The Ginormous No Grain Plantain Cupcake

 

Before I get to the recipe for this darn cupcake I’ve been promising I need to use up a couple of minutes of your time.

 

First, I did my last set of Yasso 800s yesterday with my training plan on the treadmill. I had to do four of them. Didn’t seem like too many, but it was tough.

And then just like that they were done. I did a total of 5 miles. My Runner’s World Challenge training plan is now just about tapering and resting. It’s kind of a weird feeling. I’m a little sad about it actually. This has been one of the greatest plans I’ve ever followed. Not to mention the online support and coaching that goes on in the forums. I thought I was special at first until I realized that the online coaches and specialists are just that great to everyone. Ha ha.

 

Oh, and thank you to Koyla for emailing me and making me aware that there is a chance the MCM Marathon is cancelled. Isn’t that crazy? They posted on Facebook that they will announce Saturday what will happen for the marathon.

I’m trying to not think about it. It’s not really something I can control or anything. I do feel bad though for all the military and everyone else who puts their heart and soul into this race if it doesn’t happen. Oh man. We shall see.

I had a lot I planned on doing yesterday. A lot of work stuff.

But, these guys came up with a “really great idea” and wanted to go swimming at the gym after I taught my BOSU class.

Whelp, work got pushed to the side and I took my main men swimming.

Best decision I made in a long time.

Time is love.

Hanging out with them and just watching them play in the water is more precious and more valuable than any paycheck. Plus I’m trying to suck up as much time as possible with them before my little Runner’s World trip this weekend.

Eeekkk… Mizuno Marathon Mezamashii Week is pretty much here. Yikes.

This was breakfast yesterday.

Another egg white scramble (but I used our fresh eggs this time with turkey and spinach) and a ginormous plantain cupcake.

I don’t know why I call it a cupcake, but it’s more fun that way.

 

I’ve had these cupcakes quite often lately.

It’s easy. It’s delicious. It’s grain free. It has some good quality carbs (perfect for tapering-ha).

I discovered this after attempting to make the Purely Twins popular plantain bread a few times. They have some great healthy recipes and this plantain bread of theirs is one heck of a popular one.

 

Here you go.

 

Mmmmmm hmmmm…

I found that parchment paper works best as a baking liner.

I sweat it tastes like a cupcake. My favorite toppings are Peanut Free NuttZo and coconut butter.

It pretty much goes well with any breakfast.

It can also be baked in a kabocha squash like the no grain maple cake.

You know, just pour it in a roasted kabocha boat and bake it that way.

And….. it can also be made green by blending up some spinach with it and the toppings can be added before baking if that’s how you like it.

The secret ingredients:

Penzeys Spices cake spice and butterscotch extract. (I’m sure other combinations of cinnamon/spices and extracts would work, but this combination is my favorite.)

My post on roasted plantains has the link to a great website with additional information on different ways you can use plantains at any stage of ripeness. For this particular cupcake recipe though I like the plantains to be yellow with a few brown spots.

 

Okay, so go find some plantains and make this, okay?

I think I might whip up a few to take with me on my trip.

This season seems like it’s going to be good though.

One complaint. The whole theme is about second chances and they said in the episode that rarely do people get second chances.

I don’t agree with that.

In certain things, sure, but in the big picture of life and having the opportunity to be a better you and make a healthy change, well, I think we get a bazillion chances. I know I’ve gotten just about that many and I’m definitely not done making mistakes.

    Holy mother of yum! I love tat plantain recipe! It’s like grain free pancakes, but in a microwave. How did I not think to do that??? You are brilliant – especially for putting it in a squash. Also, I need cake spice.

    I agree, I think there are many instances where you can get another chance. Although, I guess in the line of the show…this is there shot for money! Holy moly that cupcake loos good!     I have never eaten a plantain but your cupcake looks terrific. May have to try it with a banana today… and yuppers, I just HAPPEN to have a kabocha squash (did you know we tend to call them BUTTERCUP squashes in Canada?)

    I did watch BL and was glad that Jillian saved her white team guy. I hate that they send someone home after the first week because it just isn’t long enough to really learn anything.

    Glad you and the twins had such a fun time at the pool.

    And boo to your gov’t for not getting their act together… SAVE THE MARINE CORPS MARATHON!

    OMG stuffing into a kabocha squash is ABSOLUTELY GENIUS! Only you could come up with something that spectacular. How is yours so fluffy??? I need to pick me up some plantains. I couldn’t find any at the store this weekend. And yes Purely Twins are absolute pros when it comes to plantains.

    I’m wondering if there isn’t some way to make it all look more appealing. There are some valuable nutrients going on here, but I just can’t imagine looking at these things on a plate and wanting to eat them. Call me picky :)

    I’m with the others who had to DVR The Biggest Loser, but I can’t wait! I’m all about second chances, and very grateful for them! I believe you can almost always have a second chance if you work/ ask for it.
