Socks for the 4th and Amazing Anniversary Potatoes

 

A lot of working it out today. A lot of sweating on the community mic screen. Yeah, gross that a lot of use the same one right? Sometimes it’s a little wet because of the person who taught before you.  I really need to restock my personal ones to bring with me.

Oh, and just a little matchy matchy for the second round of classes. Silly.

Best new song in spin class today- Flashdance- What a Feeling. We did a hill climb to it and it was awesome.

I also love roasted butternut squash with dark cocoa powder and cinnamon.

My bro put together one heck of a BBQ Sunday night.

I was in charge of roasted zucchini and potatoes. I figured I’d do the zucchini my way and then go with the standard people pleasing recipe for the potato dish.

I love quick, easy, throw together side dishes that can please a crowd. These have absolutely nothing to do with any sort of STUFT detox or no sugar challenge or anything. They are definitely not dairy free, but they are ridiculously delicious and easy.

These potatoes I made for Father’s Day impressed everyone (even all the men) so I figured it was worth sharing. It’s the least I can do.

This is a good old easy, cheesy, hash brown potato side dish made from frozen hash browns.

Yep. I’m just all over the darn place.

I didn’t take any pictures of the dish when I threw it together because that’s exactly what I did. It wasn’t pretty. I got a few shots of the leftovers (while we still has some) though.

Today was their 41st wedding anniversary and I dropped the ball yet again on really giving them a celebration they deserve. We should really take them on some awesome vacation or something like they did for us way back in the day before J and J.

    ahhhhhhhhhhhh! I can’t believe I won! I couldn’t be more excited! Emailing you now. I taught twice yesterday and used the community mic ball too…it is totally gross. I”m ordering more balls now. That cauliflower sounds yummy. Maybe lunch today!

    Happy Anniversary to your parents! The hashbrown sounds like a serious crowd pleaser to me! I don’t normally do a side dish when I take things to gatherings, but I almost always am in charge of bringing the caramel gooey bars. Serious crowd pleaser there.

    Dying over your butternut squash. I’m still all about the kabocha over here. Is the butternut better on your tummy than the kabocha do you think?
    And I kind of just want to eat all your scrumptious food. Even if it is lightly burnt :) Still looks good to me.

    Those taters look awesome! Ugh I loathe teaching on a sweaty mic when someone teaches before me! Thankfully I don’t have to encounter that often since I’m always the first to teach in the mornings but I ALWAYS always have the disinfectant wipes handy. I will have to check out the Flashdance song! Love hill climbs!!

    Yum! The hashbrowns look tasty and sound easy – my kind of cooking! I’ll have to try it out. My classic side dish for parties is a pasta salad – I buy the “Suddenly Salad” original pasta salad – then add tons to it – lots of fresh veggies, diced chicken, diced pepperoni if I have it, and feta cheese. Delicious! Happy anniversary to your parents!

    I tend to bring a lot of salads or dips to get-togethers. I have some great recipies that are healthy(ish) and can easily be made in large batches.
