Bring on October- Sharing is Caring

 

Okay, so my primary goal is to get this post up while it’s still October 1st.

I still don’t have my specific goals written down. I’m working on it. But I do have random things to share and well, how shall I say it, “dump” on you.

Hopefully you will find something that might be useful. Sharing is caring (even if it’s dump style).

 

So I loved getting my workout in first thing this morning. I taught a BOSU class later in the day, but man when 6 pm rolled around I was done. I am done actually so this post is going to need a little help I’m sure. Ha ha.

Let’s do eats first. I know I said I was tired of dinners in my last post. I am. Or maybe I’ve just gotten lazy. Who knows, but I’m taking dinner back this month. I want to try to make at least one new healthy, family friendly meal a week.

I need some easy things though. I don’t want to spend a ton of time in the kitchen, you know? I do enough of that already.

 

The Runner’s World Cookbook was released today and I’m very impressed with how many good looking recipes they have in there. Not sure which one I’m going to try first, but I have quite a few Post-Its marking up some pages.

They even have a Quick Bites show on the website with some nutrition tips and recipes from the book. Pretty cool. I secretly wish it was me in the video, but hey, someday, right? Dang that reminds me, it’s been forever since the boys and I have done a STUFT in the Kitchen video. We really need to get on that, don’t we?

 

While I’ve been bored with dinner, breakfasts are always a huge deal around here. I’ve been doing them up pretty darn well I’d say.

Scrambled egg whites mixed with real eggs in coconut oil with spinach and Trader Joe’s turkey bacon. Delicata and roasted kabocha squash on the side. Lately I’ve just been roasting squash with pink sea salt and sometimes cinnamon. It goes a bit better with not so sweet breakfasts.

I’ve been liking delicata squash lately too. They have it a Trader Joe’s priced per squash (so find the biggest ones) and you can roast it up just like kabocha and eat the skin and all. It’s even a little easier to cut.

 

Lunches are pretty great too (when I have room to breath and eat). Today it was a late snack/lunch (since I had two breakfasts). He he.

Canned tuna with spicy Mrs. Dash seasoning and some California Chili sauce with homemade guacamole and carrots and jicama sprinkled with Slap Ya Mama.

 

Did you know you can freeze avocados?

I have a bunch of sliced avocados in the freezer for smoothies (like the chocolate salad milkshake), but I decided to defrost a few in the microwave today. It worked marvelously.

50% power for 1 minute and they were good to go.

Who knew?

 

Okay, enough food chat. I promise I won’t talk food again until I give you the new plantain muffin (or cake, whatever) recipe. Oh man is it good.

 

I’ve got a lot I want to work on this month. No surprise there. Trying to focus on just a few though.

I want to start he mornings a little calmer and really be ready for the day both mentally and physically. That means going to bed a little earlier, waking up a little earlier and taking time to focus on things that really matter first thing.

No rolling over in bed and checking my phone. No worrying about what’s happening for the day or all the things I “have” to do.

Just some quiet time with this book (and coffee).

And no worrying for the next day. I’m going to focus on living each day abundantly. I’m going to enjoy the journey each new day brings.

Time to leave future concerns and stress up to Someone else. Sounds so easy, but yet, it’s just not sometimes, is it?

 

October is also going to be the month of friends and family. It’s going to be a crazy month with traveling and races starting in a couple weeks when Mizuno Marathon Mezamashii Week starts, so when I am home and do have time I’m going to focus on being WITH family and friends in the moment as much as I can.

Again, easier said than done, but I’m working on it.

 

Oh and, I’ve been doing some “pinning” lately on Pinterest.  I found my “Fall” board from last year that has one pin. One. Nice. I’ve got to add to that a bit with all the “Fall” fun activities. Yes?

I want to make a “Fall” bucket list.

 

Last two things before I go to bed. (Yep, going to bed at 10 pm tonight. Making some changes friends.)

    No Kidding, I just bought a Trader Joe’s Delicata squash yesterday, roasted it up last night and it was Delish!!! Love the Fall goals especially the one about living in the moment!!! I pledge to REALLY try hard on that one. Have a fabulous fall day!

    On my bucket list: run three races in one weekend (17 days away….wow!!). It was too warm today for October. Fall weather is the best….80 degree weather, please go away!!! But other than that, I can’t complain about October. It’s going to be an awesome month :-)

    I am right now reading through the Practical Paleo book. I am not paleo but I am loving the recipes and really looking forward to trying some of them out!

    I think some of those breakfasts look good for dinner!!! AND I love Mrs. Dash!!! I by the cheaper Costco no salt seasoning but love the Mrs. Dash flavors – found them years ago when they only had a couple flavors! :)

    I agree – the slow down & the focus on being in the moment & leaving all else behind is harder than it sounds! I am toying with taking time off as we get closer to year end.. we shall see! :)

    I honestly use Pinterest for my recipes lately and that is rarely. Like you most of my meals are throw it all together and top with nut butter or hot spices or both, it just depends on how I am feeling. I want to work more on disconnecting and enjoying what is around me, especially now that the temperatures are cooling down…sort of. Also toying with running the Houston 1/2 marathon at the end of the month. XOXO
