Ran 7 miles on the treadmill at home
Our gym set up needs some serious work, but having a treadmill at home is so key when you’re crunched for time or just don’t want to care what you wear.
Some mornings coffee is coffee. Other mornings, like today, my almond coconut mocha is just delightful.
Know what else is delightful? We got even more Chobani goodness in the house.
I’m pretty sure we’re in CHO heaven. All because it was someone’s birthday yesterday.
Since I’m all about favorites today, I have to tell you about this new Good Earth Tea I just got in the mail to try.
Obviously I had to try out the Cocoa Tango one right away. Check out the ingredients.
Just my style- cocoa and chili peppers.
It made the most delicious iced tea I just sucked down.
It’s definitely going to be a new favorite. I really loved that it didn’t need any extra sweetener or anything.
It went perfectly with this.
I know, right?

My new muffin (recipe to follow), some NuttZo, a Chobani Coffee with Dark Chocolate Bite cup and a baked Chocolate Chip Cookie Dough Quest Bar.
Oh my goodness, oh my goodness, oh my goodness.
Baking the chocolate chip cookie dough Quest Protein Bars is my new favorite thing too by the way.
I just bake it at 375 convection for 5 minutes and it’s amazing.
Okay, so let’s do this. Recipe time.
Chocolate is one of our favorite things around here. We like eating chocolate in the form of a mighty chocolate microwave muffin or for special occasions in some low fat cupcakes.
Lately I’ve gotten even lazier with my most recent dark chocolate microwave muffin. I’ve given up on buying Vitatops since I’m on a serious budget after my little squash addiction, so I’ve been making this new dark chocolate muffin lately.
Pretty much daily actually. It’s made with, well, water.
Yeah. Pretty amazing.
It’s not as fabulous or moist as the original high protein dark chocolate muffin or the dark chocolate microwave muffin, but it takes about 2 minutes to throw together, is pretty darn big, seriously takes care of cravings for rich dark chocolate and is only about 120 calories.
Here you go.
120 Calorie Grain Free Dark Chocolate Muffin
makes one big muffin
2 tablespoons coconut flour (14 g)
2 tablespoons dark cocoa powder (10 g)
2 egg whites (or 1 whole egg)
3 packets of sweetener (I’ve been using NuNaturals)
1/4 teaspoon almond extract (or vanilla)
1/4-1/2 teaspoon baking powder
1/4 cup plus 1 tablespoon (extra tablespoon is optional) of water
Mix all ingredients together. Pour in small baking dish sprayed with nonstick spray. Bake at 400 regular for 20 minutes or 375 convection.
Or if you’re in a hurry, pour in a mug sprayed with cooking spray and microwave for about 5 minutes.
But, it’s really great when topped with a warm Quest Bar
or a Chobani Bite Cup
or a frozen Chobani Bite Cup
or, well, a little of everything including some NuttZo.
Yep. That’s my favorite.
