It’s All About the STUFT Egg-Rito and Socks


Good morning!

Last night’s workout:

I got to run. Yep. Outside. By myself. That doesn’t happen very often, but Grandma and Papap had the boys and I had a brand spanking new gadget to test out.

More information and a full review of this Polar beauty to come, but I’ve never used anything so fancy in my life. Talk about a little extra motivation to get out the door.

On my training plan I had a 6 mile easy run on the schedule. I’m doing some modifications though and not running the full prescribed amount just yet. So I did 5.33 hilly, hot miles.

Oh hey, look I just happen to match my whole outfit with the whole new GPS thing.

Ha ha.

Average pace was 8:57. My easy runs are supposed to be 8:20 pace with my Runner’s World Challenge plan. About 4 months ago they were, but not right now and I’m totally okay with that. Baby steps. I’m not going to push anything.

The run felt okay. Still a little awkward and uncomfortable in the hip/hamstring, but everything feels fine this morning. Phew.


Last night I roasted up pretty much anything and everything I could find in the fridge Italian style (like the zucchini pizzas)

Oh, and just in case you’re wondering, nectarines and almond butter go very well together.


And the only thing better than this fork, is an even tinier one.


Yeah, I mean tiny.



This morning even though I forgot to set my “toddler alarm”, it still went off bright and early before 6 am. I was a little grumpy about it until I looked outside.

Then I was thankful I was up to see this.

Lately I’ve been super hungry right when I wake up. I don’t like to have a big breakfast right off the bat, so I usually do an egg-cellent mocha smoothie or some eggs and protein to tide me over for a couple hours.

Today, I had an even better idea.

An egg-rito.


I don’t know why I’ve never thought of this before. It was fast, easy and delicious.

I cooked 4 egg whites in a large pan on the stove so they had lots of room to spread out.  (I’m out of my egg white jugs at the moment, but just ordered more yesterday.) I just seasoned them with a little Trader Joe’s Everyday Seasoning.

Once my large “egg-tilla” was cooked, I added some spinach and a couple of turkey sausages (that I had cooked up previously and were in the freezer). Topped it with some Scotty B’s sweet habanero hot sauce and rolled it all up.


Oh heck yes.

Who needs a breakfast STUFTwich when you can have an egg-rito.

Even better, a STUFTrito.



Oh man, I can’t wait to make more versions of this. Watch out.

Okay. Gotta go. My sweetener free roasted kabocha is ready. (Oh, and by the way, I think today’s squash is a doozy. It didn’t have a good ring on the bottom. Bummer.)

I have to get this guy off his “iPhone”. he’s been talking on it way too long this morning.

    Oh the stuft-rito looks really good! Thats a great idea, I eat eggs with turkey sausage and zucchini almost every night but would never have thought to change it up like that. PRO compression socks are the best for recovery! Those new ones you got are cute too!

    I so am going to try the STUFTrito this weekend. I even have chicken sausage in my freezer. I may even have to change my dinner tonight. Thank you for the discount reminder.     Hmmm, I’m thinking an egg-rito stuffed, I mean stuft, with nectarines and almond butter! Delicious. (I’m all about sweet breakfasts.)
    And I’m glad you have a toddler who talks on an “iphone” nonstop too. I’m already worried about my 3 year old daughter’s teen years, with all of her “phone” talking now. Yikes.
