Like that? I’ve said it to myself about 10 time already this morning.
Stopping by just really quick before jumping on the treadmill. This morning is my only chance to fit in my run, so I better make it happen.
I was supposed to fit one in yesterday first thing in the morning, but was fortunate to spend my time cleaning cat barf and wet toddler bed sheets. I’m so lucky sometimes. Ha ha.
Waited until late last night to try to get a short run in. It happened, but it was just a reminder of why doing it first thing in the morning is way better. Ha.
Dinner looked a little like this.
I made a huge taco salad out of one of those grass fed Costco burger patties.
Complete with hot sauce and salsa and even some home grown ghost chilis.
Cassava “fries” and some pretty cool looking baby carrots on the side.
Speaking of weird looking produce, check out this cool purple sweet potato.
Yesterday I took my little purple sweet potato, cleaned it, poked some holes in it and roasted it at 425 for about 30 minutes or so.
The outside got all crispy. It was fabulous. Then I topped that sucker with peanut free NuttZo, Penzeys cinnamon and coconut oil.
It was so good.
Some people on instagram were asking about the taste. Purple sweet potatoes are definitely more sweet than regular ones. Better, in my opinion. Not as easy to find, but if you find them make sure to get your hands on some. Delicious.
Mari even said she eats it like an apple sometimes. I have to try that next. Ha.

Pretty great, right? We’ve got some amazing things planned out for us that might just be right around the corner. Have faith.
Okay, my new unsweetened mocha is done, and the treadmill awaits.
Eeek. I’m supposed to do 7 miles with 4 of them at tempo with my training plan. I’m not really feeling it. Shoot. Man, let’s do this.
Side note- I slept in my sports bra as a little extra motivation to get on the treadmill first thing. Sometimes that little plans works, sometimes it doesn’t. Ha.
