I Will Not Procrastinate This Morning and Purple is the Way to Go


Like that? I’ve said it to myself about 10 time already this morning.

Stopping by just really quick before jumping on the treadmill. This morning is my only chance to fit in my run, so I better make it happen.

I was supposed to fit one in yesterday first thing in the morning, but was fortunate to spend my time cleaning cat barf and wet toddler bed sheets. I’m so lucky sometimes. Ha ha.

Waited until late last night to try to get a short run in. It happened, but it was just a reminder of why doing it first thing in the morning is way better. Ha.

Dinner looked a little like this.


I made a huge taco salad out of one of those grass fed Costco burger patties.


Complete with hot sauce and salsa and even some home grown ghost chilis.


Cassava “fries” and some pretty cool looking baby carrots on the side.

Speaking of weird looking produce, check out this cool purple sweet potato.


Mari (who taught be about the importance of kabocha rings and how to choose the right one), introduced me to them. They are fabulous roasted with cinnamon and I’ve made “ice cream” with them too.

Purple Sweet Potato Ice Cream

Yesterday I took my little purple sweet potato, cleaned it, poked some holes in it and roasted it at 425 for about 30 minutes or so.

The outside got all crispy. It was fabulous. Then I topped that sucker with peanut free NuttZo, Penzeys cinnamon and coconut oil.


It was so good.

Some people on instagram were asking about the taste. Purple sweet potatoes are definitely more sweet than regular ones. Better, in my opinion. Not as easy to find, but if you find them make sure to get your hands on some. Delicious.

Mari even said she eats it like an apple sometimes. I have to try that next. Ha.

Okay, my new unsweetened mocha is done, and the treadmill awaits.

Eeek. I’m supposed to do 7 miles with 4 of them at tempo with my training plan. I’m not really feeling it. Shoot. Man, let’s do this.

Side note- I slept in my sports bra as a little extra motivation to get on the treadmill first thing. Sometimes that little plans works, sometimes it doesn’t. Ha.

    I have been wanting to try purple sweet potatoes for awhile, but haven’t been able to find them near me. At least I have my one store, although an hour away, where I can stick up on my kabocha!

    Purple is my favorite color, so I think if I can find some I will definitely be trying purple sweet potatoes 🙂 I thought the ice cream looked like a great idea as well!

    Purple sweet potatoes are super popular here so I’ve been buying bags of them at Costco and roasting them up with cinnamon (like you do with kabocha!) and I am so addicted. I try to prep huuuuge batches but I end up eating them all in like 2 days. Haha

    Omigosh, I HAD to tell you. I ran yesterday and wanted to spin this am, somehow the night got away with me , but i managed to pack my food and clothes for the day. But I totally SLEPT in my gym clothes, rolled outta bed and went to class! Made me think of you 🙂 Good thing I went to a different gym, didn’t matter – I changed my sweaty band, so technically its a new outfit, no?

    I cracked up at the pic of that potato!!! I so want to find one though!!! I like sweeter things so… 🙂

    I always do exercise first thing & have since I was able to with 24 hour gyms so.. 🙂

    You are a living example of how you can throw anything on a bed of greens and make a salad! I like it! Nothing is off limits when it comes to a salad. Well, except fruit. I am not big on fruit in my salad. I guess that is a big limitation, hahaha.

    That potato looks amazing and I would totally eat it! I’m all about working out in the morning, because I am way too tired in the evening. I just mentally plant that seed in my brain, have the coffee to ready to ROCK and then sip, dress, and GO. 🙂

    I get up at 5:00 for the sole purpose of working out – I lay out my clothes the night before and within 10 minutes of getting up I’m working out. On the weekends I don’t get up as early and I’m never as motivated to workout!!!

    Purple sweet potato= YAY! Also, I think the Korean ones (with reddish skin and yellow inside) is super duper sweet… it’s my favorite of all the sweet potatoes/yams.
    And the only trick that works for early morning workouts is having a “date” with someone. My running group gets me out in the AM.

    If U microwave em they r drier (thats how I like my sweet potatoes. Bake those purple pearls and prepare to be dazzled:) Glad U found em girl!

    And from yesterday. CANNOT work out or even make it to the bathroom in the AM if I don’t eat! I am a constant eater and need to eat to run fo sho! And I can eat pretty big and run. Sometimes I end up eating it twice tho:)

    A lot of times if I am going to be running first thing in the morning I will pull up my favorite running blogs and see what other people have done! Twitter is also great for this to! That makes me feel more motivated and ready to get going!
