Again, my plan was to get my run in before having to teach class, but that didn’t happen. One of these days it will and when it does I’ll throw a party afterwards. Maybe it was because I didn’t have my coach with me today.
By the way, running in spin pants- not the best idea. Keeping an old race tag on as long as possible, well, that is a great idea though.
Preschool day 5 was today. It’s not really getting any easier to drop the boys off. I’m assuming it does though. Yes?
It is, however getting a little easier to wake up early. Here’s what happened this morning all before 6:30 am.
Heck yeah, roasted kabocha boat done and stored in the fridge, lunches packed and drinks for the family.
Strong coffee for mama, mocha for Daddy and hot cocoa for the boys.
I was pretty proud.
But now, well, I’m dragging.
Evening hump day slump big time.
I’ll make it quick.
First off I made another loaf (or two) of my No Grain Seedy STUFT Bread.
Obviously I’ve been eating it the right way.
Here are some things I’ve found out after a few more loaves and experiments:
You can successfully sub in applesauce for the coconut oil, but it’s not as good. It definitely tastes better and is a bit more moist with coconut oil.
It has a much better flavor if you use roasted sunflower seeds (I get mine at Trader Joe’s) rather than raw ones. It’s just not the same with raw.
Next up I’m going to experiment with some banana or pumpkin in there. Can’t wait.

These nutty NuttZo balls.
We’ve just been getting a bit nutty around here lately.
Over the weekend I asked the men what kind of nut butter they wanted in their balls. No one could give me a straight answer. Go figure.
So, I chose for them.
I know there are a lot of ball recipes on this blog. A lot of them are probably lost somewhere on here since I’m awful about updating my recipes. Maybe I should work on that this weekend. Oh man they’re a mess.
Anyhoo….. you can never have too many balls, right?
I wanted a simple snack I could pack in the boys’ lunches and just have on hand in the fridge.
The last toddler balls I made were the Better STUFT Nut Butter Balls, which were a darn big hit.
So, I decided to do a NuttZo version with a few little changes.
Oh which reminds me, I totally forgot about the STUFT NuttZo Monkey Balls too. Dang, I need to make those next I guess.
I made these over the weekend and we are down to our last 3 or so, so thought I better share.
They are really easy to make. Just mix everything together. The only hard parts are stirring because it gets a little thick (but an extra little bonus arm workout) and waiting for them to chill in the fridge. Ha.
Here you go.
The new balls in town.
Nutty STUFT NuttZo Energy Balls
3/4 cup pure honey
1/4 cup pure maple syrup
1 cup NuttZo
1 cup oats
3/4 cup cereal (I like to crush it up a bit)
1/4 cup ground flaxseed
1 1/2 cups nonfat dry milk powder
1/2 cup finely shredded coconut
1/2 cup semi sweet chocolate chips (maybe a little more just for fun)
Mix all ingredients together. It should be a bit difficult to mix. Scoop into balls with cookie scoop and refrigerate in air tight container.
These can also be stored in the freezer, although I can’t guarantee that will make them last longer around the house. Ha.
Um yes, you need to make these.
My advice is to do it soon.
It won’t be long until you’re down to your last ball.
I used crushed Puffins in this particular version.
We love Puffins.
And, well, these might taste just a bit better when wearing pajamas and having a semi hairless Kitty bottom really close by.

Totally random, but I guess it’s National Hamburger Day or something. This recipe idea from Runner’s WOrld looks delicious (peanut butter and bacon on a burger). I bet it would be good with Nuttzo. Have you ever done the nut butter on a burger thing? I think I need to try it.
