Wednesday: Taught a spin class complete with a little disco ball mood lighting
Ran 10 miles on the treadmill in my disco spin pants.
Definitely not one of my brightest decisions. Let’s just say I can now say “I charded” and “I chaffed”. Lovely.
Thursday:
A morning 5 miler on the treadmill.
Taught a Y50X class and a strength training class at night.
So I feel like we’ve just kind of been “rolling” with life over here the past few days. I feel like I need a little break, but I don’t see one anywhere in the near future, so we’re just getting by day by day and doing what we can.
Here’s just some random things worth noting.
It hailed the other morning.
That does not happen often here. It was pretty cool.
I posted that I was making a Trader Joe’s shopping list on Facebook the other day and asked what I needed to buy. Holy smokes there are a ton of things there that I haven’t tried yet that people love. Not only did I spend too much money (and cause a scene with twin toddlers pushing baby carts), but now I want to go back and get everything everyone suggested.
I am a little upset that they didn’t have that new ghost pepper grinder I’ve been seeing. Of course I asked and they said they won’t get it again until November. Say what? Did anyone get their hands on one of those?
I have gotten a little behind on laundry. It might have something to do with my new schedule of trying to go to bed early and then get up early to get things done. It’s not working out so well, as Judah is now getting up at 5:15 with me. The other day he politely pointed to the kitchen and said “Mommy, go make Daddy some coffee.”
What have I done? That’s not cool.
Anyway, the clean clothes we had available yesterday were limited. I tried to play it off and tell people I let the boys pick out their outfits. Good one, huh?
And yeah, that’s exactly the kind of day we had yesterday. They gave me a run for my money.
It caught up with them though. They said they weren’t going to nap. I told them to sit quietly and read a book while I did a little laundry. This is what happened.
Ha ha.
So last night I taught a couple classes at the gym. A skirt was not the best choice, but hey, I went with it.
Then I put on my really fancy outfit after my classes had cleared out.
Nice. You’d think I’d have the good sense to drive straight home and not go in public wearing that.
I didn’t.
Yeah, I stopped at the mall of all places to return some random lip liner I bought months ago and never used. I fit right in.
I also tried to return some things at Target, but they only took a couple of them back and told me I had reached my limit for the year returning things without a receipt.
What? Isn’t it only February? Lesson learned, save all Target receipts.
Oh, I almost forgot. SPANX are on sale on Zulily right now. I did a little shopping yesterday.
So I have a little pizza muffin to share with you. A no grain microwavable pizza muffin.
Doesn’t that look fantabulous?
I took the grain free garlicky microwave muffin and instead of making it a grain free microwave pizza crust, I made it into a pizza muffin (or pizza roll, or calzone, whatever you want to call it).
Brilliant. I know. All I did was add a little pizza sauce and a few sliced mushrooms in between the garlicky muffin layers before I microwaved it. I wasn’t sure if my bright idea would turn out, but hey, it did.
And hey, I think you might have to try it, so here you go.
Grain Free Pizza Muffin
makes one muffin
10 grams almond flour (about 1 1/2 tablespoons)
14 grams coconut flour (2 tablespoons)
1 teaspoon melted light butter or margarine
1 egg (or 2 egg whites)
pinch of salt
1/4 teaspoon baking powder
2-4 tablespoons of water (or more)
for the middle:
a little pizza sauce
garlic salt
garlic
Italian seasoning
dried oregano
thinly sliced vegetables (not too many, I like using just a few mushrooms)
nutritional yeast or parmesan cheese
mozzarella cheese (if you want to add cheese)
Directions:
Mix all muffin ingredients together in small bowl. Add water at the end and continue to add by tablespoons until you get the desired consistency. It’s okay for the mixture to be pretty runny. It’ll just make a bigger muffin.
Pour half of the mixture in a microwave safe bowl sprayed with nonstick spray.
Carefully spoon a small amount of pizza sauce on the the mixture. Add vegetables (or toppings) of choice. Sprinkle Italian seasoning, oregano, garlic, garlic salt, nutritional yeast (or parmesan cheese) and mozzarella cheese if using.
Cover with the other half of the mixture.
Microwave for 5 minutes.
Transfer to a cookie sheet lined with foil and sprayed with nonstick spray.
Lightly toast in toaster oven or bake for 5-10 minutes on the oven at 375 convection. (Optional, but gives it a good little crunch.)
Recipe notes- I do not use any cheese in mine and it is still amazing.
In the recipe you can sub in 7 more grams of coconut flour instead of using almond flour. You may have to add more water though.
You can also omit the butter if you want.
It’s like a personal little grain free calzone.
It went really well with roasted kale salad and non dairy kale chips the other night for dinner.

I just made a purchase for the first time on Zulily the other day…I can’t wait for the tops and pants to arrive…very good deals!! (I just hope they all fit and look good since they simply state no refunds/returns on the items)
And yes, I return things as needed….I don’t like to keep stuff just to save myself a shopping trip. Go figure!!

Even when I have the receipt, I ALWAYS have trouble retuning things at Target.
So now I only buy clothes there if I KNOW I won’t want to return them <— this is difficult because I'm such an indecisive person! I know you can relate 😉

I snagged one of the last Ghost Pepper Grinders at my TJ’s last week!! And I’m ashamed to say I haven’t even had time to open it yet. I’m hoping to change that this weekend. Happy Friday!

Dang, I had no clue Target had a max return with no receipt policy, bummer! I usually keep stuff I buy, I’m bad like that, it “rots” in my closet with the tags on 🙁 I love the disco ball in your spin class, how fun! Happy Friday!
Maybe that’s my problem, it “rots” first and then I try to return it WAY too late. ha ha.

Muffin looks great- my LO has been asking to make homemade pizza!! This is perfect!!
so skirts for fitness are bad??!! I wear them all the time with capri leggings for teaching or working out. lululemon makes some cuties! sometimes you just need to feel girly to get through a good sweat fest 🙂 oh & here in Alaska it is standard to put snowpants on after a workout with your skirt hanging out, toss on some tall Uggs (usually with ice cleats- those are classy!) and a huge winter hat to go to the store….

Not bad, just not the best choice for the type of classes I taught last night. Uggs and ice cleats? Dang, I don’t think I would ever leave the house. 🙂
Target is always so difficult with returns! I also run errands after the gym on a regular basis. Today I went to the post office and grocery store (just needed eggs) still sweaty from the gym!

Just the title of this post has me craving pizza! Chaffing is the worst! I ran 6 miles in shorts on the treadmill the other day and chaffed really bad! It normally doesn’t happen but sometimes it does. Do you have any tips? I feel like I’ve heard people mention creams or lotions that help prevent it but I thought you would know best!
Glide is the bomb to help with chaffing.
