Reasons This Post is Even Less Mediocre Than Normal

 

I’ve got just a few.

 

Taught three classes throughout the day yesterday on top of my quick morning run. I was darn tired.

 

Then, against my better judgment this happened on the way home.

I only needed a wedding present, but this made it’s way into my basket. Don’t ask questions.

Gosh darn it I forgot to get cassava for my cassava “fries” and they were out of plantains. Lame.

Found this recipe while trying to figure out how I can use up ground turkey and figs. I randomly and tried to recreate these little burgers.

I took chopped fresh basil, a couple defrosted frozen figs, a little chopped onion, fig balsamic vinegar and some mixed pepper and combined them with ground turkey.

Made a few sliders.

Baked them at 425 a little too long. Weird, because that never happens.

But turned it all into a lovely salad complete with fig balsamic vinegar/coconut oil dressing and some no grain STUFT seedy bread with SunButter and coconut butter and a bosc pear.

And hey, Dancing With the Stars premiere so I decided to park it and watch.

This morning duty called and we had to make some pancakes for my men.

I need quite a bit of work still on my pancake shapes.

Side note- we use Coach’s Oats multigrain pancake mix. It is so darn good and the boys love it.

 

For myself I attempted making Purely Twins plantain bread for the first time.

I overcooked it of course also, but it was still darn good. I also threw together some egg whites, spinach and a chicken apple sausage and popped it in the oven because I was too lazy to make it on the stove. It came out pretty well too. What do you know.

 

Okay, time to get a move on. Today I have my second go around with the Yasso 800’s with my training plan. I’m not going to lie, I’m a little scared. Last week was four, this week it’s supposed to be six. Um…….. hmmmmmm….

    I only watched one season of DWTS. It was the one with Kate Gosselin, I wanted to see her get voted off, haha.

    I also hear that using a squeeze bottle works!

    Workout today will be teaching BodyPump after work! If I can get there early enough, I’ll put in a few miles on the treadmill. ~:)

    Love seeing those kabochas. I honestly think there is something about them that must be addicting because so many people seem to be addicted to it as well. I don’t think I can go a week without it…for serious. This could be an issue. I also tried out the twins plantain bread and it’s so darn tasty.
    I wish I was a good pancake maker, but it’s possible I’m the worst in the world. It’s pretty bad.
    At least I’m a good baker;)

    I don’t even know if I like figs, but those little burger things you made look amazing. You must use your oven more than anyone I know. I’ll be using mine more when it isn’t 100 degrees outside here in Houston. I have started copying you….and baking/roasting all veggies! Now I just need to find that Kobocha squash

    pee pee. (keeping it clean ;-)

    hahaha!! Maybe that would have worked during your potty training period??? hahah!

    Interesting mix with the turkey burgers and all…never thought of baking them either…may have to experiment a little with that.

    Whoa! You go girl! Thats a fitness packed day. I taught two strength classes and felt tired enough ;) . I don’t make shaped pancakes…not that talented. Although, I should probably start trying for Kay. I watched 1 or 2 dances from last night

    Someone mentioned a squeeze bottle for the shapes. I think that would work best, but if you don’t have one around, maybe you can just use a ziplock bag (cut a little corner off). That probably should work okay :)

    LOL! Kristin, you are so funny (I think even when you don’t mean to be). I don’t watch DWTS regularly, but I watched the All-Stars season and I catch the recaps on the morning talk shows when they have them. I heard Amber Riley and Corbin Bleu were both really good and Bill Nye was not so good. Looks like an interesting season!

    How do you possibly teach 3 classes on top of running? Do you actually do the workouts with the class? It seems like you do, so that’s amazing. I think I would pass out and die.

    I’ve got a spin class tonight! Love spin :)

    Oh I like the idea of a turkey an fig burger! I can’t wait to get more kabocha this weekend, I think that’s what I see hiding in your cart :) . I’m sure the boys still liked the pancakes even though they didn’t look perfect. When I make pancakes they always turn out crazy looking.

    I am a hot mess with cooking period – I can’t get pancakes right – shape or cooking! ;)

    OK, does that hair thing work? Try being almost 56 – hair grows everywhere but where it should be! ;) I found a cream that smell like good awful but it OK for sensitive & aging skin like mine…

    I got tired of DWTS a few seasons ago. I only watch if nothing else to watch & glad it is just 1 day this time.. just me.. :)

    I watched DWTS! My early favorites are Val/Elizabeth and Derek/Amber. I like that it’s once a week. I can barely make circled pancakes haha. I ran easy 2 miles and took a cardio kickboxing class.

    So, you will have to do a little review on the hair removal thing from Bed Bath & Beyond!!!

    The hair removal tool is a must have in our house. My husband can’t live without it.

    I’m awful at making pancakes look normal. I want to buy one of this pancake shapes for the pan so can make hearts or stars out of my pancakes. I know, I’m just like a kid.

    Funny, I was thinking of making the plantain bread from Purely Twins this weekend for the first time! Did you find it to be sweet?
