How to Stay Classy and Toddler Chia Jam


Workout Monday:

Taught classes throughout the day: spin, HIIT, step and group strength training

Was supposed to do a 3 mile easy run, but it just didn’t happen today. Too many classes and my body and brain were beyond tired, so I gave myself a break.

That’s the way it goes sometimes. The past two Mondays I was lucky enough to end the night with a run on the beach, tonight I was lucky enough to end it cuddling my boys after a super hectic day.


I’m taking life one day and one moment at a time these days.

I told Andrew the other night that August was my month to be smart. For once. Smart about sleep, training, taking care of myself, being mama, just everything. Let’s hope I can pull it off. Ha ha.

Okay, so, please tell my you’ve seen Anchorman.

Please tell me when you see the title of this post you hear Ron Burgundy saying the following, “You stay classy San Diego.”



I feel like we’ve been pulling off some pretty classy STUFT moves lately so thought I’d share just in case you want a little help in how to step it up in the class department. Or actually, in case you just need a few more reasons why you really don’t want to hang out with us in real life. Ha ha.


Um, yeah, we forget to buy a present for a toddler birthday party over the weekend. So the boys just showed up with a box of Chobani tubes.



I was dragging big time in the late afternoon the other day and needed a little something to get me by, so I tried out one of those new Zevia flavors that had caffeine.


I was a little hesitant to go for it, but it wasn’t too sweet and I liked it. Definitely not something I’m going to be having everyday, but I don’t mind having them on hand for special occasions when I’m really craving soda. I feel like they’re such a better option than others out there.

Oh, what? You like those pools?

I bet you’re wondering how we can afford them, huh? Well, we don’t spend a lot of money, but we do splurge on the important things, like amazing pools. And yes, two because sometimes just one won’t do.



Not only do we have some pretty high class pools in the back yard, but we also have a pretty cool secret hide out inside on most days.


It’s so secret in fact, that it moves from room to room to the most inconvenient locations possible. Talk about classy.


You know what else we do?

Eat fiesta leftovers pretty much for every meal until their gone. Obviously we add a little extra special seasoning to class it up a bit.



And eat outside to pretend to feel cool (until someone needs their butt wiped in the middle of lunch which happens every single day).


Also, since I’m really trying to make sure the boys get their vegetables, I’ve been slaving in the kitchen with some vegetable experiments.


Ha ha. Seriously though. Joaquin eats these Trade Joe’s Spinach and Kale Bites up along with roasted zucchini noodles. Thank goodness.


And while Judah won’t touch them, he’s been begging for squishy pancakes with special strawberry sauce for breakfast recently. Not sure where in the heck he got that idea or anything, but I thought I’d deliver.


It took approximately 3 minutes to make this strawberry sauce and it was a huge hit. The guy even ate in plain out of the bowl with a spoon.

I got the idea from my original chia berry jam recipe.


Toddler Strawberry Sauce

fresh strawberries, sliced (I used about 1/2- 3/4 cup)

1-3 teaspoons chia

1-3 teaspoon sugar

a little bit of water (around 1 tablespoon depending on how many strawberries you have)


Combine ingredients.


Microwave or cook on stove until warm. Let sit for at least 15 minutes at room temp or in the fridge.

Transfer to a classy Pyrex glass dish that is at least 10 years old to make it look nice.


Step in a little chicken doo doo while taking a picture outside.


And then, well, impressed your kiddos or your friends and use it as a topping on some multigrain Coach’s Oats pancakes that were easily made from the multigrain mix bag by adding water and egg.




Oh, and random, but really classy so wanted to tell you that I stopped again at the same store for the same items tonight on the way home from the gym and got the same weird looks. Keeping it classy.


They have got to talk about me, right? Crazy, sweaty, kabocha cat lady? Who knows.



And, that’s about it for now.

It’s past my bedtime, so my whole thing about being smart this month about sleep is already taking a bit of a turn. Oopsies.

And, yes, in case you’re wondering, the people who live behind us and to the side of us have full viewing pleasure of our pool set up and activities. Nice. I’m sure they talk about us too. Nice.

    Love your pools! Ha! Easy to clean, doesn’t take up the whole yard, no winter care cost. Awesome!

    My parents have a pool and live a couple of blocks away. We spend a lot of time there. Their sixteen year old neighbor boy told my mom last week she must be rich because she has a pool. (This neighbor’s parents were pricing putting one in and found out the cost is $45K+) My mom informed him she is broke because she has a pool. Ha!

    Those pools are awesome. Lucky ducks. When my brother and I were younger we would take a hose out to our trampoline and spray it down. If you stick a hose underneath it made a type of “waterfall.” Lol. Oh summer.

    Those pools are great! Gotta love a little DIY. It’s so easy to keep it classy with kids, right? The toddler strawberry sauce is my kind of kid- friendly recipe, classy and easy!

    chia jam rocks! i make it in the summer when the fruit is in season & then freeze it in mason jars- it is good all winter. i have used rhubarb, blueberries, ginger & even cranberries. last turkey day i made the cranberry sauce with Alaskan berries, ginger, orange zest, chia seeds & raspberry stevia drops. huge hit!
    and this Alaskan lady is so impressed by yet another use for rubbermaid totes 🙂 your kiddos are adorable!

    I love your kabocha stash because today I just bought 8 kabochas and I think the person thought I was crazy, but I couldn’t find them the other day so I knew it was a must to stock up!
    And I love that you added some Anchorman to this post. I remember in grade 12 I had to do a video project of me being a newscaster and I signed off like that, but no one in my class got it so my friend and I were the only one who thought it was funny…um yah, that was an awkward moment in my life.

    Love the pools! And I hear you on the kids and veggies thing. For a while there I think all Lincoln would eat was hot dogs but then he eventually made himself sick of them because he hasn’t had or asked for one in a really long time 🙂 He could live off of pesto though!

    I’m super jealous, where in heaven are you getting your kabochas? They are nowhere to be found in Atlanta until fall/winter. I wait like a crazy person for them to come to whole foods every fall, along with trader joes and their canned pumpkin.

    I was feeling “classy” this week as i wore my Garmin as a watch to work this week…because it’s the only working watch I own. I thought of this post…we runners are all super cool and classy- no matter what. Also, that ‘special strawberry sauce’ looks awesome!!
