A little over 5 miles with the stroller- slow jogging to check our mailbox. Very slow with a pretty substantial rest stop to mail some thing in the middle. Not the best idea to go for a jog since my leg is still hurting from all the fun last weekend, but hey, I had some pretty cute guys that wanted a breakfast cruise.

Last night I taught my usual two classes at the Y- Y50X HITT class followed by full body group strength training.
Someone asked about the strength training I do. I guess I don’t talk about it on here much, but I try to make sure to get at least two days of resistance/strength work in a week. Rarely is it with machines. It’s usually just with my classes using bands and weights. Really, that’s all you need for basic stuff. I can write up a post with my go to moves that I use regularly.
We’ve been trying to take it easy over here this week. Sleeping in a little longer
and getting a few extra snuggles.
I’ve made this key lime pie muffin a few times. Funny how you have something once for breakfast and then you crave it like every single day for a week afterwards.
I really like that it travels easily.
I do not like how it sometimes decides to split in half and explode in our not that clean microwave.
But, hey, 9 times out of 10 I still eat it anyway.
Besides that muffin, I also turn that key lime protein powder into a pretty fabulous pancake the other day.
Key Lime Pie Pancake
1 scoop GNC Total Lean Key Lime Pie protein powder (25 grams)
1 tablespoons coconut flour (7 grams)
1/4 teaspoon baking powder
3/4 cup egg whites
sweetener packet (I used stevia)
splash of vanilla
I topped that bad boy with some sugar free maple syrup and it was fabulous. In fact, I may be making one here very shortly to start my day. I’m sure it would work with other protein powder flavors too.
I’m pretty sure it was gone in less than 36 hours. Not totally sure- it was a blur. This week has been a bit of a blur actually, but my favorite way I did it up was like this.
In other news I got the cutest shirt from Believe I Am that we picked up at the mailbox yesterday during our outing.
