Nothing to See Here- Just Some Purple Ice Cream


Good afternoon.

Wednesday Workout:

Taught a spin class

Taught a cycle and turf class- 30 minutes on the bike, 30 minutes boot camp style on the turf


Lost multiple times in a hula hoop contest with Judah.

Yeah. The other night it was easy to get them back in their cage, last night it was not. It took me a very long time to get them in there. I would get one in, then three, then they’d all come out again. Stinkers. It wasn’t fun, I considered giving up at one point and even stepped in doggie doo in the process. Lovely. Some of them better end up being hens and give us some eggs.



Last night we went on a little pre dinner walk/ride to enjoy the end of the day.


As you can see, these guys tired out fast. For some reason things always end up a little like this.


I carried the darn fire truck pretty much the whole walk. Oh well. It was a great time to just be in the moment with my men.

Then we got home to this.


I can’t tell you how excited we get around here about our Chobani deliveries.

Unfortunately, Chobani doesn’t go with this whole STUFT detox thing I’ve got going on, but hey, I guess that prevents me from hiding and hoarding my favorite flavors for a bit like I usually do. Ha.

We got a bunch more Champions Tubes in addition to some nonfat cups. I want to try freezing them. Has anyone done that?


I tried to push the tubes last night, but the boys wanted the Chobani “in a bowl” for dessert. I was too tired to argue.


Oh, and I said I was going to test out my Meatza Pizza on the boys last night.

I did.


It was a hit. Same thing, just different toppings.

Toddler Meatza Pizza– cooked burger patty (we like these from Costco) with marinara, some Italian seasoning and mozzarella cheese. Bake it at 375-400 for 15 minutes or so.



Oh wait, that’s right. I’m supposed to show you the purple ice cream. That’s what this post is supposed to be about. Oops.

No sugar, no cream either really, just a purple sweet potato and a little unsweetened vanilla almond milk

Here’s how it went down.

I baked the sweet potato (in the microwave because I’m lazy like that). I cut it up, placed the slices (or chunks rather) on parchment paper and sprinkled them with cinnamon. Then I chilled them in the freezer for a bit (about an hour and a half) on a cookie tray.

I took those semi frozen purple sweet potato chunks and blended them with a little unsweetened almond milk, a little more cinnamon and a splash of vanilla in my NutriBullet.

Oh heck yes.


It was delightful and sweet potatoes are pretty darn sweet on their own, especially after you haven’t had sugar for over a week.

Oh, and the best part about it was that it was in an almost empty jar of Peanut Free NuttZo. I was sad to end the jar, but I feel like I gave it a proper goodbye.


Mmm hmmm….


And, well, since I’m out of kabocha, I had to go for a little more sweet potato action this morning with my breakfast on the go.


Baked sweet potato all mashed up with cinnamon, cloves, nutmeg and a little coconut oil topped with scrambled eggs and egg whites.

It was the perfect combo, but pretty darn difficult to eat in the car and definitely not the best choice to be shoveling in right before teaching a pretty intense spin class. Oops.

Can you hula hoop? Dang, I used to be able to, but seriously I can’t do it now at all. What happened? Maybe it’s my injury. LOL.

    Hula hooping is all in the legs, not the hips! It’s about shifting your weight quickly from one side to the other. LOL, my daughter, who is nine, can hula hoop like it’s her job. She stands there while reading books, eating lunch, talking on the phone, etc. Totally second nature to her!

    Oh wow that purple sweet potato ice cream looks deliciously good! It looks so thick + creamy too! I’ve never seen purple sweet potatoes in the UK before, I’m going to have to keep my eyes open for them now!

    Freezing the Chobani tubes is the way to do it! As soon as I get them they go straight to the freezer! The kiddos love them!
