Monday Workouts:
AM- Taught 45 minute spin class
PM- Taught Y50X class and a step class
Ran a quick 5K on the treadmill and did a little weight workout at the gym.
So, yeah, Mondays are just crazy. After my night classes I was tired, but knew I had to just get a couple miles in on the treadmill (only because I’ve got some big races coming up). I’m pretty sure there’s no photography allowed in the locker room at the gym, but I had to take a picture and post it to instagram to try to motivate myself to just do it. (Instagram @stuftmama just in case you’re on there.)
When I’m making excuses in my head, I say this over and over to myself:
“How bad do you really want this?”
Sure, I could’ve headed home since I had already done more than enough for the day, but darn it, I want to be a better runner and that just takes a little more commitment.
So I got on that darn treadmill and did a quick 5K. I didn’t worry about my pace, just wanted to get it done.
It wasn’t that easy, but hey, I did it and it was on some new fancy treadmill that obviously needs to be in my house. Ha ha.
Hmm….. How can I score a cool treadmill like this in my house?
So…. finally…….
I wish I could be saying that finally Bob wore the socks I gave him on The Biggest Loser last night, but the first little part of the show I watched didn’t have him wearing the Pro Compression. He better freaking wear them one of these times. Ha ha.
Finally we have a working dishwasher. Yay! There were some fried wires in there. Pretty darn scary stuff. Never leave appliances running when you’re not home friends. You never know.
Finally the boys are starting to sleep in a little bit. Yeah, so 6:30 is sleeping in, but I’ll take it. I’m actually up right now in a quite house with my dark chocolate peppermint mocha. It’s weird.
Finally a certain number two resistant child did his thing in the toilet again yesterday. Woo hoo! We had to make some pretty important phone calls to our favorite brother-in-laws to share the great news. One of his main motivations is to get special Batman underwear. I better find some.
Finally we got another Love Grown Foods LOVE drop.
This one is the best yet because it had Hot Oats in there too! Oh heavens.
Seriously, this Cocoa Goodness just taunts me.
If anyone can eat just one serving of this stuff at a time they deserve a freaking medal.
Since Monday’s are hectic, I’m usually shoveling lunch in while standing in the kitchen and getting other things ready.
Yesterday I threw together the easiest chicken spinach wraps ever to hold me over until my squash was ready.
In the wraps: Trader Joe’s rotisserie chicken, Trader Joe’s Hot and Sweet Mustard, some Rhino Peri-Peri sauce and spinach.
After my wraps, I finally got to try out a new whey protein bar that didn’t bother my tummy.

I finally got smart and took my roasted kabocha squash in the car on the way to the gym yesterday and ate it like chips.
Not the same as in a big bowl with all my usual toppings, but whatever. And it was not a good squash either. Sometimes you get one that doesn’t taste as good. Maybe the season is coming to an end.
I finally stepped foot in the weight room last night. I can’t remember the last time I actually did any weight machines. I’m pretty sure it was when I was about 8 months pregnant. Ha. I usually just do resistance training at home or in my classes I teach, but changed it up a bit last night. I try to do resistance training 2-3 times a week, but haven’t been able to fit them in lately. So last night I did my little routine I used to do weekly.
It’s quick and hits all the major muscle groups. I can usually get it done in less than 15 minutes. I wrote it out just in case you want it.
I finally changed up dinner a bit and instead of my usual roasted broccoli slaw with marinara sauce, I went with salmon salad with roasted brussel sprouts and broccoli slaw sprayed with a little Bragg’s liquid aminos before roasting.
I learned my lesson yesterday and mixed the wasabi with the soy sauce to make a little “dressing”.
It still cleared out my nose though. It may have had to do with the extra Sriracha sauce on there. Ha ha.
I finally sat down for dinner at 10:00 pm and tried to use chopsticks to be cool.
I’m just not cool and not good at using those things.
I finally ran out of Vitatops so made a new version of the dark chocolate microwave muffin.
Pretty much the same recipe as the original, but I changed up the pumpkin, egg and water amounts a bit. The cool thing about this muffin is that you really can’t go wrong. It seems whatever I throw together works out in some way.
Here is what I threw together last night:
1/2 cup pumpkin (122 grams)
1 egg white
1/2 cup water
2 tablespoons coconut flour
2 tablespoons dark cocoa powder
2 sweetener packets (I used Stevia)
5 drops NuNaturals vanilla stevia
splash of almond extract
1/2 teaspoon baking powder
Microwaved for about 7 minutes (Our microwave needs some help. It should only take about 4-5 minutes.)
The whole muffin is about 150 calories. Pretty awesome.
I topped that bad boy with some low calorie peanut butter frosting
and then added a Chobani Raspberry with Dark Chocolate Bite cup.
I know, right?
Okay, I’m FINALLY done writing all my randomness. One of these days I‘ll focus a post on just one topic. I just always have way too much to say. Oopsies.

