Leg/groin/crotch update- I’ve been icing, resting and using my Rock Tape A LOT. It felt not that great during my spin class in the morning, but then it actually seemed to feel better about halfway through my classes tonight. I pretty much modified everything, although certain moves like squats didn’t seem to bother it. Weird.
I feel like there’s definitely some improvement and now I’m thinking it may just be muscular, but I’m still a little worried to run on it. We’ll see how it feels tomorrow.
Pretty funny (or ironic) that I got this little gem in the mail from the Boston Marathon today though.
I haven’t looked through it yet. It makes me nervous just thinking about it and when I get nervous I tend to have tummy issues, so for right now it’s just sitting snuggly back in the envelope. Maybe once my leg feels better I’ll get it out again and look through it.
Um, yes, Boston is in just 3 weeks. Holy cow.
On my way to the gym this afternoon I made this little treat inspired by my new Nuun cherry limeade flavor.
In the bottle- water with 1/2 cherry limeade tablet, 1/2 kona cola tablet, apple cider vinegar, squeeze of lemon juice and 5 drops of liquid stevia.
It was awesome and I love the everything about the caffeine enhanced Nuun flavors. They are the best.
I got desperate tonight at the gym. I was starving in between my classes and needed a little something. I found a chia shot stuffed in my bag and decided to go for it just plain.
Such a bad photo, but I was trying to take it as quick as possible before anyone in my next class saw me taking pictures of myself in the mirror. I didn’t want to be that instructor. Oh, wait, I guess I am THAT instructor. Don’t mind me.
I sucked that chia shot so fast. It actually went down quite nicely. I was impressed. I was not impressed with the chia seeds that remained in my teeth for the entire class, but hey, you do what you have to do.
So, ever since our find at the Farmer’s Market last week, I’ve been eating a ton of cabbage. I’m pretty sure I ate that whole huge cabbage head by myself.
I guess I should be proud.
I made a lot of roasted cabbage along with roasted carrots.
One of the times I made it with some Asian style seasoning, topped it with Scotty B’s sweet habanero hot sauce and served it with some veggie burger wraps.
Oh, which reminds me, my new way to get the boys to eat carrots is to make roasted carrots with just coconut oil and that pink sea salt from Trader Joe’s. We call them “fries” and they’ve been eating them up and dipping them in light ranch dressing and/or ketchup.
It makes me very happy.
Over the weekend I was inspired by Sarena to try to make a cabbage egg combination.
And…… a new ultimate breakfast salad was born.
I just took some egg whites and mixed them with a sweetener packet, a little cinnamon and vanilla and then added a bunch of chopped cabbage. I scrambled them all together on the stove while putting the lid on for a bit while it was cooking to make sure the cabbage cooked. Then I piled the huge mess on some organic spinach, topped it with a little coconut oil and served a no grain microwave English muffin on the side.
It was pretty darn good. Who knew sweet scrambled eggs and cabbage could be so good?
Yeah, it’s late and I can’t decide which picture to put on so you get both. Which one would you have used?
I guess it really doesn’t matter. What matters is that I’m pretty sure I’ll be doing the sweet cabbage thing again very soon.
Hey, maybe the boys and I will have to venture out to Farmer’s Market tomorrow to find another ginormous cabbage.
I did not eat cabbage tonight. I ate this big mess (non dairy kale chips, roasted broccoli slaw, chicken, marinara, Cholula, Scotty B’s Ghostly Garlic hot sauce, crushed red pepper, etc.).
And caught the first few dances on DWTS.
Is it me, or is Brooke Burke getting more beautiful every episode?
Oh, and I did a little PB2 muffin/cake experiment that seemed to go over well.
It was the perfect base “layer” for my creamy dreamy ice cream (that seems to be making a comeback the past few days).
Okay, time to hit the sack.

I just roasted up a huge head of cabbage and ate it all myself too! And I’m on to beets! But I’ve never tried my cabbage sweet! Hope your injury heals soon!

See, chia seeds are the perfect snack because the ones that get caught in your teeth are for snacking later as they work their way out. 😉 Your cabbage creation looks “knock your socks off” good! YUM! I love how cabbage gets sweeter as you cook it. Perfect compliment to sweetened eggs! YUM!

I love all roasted veggies! Think that is probably my favorite way to eat them. My girls love them, too. Which, of course, makes this mom happy!

Your carrots look great! I am very proud lol…I bought a butternut squash yesterday and it was small and not as sweet – back to my 5 pound back of carrots…I never had a chia shot…glad you are feeling slightly better.

I know this is really weird, but I had a dream that I was in the grocery store and one of the new ice cream flavors was “STUFT Mama”! It was basically your typical creamy dreamy ice cream with a whole bunch of mixings throughout it. It looked really good! So don’t be surprised if Ben and Jerry’s approaches you with a pitch for the new STUFT Mama ice cream flavor 🙂

So I just have to say that your nuun/apple cider vinegar concoction is delicious! I have been trying to take 2 tablespoon of apple cider vinegar a day and your mixture makes is delicious! I was skeptical but now I can’t imagine taking it any other way. Thanks! Love the blog!

Girl–it is totally OK that you got the idea for the cabbage kick from me! TOTALLY OK! Gees—I’m still on one–it was on sale tonight for $.33lb so I had to buy 10 heads. Yes. 2 are already consumed. Believe it or not, I’ve never had sweet eggs before. I’m not a huge fan of putting things in my eggs, usually. But what you described sounds just weird enough to work, and if you’re willing to vouch for it…it shall be considered, lol 😉
