabulous, yes?
I’ve been making our good old Hooligan Pancakes lately for some easy breakfasts. There’s just something about breakfasts that come right out of the oven on cold mornings. There’s also something about eating them while you’re still in your pajamas, not that we do that very often around here. Ha ha.
These pancakes are such an easy breakfast treat. I love that I can just whip them together in about 5 minutes and then put them in the oven. The boys love that they puff up like crazy while they’re cooking and because, well, they’re just darn delicious of course.
The other week I was craving some serious apple and cinnamon flavor so I thought I’d experiment a little with the original recipe. My little experiment turned out even better than I thought.
These had it all- warm apples, cinnamon, buttery taste and a hint of almond.
Um… yes, the boys and I finished off the entire recipe all by ourselves. I’m okay with that though because these pancakes are pretty darn healthy and we couldn’t save just one little square. Who does that?
I know I talk about Silk Pure Almond® Unsweetened Vanilla Almondmilk a lot. I can’t help it since I go through the stuff like no other. I use it in my daily lattes, café Americanos and mochas, but you can also sub it in for regular milk in pretty much any recipe. I do this on a regular basis also and I just might happen to know it does really well with microwave muffins. He he.
I used Silk Pure Almond® Unsweetened Vanilla Almondmilk in the recipe for these. By using almondmilk instead of 2% dairy milk that the boys usually drink, it saved 46 calories per serving.
I don’t like to be bossy, but really, you need to make these.
I’m telling you, the family will be impressed and if you’re anything like us, there won’t be any of these leftover. He he.
You can easily double the recipe to try to avoid that situation, but I’m not guaranteeing that will work though. These baked pancakes go quick.
Cinnamon Apple Hooligan Pancakes
Serves 2-4 (2 at the STUFT house)
¼ cup light butter or margarine
½ cup Silk Pure Almond® Unsweetened Vanilla Almondmilk
3 eggs (or ½ cup egg whites or egg substitute)
½ cup whole wheat flour
¼ teaspoon almond extract
1/8 teaspoon salt
1/8 teaspoon cinnamon
1 tablespoon brown sugar
1 medium apple, cut in small chunks
Directions:
Preheat oven to 400. Melt light butter or margarine in 2 quart or 9×9 glass dish in oven.
Mix the almondmilk, eggs, flour, almond extract, salt, cinnamon and brown sugar in medium bowl. Add apple chunks.
Pour mixture over melted butter and bake in oven at 400 for 25 minutes.

*Recipe note- If you use egg substitute instead of real eggs, you save 80 calories and 7 grams of fat per serving. You can also decrease the amount of light butter if you’re looking to save additional fat and calories.

I guess it doesn’t really matter when these delicious pancakes are around.
I’m guessing it may have something to do with these little hooligans though.

I tried it with coconut oil, but only used half the amount and I didn’t like it as much. Let me know though if you do nad how it comes out.
I’m so excited that I found Silk Almond Milk this past weekend! I didn’t buy it yet, because I have some other stuff to use up first, but at least I know now where I can get it.
Also, had to tell you that I tried making your Cake Batter crumbles on Sunday . . . holy cow–delicious. I loved it!! What a fun, easy, decadent-tasting snack. Thanks for sharing such fun and healthy recipe.

I use unsweetened vanilla almond milk in everything too! Sometimes I just drink it straight from the carton!

So in the recipe you said to use a 9×9 pan, but in the pic that looks like a 9×13. So did you double it for your 9×13? I just want to make sure I make the right amount in the right size pan because you BETTER believe I will be making these. YUM!!

This looks delicious and perfect timing, since we recently received a huge bag of apples from my in-laws! I’ve been trying to come up with different ways to use the apples, aside from applesauce, salads and muffins, so I’m definitely going to try this!
Made these today, they were delicious! But, next time I think I am going to add more apples.
