Workouts:
Saturday-
Taught a boot camp class at the park
Sunday-
AM- Ran 7 miles on the treadmill at the gym
I even managed to do a little Runner’s World reading while I was on there. That was a first.
PM- Did a little circuit outside with a little coaxing from my man Judah.
He was asking all afternoon to do a workout outside. He even took my resistance bands and jump rope out for me. I made him happy by doing a little 20 minute circuit. I mixed up some rotational lunges with the sandbag, kettle bell swings, rows, push-ups, squats, jump rope, and plank with 2 minute intervals running our backyard stairs in between. It made both of us very happy. He was in charge of letting me know when the timer beeped.
STUFT Daddy and Joaquin, well, they weren’t very impressed.

Thing shave gotten a little out of hand around here. What’s new, right?
Yesterday, I made it a point to stay far away from the computer and my phone and not only give these guys ALL my attention,
but to also just focus on mama tasks. I took advantage of a race free Sunday and didn’t set my alarm to keep up with my new early morning routine. I was awakened by Judah who lightly tapped my face and said, “Mama, why are you still in bed? It’s light outside.” Dang, he’s on it.
The boys and I accomplished quite a bit, but here’s just a few things worth mentioning.
I came up with a new Torani sugar free syrup combination that made the best mocha ever.
I remembered how much I really love my sandwich maker and how much better my breakfast STUFTwich is when I make it in there.
I planned out a week’s worth of dinners for the first time probably since the boys were born.
I actually made and stuck to a grocery shopping list.
(Side note- Silk Almond Milk is on sale at Vons for $2.79 right now. I bought 5 cartons.)
I used this Himalayan Pink Salt grinder for the first time
for some roasted beets.
By the way, I’m convinced you can pretty much roast any vegetable (even Swiss chard). I just sprayed the beets with nonstick spray, put some of that salt on them and roasted them at 400 convection for 20-25 minutes or so.
I tried to get the boys to eat them, but that didn’t go over so well so I added them all to my snack salad (chicken, romaine lettuce and hot and sweet salad dressing).
We made some balls.
Here’s why.
We’re snacking on the go a lot. I’ve been guilty more than just a couple of times especially lately of grabbing snacks that are packaged and not that great for the boys just out of convenience. I’ve been feeling more and more guilty about it, so it’s time. Things are changing around here friends. This is just the beginning.
We’re starting with these toddler friendly balls. They’re not my recipe, the recipe is from my best friend and college roommate Jenn. The GNC STUFT no bake protein cookie idea actually came from these little balls.
I know there’s lots of different versions out there, but this is my friend Jenn’s winning combination.
Jenn’s Peanut Butter Balls
1 cup honey or agave
1 cup peanut butter (or other nut butter)
1 cup oats
3/4 cup cereal
1/4 cup ground flaxseed
2 cups nonfat dry milk powder
Mix all ingredients together (it takes awhile and is a little arm workout). Scoop into balls and refrigerate in air tight container.
Here’s the exact ingredients we used for ours.
These were so easy and fun for the boys to “help” with.
Don’t worry, he only gets to lick after we’re done using the spatula.

So yeah, we made these,
and we’ll be making them again soon I’m sure seeing as how we’ve polished off quite a few already.
Funny how that works.

Did you get to slow down a little bit at all?
I’m going to try to make a point of slowing down an weekend that isn’t a race weekend (there actually aren’t that many in the near future).
Oh and totally random, but does anyone else see this man as my avatar on Instagram?
What the heck? Who is that and how did he get there? I don’t see it on mine, but my friend sent me this screen shot because she sees this man as my picture.
Any help would be appreciated.
Happy Monday!

