I always like to start things on Mondays. New charts, new lists, new goals, etc. I can never start something in the middle of the week. is anyone else like that?

I’m a fan of the Vitapaks as they come in easy packs and have a whole program into one. I’ve been taking the Women’s Wellness ones for awhile, but am switching over to the Women’s Active Vitapaks to see if I like them better.
They have more joint cushioning support (perfect for my hip issue), energy and metabolism blend, calcium, L-carnitine and CLA. We’ll see.
We all do the whole vitamin thing together in the morning, you know.
Okay, so it’s been hot here the past few days. You can definitely feel that summer is coming. I’m not sure if I’m ready for it, but ready or not it’s coming.
When it gets hot out I always crave different things to eat. Not sure if I’m ready to change up my whole standard cinnamon sugar breakfast STUFTwich (yesterday it was a triple decker),
but this morning I had to make the switch to an iced nutty americano.
For some reason it was so much better with a glass straw. Random.
With the warmer weather, I’m not very motivated to roast up massive amounts of sweet roasted kabocha squash. Definitely a good thing as they’re not as easy to find these days anyway. I do have a new recipe from a couple weeks ago I never shared with you though. Oopsies. I better get on that before it’s really too hot to want kabocha squash.
Thankfully I crave salads a lot when it’s hot outside. Plain balsamic vinegar has been my go to salad dressing lately. I love it with a little fresh basil, crushed red pepper and Cholula on a salad.

The other day I had the idea to combine hummus with balsamic vinegar to make a dressing
and might I say it was delicious.
Yep. It’s my new thing.
Move over Yum Hum Dressing, there’s a new dressing in town that’s better.
Humming Balsamic Dressing
I have to admit, I don’t measure it. I just combine hummus, balsamic vinegar and crushed red pepper until I get the consistency I want. I think it’s about equal parts hummus and vinegar and then quite a bit or crushed red pepper.
It’s fabulous. Now I want to experiment with different hummus flavors and different balsamic vinegars. Oh the options……
I’m off. Lot’s of stuff to tackle today. That’s always the case Mondays, yes?