Finally…………

I would be so HANGRY if I waited until 10pm to eat! Don’t know how you do it. I finally….made your spaghetti squash “crust” last night, made a few tweaks, it was super yum! Also, the TJ’s mustard, I go through at least a jar a week. When I was scraping out the insides the other day my b/f looked at me & said “Uh Oh, what now?”. I shot back, “You think I’m an amateur & we don’t have a back-up, pfffw!” 🙂

Finally, I roasted the seeds from my newly accquired Kabocha squash this weekend! I used olive oil spray & this awesome new seasoning from Costco- Taste of Asia Sesame Ginger (with some extra red pepper!). I wanted to use it for salad topping as some added crunch but um well. They were too darn good & didn’t make it to the salad part of the lunch…
I looked for that seasoning today and couldn’t find it. Pooper.
Well up here in Alaska we are a little behind the times- it might have been from last season LOL! But I did find it on amazon too. Since I mail order like, everything non-perishable (did you know you can order Silk Almond Milk by the case from there? Amazing!)…..
I did NOT know that, but pretty funny. 🙂
Ok, Batman is adorable & congrats! That’s a big deal. When I was potty training my boys, they always pee’d outside & one time, even poo’d outside with our dog. Yes, I put that in writing for all to see. Glad they don’t know who I email :).
I can’t wait to make the new & improved muffin. I love my mug muffins. YUM!
Oh, they pee outside all the time and Joaquin has done a number 2 outside, on the carpet, you name it. I’m so lucky. 🙂
Finally…… I am making more ME time (doing things other than laundry, cleaning, dishes and complaining) and FRIEND time. (other than working out w/ friends I am taking time for lunch dates and matinee’s) About time and its fun too! Go figure…

I FINALLY bought a new blender and I LOVE it! The last one was so broken but I kept using it and when it started leaking out the bottom I knew it was time. HA! Used my 20% Bed Bath coupon and BAM Ninja blender rocks my socks off.

Finally…..we are moving! We have been living in san fran for 5 years in an apartment we are 100% grown out of. Cannot wait for more space in our new place!!

OK so every day I fall lin love with your blog more and more. I think its because I think so much like you… I love all your desserts too…I love making frostings with protein powders and microwave muffins, brownies, etc…and you also give me lots of ideas with stuff that I have in my pantry 🙂

Finally…I beat my personal record time for a 5k!!!! 26:52! It may not be extraoridnary, but I sure am happy with it. I have been ” lurking” on your blog for a few weeks now and want to say you have really given me the motivation I need to meet my fitness goals and overall live a better life. Plus I love your recipes, your kitty and your adorable sons.! Thanks for being you and giving us mamas some great tips!

A month or two ago I FINALLY gave up on trying to convince Love Grown to send me some of their granola 😉 so I ordered some from Amazon. Um yeah. I’m right there with you about the serving size–the stuff is amazing and to eat *just* 1/4 cup at once seems nearly impossible!

I finally am back to running and have a 10k training plan mapped out. I would love for it to be a HM, but I will take what I can get;-) I finally am accepting the fact that my darling daughter will be 3 in a few weeks and I better get to planning her b-day party.

Your salmon salad inspired my dinner tonight, I’ve never put fish on a salad before today! I don’t have your heat-tolerance so I dressed mine in sugar free maple syrup and soy sauce instead 😉 So excited to finally be using up those salmon burgers I bought at Costco and thought I didn’t like–my new favorite salad topping 🙂