Good for you for slowing down! I don’t know how you do it all…I guess you just don’t think about it and just do it!
Never thought about roasting beets before…may have to try this!
Yes, try it!
They were good!!!
Nicely done being just mama this weekend!
I already receive the newsletter and I ordered my socks using the code from the newsletter? Can I still enter?
I think so!!! You might want to email them to double check.
Yummm! It has been far too long since I’ve had roasted beets!
Those energy balls look super tasty!
my sunday was sooo slooooooow it was a halt.
and it rocked.
I would LOVE, LOVE, LOVE this giveaway.
I ran a race this Saturday and then tried my long run on Sunday with a head cold… long story short- the head cold and tired legs won and I stopped at mile 10.
It’s okay though, I ran 10 miles before work this morning.
BAM!
Ha. BAM.
Nice job!
Yay for slowing down and unplugging! I was totally unplugged for a bit this weekend and it felt so very good. I love that Judah wanted you to go outside and workout. My little one always asks me if it’s time to do yoga. And your Pro Compression sock collection is just beautiful and impressive
Love that your little one does yoga with you Christine.
i would like to thank you as i am now addicted to compression socks. i had already loved them but my collection has grown from 2 to 5 now in the last couple months! haha i see that procompression is having a promo and i think “hey why not! they’re only $30 !” they are so great tho! i wear them for most runs AND at work since i’m on my feet all day/night. they are wonderful. thanks for keeping us all up to date with promos tho!
You’re welcome????? It all starts with juts one pair. He he.
Hahaha!! Nice avatar! That is so random!
Making healthy choices does take a lot of planning. Good job making time to create come homemade options! THis weekend I made a vegan protein banana bread to eat throughout the week….too bad I ate half of it this weekend! oops
I have yet to make any kind of bread without eating half the loaf myself. Ha ha.
Best give away ever!
And hey, congrats on your 22+ miles yesterday…..I hope you took some salt tabs….you looked like you were losing a good amount of salt in your black gear. =) hehehe.
Woot woot! I got a shout out!
Not even really sure where I got that recipe, but we do love it. One suggestions: roll each ball in flax seed at the end. Helps them hold together nicely and looks pretty!
Even Andrew has been loving the balls!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! LOVE YOU!
Love that you slowed down, it is hard to do that. I am making those balls for my girls, we love peanut butter around here and they would be a hit! Thanks for the recipe
That giveaway is CRAZY, I am already excited for the winners LOL!
Let me know if your girls like them! The boys have been eating them like crazy.
I really think it’s important to slow down at least one day each week. Love that the boys get in the kitchen with you. And I fully believe you can roast any veggie as well. I signed up for their newsletter. Thanks for sharing!
Roast or grill, right???? he he.
Slow down starts……. today! ran the napavalley marathon this weekend–such a beautiful course. Have you ever done that race?
I haven’t, but would love to. How did it go??
Unf it was not my best day…was shooting for a sub 3:21 but ran a 3:35. Such a beautiful course though!! Time for a couple of rest weeks, during which I plan to make make one of your squash masterpieces
I bet your boys would like Paleo Cocoa Bites, my kiddos love em!
In a food processor puree: 10oz pitted dates, 1 cup unsweetened coconut, 1 cup almonds, 6 Tbsp cocoa powder
When it’s all fine and crumbly drizzle in 1/4 cup of water to make a doughy paste. Roll into small bite sized balls, store in fridge or freezer.
(Makes 40 little 58 calorie balls, 1g protein, 2g fiber)
Those sound magnificent!!! I’ll have to try those. Better get some dates! Thanks for the recipe.
I’m really working on slowing down, too. Weekends are the perfect time to unplug and take a break. So odd about that man on instagram!! Fwiw, I’ve never seen it- your face always comes up looking normal on my screen.
Hi! New reader here. (And new runner!) I’d like to try the compression socks, but there is no size info on their website. I have teeny tiny feet – I wear size 6. (And sometimes 5 or 5 1/2.) Do you think the extra small would work for me? I have my eye on those shamrock socks and XS is the only size left!
Kerri- I would say yes!
XS. I wear small, but can pull off XS and I wear a size 7.5-8.5. GO for it!
I see the right profile pic on Instagram – you with the boys in the stroller. That’s totally weird.
Going to have to try those snacks!
Phew.
Thanks Sarah!
Thats crazy about the instagram picture, how in the world would that happen!? I also love making protein ball/snacks. They are so great for being on the go!
Slowing down sounds nice!!!! AND those protein cookies & balls look delish!!!!!!!!!!!!!!!!!!!!!!!!!!! Such cute pics!!!
love beets!!
those cookie balls sound wonderful
I have a random question.. What is the benefit of the silk almond milk over regular dairy milk? The label didnt really seem nutirionally better the last time i compared them and ive always wondered.
Hey Melissa- I don’t like regular milk and don’t do well with lots of dairy. Silk unsweetened almond milk only has 30 calories, but still gives you the calcium. LOVE it!
Those snack balls sound really good, I love that the boys get to help! Also I read the rules that talk about the giveaway. Are you automatically entered if you are on the email list already?
I’m not sure. You might want to email them and find out.
I signed up for the mailing list.. I’m thinking of ordering the argyle socks.. will let you know if I do!!
Signed up for the mailing list and might actually order some compression sleeves! This is the best giveaway yet!!!!
Just placed an order for purple calf sleeves, first pair
And I am receiving the mailing list/emails from Pro Compression. So excited for this giveaway! P.S. those balls look amazing and I am in love with the coconut peanut butter!

In addition to the newsletter (see previous entry), I just purchased my first pair of marathon socks using the March promotion. So excited to get them!!
